TAGLIOLINI WITH CRAB RAGU



Tagliolini with Crab Ragu image

4 ounces olive oil
2 tablespoons chopped garlic
3 pounds Blue Crabs, cleaned and split
Pinch dried oregano
Red pepper flakes, to taste
Salt and pepper
12 ounces crab stock or fish stock
2 quarts canned plum tomatoes, chopped with juice
4 ounces chopped fresh basil leaves
5 ounces frozen peas
1 pound tagliolini pasta
2 tablespoons butter, optional
6 ounces lump crabmeat

Steps:

  • In a saute pan, add olive oil and garlic and saute for 1 minute, until golden brown. Add crabs, oregano, red pepper, salt, and pepper, and continue to saute for 5 minutes. Add crab stock to mixture and continue to saute for 4 minutes. Crab stock should be prepared ahead of time with mirepoix of vegetables and crab shells. Add tomatoes with juice. Stir and bring to a boil. Lower heat to a simmer. Continue to stir until sauce has been brought to a simmer. Cover and cook for 45 minutes. Add basil and remove from the heat. Add frozen peas and stir.
  • Boil pasta in water for 8 to 10 minutes until al dente, and strain. For a more velvety sauce, add butter to the pasta before adding the sauce. Make sure the butter has been incorporated well into the pasta before adding the sauce. Season, to taste. Before adding finished sauce to pasta, remove crabs from saucepot and keep warm.
  • To serve, add pasta to soup bowl. Top with sauce and lump crabmeat and place 1 or 2 crab bodies on top.

a fabulous fresh pasta sauce. When its to hot for a heavy meal its perfect. You can of course buy fresh pasta rather than make but the directions for making it are included. From Osteria del Circo. Note, if buffalo mozzarella is not available then the bocconcini mozzarella in the tub of water is a great substitute. Just make sure whatever one you use, its fresh wet mozzarella. Time includes making your own pasta, otherwise its all about 5 minutes minus the marinade overnight of the tomatoes

1/2 lb durum flour
2 whole eggs
1 egg yolk
1 tablespoon extra virgin olive oil
1/2 lemon, juice of
10 beefsteak tomatoes, with the insides scooped out skinned and diced
5 garlic cloves, chopped fine
1 bay leaf
salt and pepper
2 tablespoons virgin olive oil
1/2 cup julienned fresh basil leaf
1 cup fresh buffalo mozzarella, cut in one-half inch cubes

Steps:

  • for the pasta:.
  • Knead everything together. Roll the pasta and cut by hand into tagliolini, long, paper-thin ribbon noodles, about 1/8 inch wide or less.
  • For the sauce:.
  • Marinate the diced tomatoes with the garlic, bay leaf, basil, salt and pepper and extra virgin olive oil overnight. Cook the tagliolini al dente in salted, boiling water, drain and plate. Top with the marinated tomato mixture, some freshly julienned basil and the buffalo mozzarella.

1 pound fresh tagliolini pasta
4 tablespoons butter
2 tablespoons freshly grated Parmigiano-Reggiano cheese
Freshly grated truffles and truffle shavings

Steps:

  • In a pot, cook the fresh tagliolini in salted boiling water. Approximately 1 minute before the pasta is 'al dente', remove the pasta from the pot and drain, saving some pasta water.
  • Melt the butter in a saucepan, and add the drained pasta along with a little pasta water. If the pasta appears to be too dry, add more pasta water. Add the Parmigiano cheese, grated truffles and cook everything together for a minute, so that the sauce thickens. Transfer the pasta to a warm plate and add a sprinkle of truffle shavings.

Pinch of salt
1 pound tagliolini, fresh or dried
1 tablespoon sweet butter
1/2 pound San Daniele prosciutto (half in 2 thick slices, minced; half in paper-thin slices)
1/2 cup light cream
1 teaspoon poppy seeds, if desired, plus more for sprinkling
2 teaspoons freshly grated Parmigiano-Reggiano cheese

Steps:

  • Set a large pot (at least 6 quarts) of water to boil. Add salt, and let boil again. Cook tagliolini until slightly firm.
  • While pasta cooks, prepare sauce. Melt butter over medium heat in a saucepan or skillet big enough to hold the pasta. Add the minced prosciutto. Saute just until the ham gives off some fragrance. Add cream and poppy seeds, if you are using them. Stir well, then add cheese and stir well. Remove from heat.
  • When pasta is cooked, drain thoroughly (do not rinse) and then add to saucepan. Return pan to heat, and quickly toss noodles and sauce until well combined.
  • Serve on warm plates. Using tongs or a pasta fork, fill a teacup or bowl (6-ounce size) with pasta and then carefully turn it onto the middle of each plate so that a nest of pasta is formed. Cover each nest with a layer of prosciutto slices and then toss a few poppy seeds around the perimeter.

2 cups unbleached all-purpose flour plus additional for kneading and rolling
3 large eggs
1 tablespoon water
1 tablespoon olive oil

Steps:

  • Make dough:
  • Pulse together all ingredients except additional flour in a food processor until mixture just begins to form a ball. Knead dough on a work surface, incorporating additional flour as necessary, until smooth and elastic, about 8 minutes. Divide dough into 4 pieces and keep each wrapped in plastic wrap until ready to roll out.
  • Roll out dough:
  • Set smooth rollers of a pasta machine at widest setting. Flatten 1 piece of dough into a rectangle and feed through rollers. Fold in half and feed through rollers 8 or 9 more times to continue kneading, folding in half each time and dusting with flour as necessary to prevent sticking.
  • Cut pasta:
  • Turn dial to next narrower setting and feed dough through rollers without folding. Continue to feed dough through, without folding, making space between rollers narrower each time until narrowest setting is reached. Halve sheet crosswise and arrange on a dry kitchen towel, letting pasta hang over edge of work surface. Roll out remaining dough in same manner.
  • Attach ribbon-pasta cutters to pasta machine and attach handle to 1/8-inch-wide cutter. Line a tray with a dry kitchen towel. Feed first rolled-out pasta sheet, which will have dried slightly but should still be flexible, through cutter and toss with some flour. Form pasta loosely into a nest and arrange on kitchen-towel-lined tray. Make more taglierini with remaining dough. Cover taglierini with plastic wrap until ready to use.

Do you have an old pasta machine getting dusty in your pantry? Now is the time to use it! Use this recipe to make homemade tagliatelle, or try thinner, more delicate tagliolini. Cut into thicker strands for pappardelle. All it takes is a fun afternoon in the kitchen!

2 ¼ cups Italian-style tipo 00 flour
3 large eggs
1 pinch salt

Steps:

  • Place flour on a marble or wooden work surface. Make a well in the center and crack in eggs; add salt. Gently beat eggs using a fork, incorporating the surrounding flour, until mixture is runny. Pull remaining flour into the center using a bench scraper, incorporating it until dough forms a ball.
  • Knead dough with your hands by flattening the ball, stretching it, and folding the top towards the center. Turn 45 degrees and repeat until dough is soft and smooth, about 10 minutes.
  • Shape dough into a ball. Place in a bowl and cover with plastic wrap. Refrigerate until firm, 30 minutes to 1 hour.
  • Divide the dough into 3 equal portions. Flatten the first portion and pass through the thickest setting of the pasta machine. Dust with more flour, fold in half like a book and repeat 3 to 4 times, flouring, folding, and passing through the thickest setting,until the dough is smooth in texture, even in size, and no longer sticky.
  • Move the pasta machine to a middle setting and pass each sheet through once. Move to the next-to-last setting and pass through once. Cut in half. Repeat with remaining 2 portions.
  • Add the tagliatelle attachment to the pasta machine and pass each piece through. Roll the machine handle with one hand and collect the pasta with the other.
  • Gently toss pasta with some more flour. Air dry for 30 minutes.
  • Cook tagliatelle in plenty of salted, boiling water until tender yet firm to the bite, 3 to 5 minutes.
