MELLOW MUSHROOM SIGNATURE ESPERANZA DRESSING (COPYCAT)

Steps:

• Put everything into the blender except Olive Oil.
• Blend, while blending drizzle about half of the oil in, stop check consistency. If you like it, you're done -- If you don't like it, blend and add the rest of the oil.
• Enjoy!

MELLOW MUSHROOM ESPERANZA DRESSING

Steps:

• Put all ingredients except oil and parsley in the bowl of a food processor and process until smooth.
• With motor running, drizzle in oil through feed tube.
• Stir in parsley by hand.

ESPERANZA DRESSING

Steps:

• Mix together the olive oil, garlic powder, oregano, basil, pepper, salt, onion powder and mustard.
• Pour in the vinegar, and mix vigorously until well blended.
• Store tightly covered at room temperature (Does not need to be refrigerated).

PORTABELLA MUSHROOM DRESSING

Steps:

• Preheat oven to 350°F.
• In a skillet, cook and stir celery, onion, mushrooms, and garlic for 3 minutes.
• Stir in one can of chicken broth and cook until vegetables are tender.
• Combine mushroom mixture with bread crumb stuffing.
• Pour packet of seasoning over dressing mixture and toss to coat.
• In a 2-quart saucepan, heat remaining chicken broth until hot.
• Pour broth over mixture; stir well.
• Pour stuffing into a 2-quart casserole dish and bake for 30 to 40 minutes.

RANCH DRESSING (COPYCAT)

Steps:

• Thoroughly blend Miracle Whip and buttermilk.
• Add spices, blending well.
• Store covered in refrigerator.
• HINT: Using the low speed of a blender lessens prep time!

MELLOW MUSHROOM "MAGICAL MYSTERY TOUR" PIZZA (COPYCAT)

Steps:

• Prepare the Focaccia recipe as instructed (Recipe #27968).
• Slice the mushrooms.
• Crumble the Feta.
• Shred the Mozzarella Cheese.
• Slice the Jalapeno.
• Have the Spinach ready and cleaned.
• After the dough is prepared, roll it out and place in on a pizza pan.
• Spread the pesto (I use about half a small jar per pizza).
• Top the pizza with mushrooms first then with the Spinach, Mozarelle, Jalapenos and then Feta.
• Place in the oven at about 400'F for about 20-30 Minutes. and Enjoy.
• **(optional--chop 2 cloves of garlic and mix with melted butter then brush on the crust of the pizza when it comes out of the oven and then sprinkle the crust with parmasan cheese).
