Yummiest dessert ever! And very easy to make. This is my family's favorite. One serving is not enough! Believe me! Don't substitute the mascarpone with double cream. There is no tiramisu without mascarpone. And use the best quality coffee.

- In a medium bowl, beat yolks with sugar and vanilla until smooth and light yellow. Fold mascarpone into yolk mixture. Set aside.
- Dip ladyfingers briefly in coffee and arrange 12 of them in the bottom of an 8x8 inch dish. Spread half the mascarpone mixture over the ladyfingers. Repeat with remaining cookies and mascarpone. Cover and chill 1 hour. Sprinkle with cocoa just before serving.

EASY 10-MINUTE TIRAMISU
My 10-Minute Tiramisu recipe takes all the fuss out of a classic Tiramisu by simplifying the method while delivering you maximum delicious results!

Steps:
- Beat whipping cream, sugar, and vanilla until soft peaks form.
- Add in mascarpone cheese and amaretto (if using) and continue to whip to stiff peaks.
- Dip ladyfingers in coffee (and brandy if using) and place in an 8×8 pan to make the first layer - you can fit about 7-9 cookies in each layer. Don't let them soak as the will fall apart, just a quick dunk in the coffee is enough.
- Spread half of the whipped cream mixture on top of the first layer of ladyfingers. Repeat process with the second layer of ladyfingers and cream mixture.
- Dust the top of dessert with cocoa powder using a sieve. Refrigerate for about 2-4 hours (it gets even better in the fridge and is a perfect make-ahead dessert).
GOLDEN SPICED TIRAMISU
Steps:
- Combine the ginger, turmeric, cardamom, allspice, nutmeg, black pepper and 2 teaspoons cinnamon in a small bowl. Toast 1 1/2 tablespoons of the spice mixture in a medium saucepan over medium heat, stirring, until fragrant, about 1 minute. Pour in about 2 tablespoons of the milk, whisking to combine until smooth. Gradually drizzle in the remaining milk, whisking continuously to avoid any lumps, and bring to a simmer, whisking frequently. Remove from the heat and allow to cool slightly.
- Whisk together the egg yolks, granulated sugar and salt in a large saucepan, then slowly drizzle in 2/3 cup of the milk mixture while whisking continuously. (You don't want to scramble the eggs!) Turn the heat on medium and cook for a few minutes, whisking continuously, until the mixture thickens and coats the back of a spoon. Remove from the heat, then pour the mixture into a large bowl. Cover with plastic wrap, pressing it up against the surface of the custard, and let cool in the fridge for about 1 hour.
- Beat the heavy cream, powdered sugar, remaining 1/2 teaspoon cinnamon and the vanilla to stiff peaks in a stand mixer fitted with a whisk or in a large bowl with an electric mixer, then set aside.
- Fold the mascarpone into the cooled custard.
- Working one at a time, quickly soak the ladyfingers in the remaining golden spiced mixture and use them to line the bottom of an 8-inch square pan, breaking them up if necessary. (Soak them for about 2 seconds; don't soak them too long, otherwise they'll fall apart.) Add half of the custard, spreading it out evenly with an offset spatula, followed by a layer of the whipped cream. Repeat! Using a sifter or a fine-mesh sieve, dust the top with some of the remaining spice mixture and allow to set for at least 4 hours or up to overnight.

- Start syrup: Combine white sugar and boiling water in a medium bowl; stir until sugar dissolves. Set aside.
- Prepare filling: Combine powdered sugar, mascarpone cheese, 1/4 cup tuaca, and vanilla extract in a bowl; whip with the whisk attachment of an electric mixer until smooth. Gradually add whipping cream and whip until soft peaks form.
- Continue syrup: Mix coffee and tuaca into the sugar-water mixture.

MAMA'S TIRAMISU
I went through EVERY tiramisu recipe on the site, and this one is different and is definitely worth trying. I had a Swiss Au Pair when I was a child and she taught me this recipe. I have made it every Christmas since from memory and this is the first time I've written it down, I usually guess quantities. If there was one recipe that I hope my kids will learn and pass on to future generations its this one! I use any spirits that are in my cabinet at the time of making so use whatever alcohol you like or leave it out if you prefer. I use a large trifle bowl.

Steps:
- Beat the egg yolks with half the sugar until light and pale.
- Whip the egg white with the remaining sugar until it reaches the soft peak stage.
- Whip the cream until it reaches soft peak stage.
- Loosen the mascarpone with a beater and combine the egg yolk and cream with the mascarpone.
- Add the lemon zest and juice.

- Heat the oven to 180C/160C fan/gas 4. First, make the sponge. Using a little dairy-free spread, butter and line a 20cm x 30cm tin (or 25cm square).
- Put the dairy-free milk in a jug and stir in the vinegar and extract, and leave for a few minutes to thicken. Beat the dairy-free spread and sugar together until creamy, then beat in the thickened milk mixture, flour, a pinch of salt and the baking powder until you have a smooth batter.
- Scrape the batter into the tin and bake for 20-25 mins until lightly golden and risen, and a skewer comes out clean when inserted into the middle. Leave to cool in the tin for 10 mins, then transfer to a rack to cool completely.
- Whip the plant cream with the icing sugar and vanilla bean paste until softly whipped. Mix the liqueur, coffee and caster sugar in a bowl. Cut the cooled sponge into 16-18 sponge fingers.
- Add half the sponge fingers to a small serving dish (about 15 x 20cm), breaking them up to fill any gaps. Using a pastry brush, brush the sponge with some of the coffee mixture. It won't absorb as much as regular sponge fingers, so add gradually until they are lightly soaked. Spoon over half the cream mixture, then add the remaining sponge fingers. Brush again with the coffee mixture, then add the remaining cream and chill for a few hours or overnight. Sieve over the cocoa powder to serve.

- Make the ladyfingers: In a medium bowl, sift together the flour, cornstarch, baking powder, baking soda, and salt. Set aside.
- In a separate medium bowl, cream together the butter and sugar with an electric hand mixer until fully combined. Add the aquafaba and vanilla and beat for 2-3 minutes, until light and fluffy. The mixture may look broken, but will come together once the dry ingredients are added.
- Add ½ of the flour mixture to the wet ingredients and beat until just combined. Scrape down the sides of the bowl and add the almond milk. Beat until combined. Add the rest of the dry ingredients and beat until smooth.
- Line 2 baking sheets with parchment paper and grease with nonstick spray.
- Transfer the batter to a piping bag fitted with a ½-inch round tip or a zip-top bag with a corner snipped off. Pipe the ladyfingers onto the prepared baking sheets, spacing at least 1½ inches apart. Each cookie should be 2¼ inches long and ¾ inch wide. You should have 50-55 total.
- Chill the piped cookies in the refrigerator for 30 minutes.
- Preheat the oven to 350˚F (180˚C).
- Bake the ladyfingers for 13-15 minutes, until the edges are light brown. Let cool completely.
- Make the vegan mascarpone: Add the cashews to a medium heatproof bowl and pour in enough boiling water to cover by 1 inch (2.5 cm). Let soak until slightly plumped and softened, about 10 minutes. Drain.
- Add the cashews, almond milk, maple syrup, coconut oil, salt, vanilla, and lemon juice to a blender. Blend until smooth. Set aside.
- Scoop the solid layer from the cans of chilled coconut milk into a large bowl. Discard the liquid or save for another use. Add the powdered sugar and beat with an electric hand mixer until light and fluffy, 2-3 minutes.
- Using a rubber spatula, fold the blended cashew mixture into the whipped coconut milk.
- Make the soaking liquid: In a shallow bowl, combine the espresso, water, and rum. Alternatively, replace the espresso and water with 1½ cups (360 ml) of brewed coffee cooled to room temperature.
- Assemble the tiramisu: Spread about a ½ cup (65 grams) of the mascarpone in the bottom of an 8-inch square baking dish. Quickly dip a ladyfinger in the espresso mixture and place on top of the cream. Repeat with more ladyfingers to cover the cream, 16-18 total. Carefully spread about 1 cup (130 grams) of the mascarpone over the ladyfingers, then add another layer of ladyfingers, another layer of cream, and a final layer of the remaining ladyfingers. Spread the remaining mascarpone cream on top.
- Cover the baking dish with plastic wrap and refrigerate for at least 2 hours, or overnight.
- Before serving, uncover the tiramisu and lightly dust the top with cocoa powder.
- Slice into 9 portions and serve.

- In a mixer with the whip attachment, whip yolks and sugar until thick and pale in color (ribbon stage).
- Add mascarpone and whip until well incorporated.
- Pour water into a small bowl then pour powdered gelatin over it. Do not stir.
- Allow gelatin to absorb all of the water (about 15 minutes) then place the bowl on top of a small saucepan containing simmering water (creating a double boiler).
- Immediately turn off the heat and allow the gelatin to dissolve completely.
- In a separate bowl, whip egg whites to a soft peak, gradually add sugar, then slowly pour in dissolved gelatin.
- Whip to a stiff, glossy peak.
- Fold whites into mascarpone and yolk mixture then fold in whipped cream.
- In a separate bowl, combine espresso and kalhua.
- Soak 1 ladyfinger at a time in the espresso mixture.
- In an 8 by 10-inch pan, arrange soaked ladyfingers close together in neat rows until the bottom of the pan is completely covered.
- Pour 1/2 of the mousse over the ladyfingers and smooth with a rubber spatula.
- Sprinkle 1/2 of the chocolate shavings over mousse.
- Create another layer and chill until set. (At least 2 hours.).
