Steps:
- Prepare the sparkling water by fizzing 1.0 liter of sparkling water in your SodaStream.
- Slice melon into desired shape and size. (Consider using a vegetable cutter to achieve unique and attractive shapes.)
- Combine sparkling water, lemon juice, simple syrup, and melon (as well as vodka if desired).
- Add mint leaves and springs. Stir thoroughly.
- Serve over ice and enjoy.

Steps:
- Put the cucumber and half the mint in a large bowl or jug, and pour over the vodka. Cover and leave to steep for at least 24 hrs or for up to 1 week in the fridge, stirring every few days. Strain through a fine sieve.
- Pour the vodka, lime juice and sugar into a larger jug. Stir well.
- Using a melon baller, scoop out as many melon balls as you can. Add them to the jug and leave to steep for 30 mins-1 hr in the fridge. Top up with sparkling water and add the remaining mint leaves just before serving with extra lime wedges.

- Add the cantaloupe and water in a high speed blender and blend together until smooth. Avoid filling your blender more than two-thirds of the way full. Work in batches if needed.

- Begin by making the simple syrup. Combine the sugar and water in a saucepan over medium heat. Bring to a low simmer and stir, making sure that all sugar is dissolved. It should only take a couple of minutes of simmering. The liquid will thicken slightly and should remain clear. Remove from heat and let cool. (Remember: You are only using a portion of this syrup. Refrigerate the remainder for a few days if you’d like, for use in another recipe. It’s great for sweetening tea or water.)
- Next, using a melon baller, scoop about 3 1/2 cups of watermelon and 3 1/2 cups cantaloupe into a large mixing bowl and set aside. If you don’t have a melon baller you can always cut up the melon into about 1-1 1/2? squares.
- Once the simple syrup has cooled, blend 1/4 cup of the simple syrup, mint, lemon juice and amaretto in a blender until mint is finely chopped.
