Melt in your Mouth Sugar cookies are perfect for any time of year, but these melt in your mouth cookies are perfect for Christmas.

1 cup granulated sugar
1 cup powdered sugar
1 cup butter
2 eggs
1 cup vegetable oil
1 teaspoon cream of tartar
4 cups all purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla

Steps:

  • In a large mixing bowl, combine both sugars, butter, and oil. mix until nice and fluffy.
  • Then add the eggs, cream of tartar, flour, salt, baking soda, and the vanilla. Mix everything together well.
  • Chill for about 3 hours. (Can make and chill overnight).
  • Roll the dough into 1-2" balls, roll the dough balls in sugar and place a couple of inches apart onto a baking sheet.
  • Bake at 375 degrees for 10-12 minutes.

These keto frosted sugar cookies are melt in your mouth soft with a cream cheese frosting that doesn't taste overly sweet. The vanilla really shines in these little treats.

2 ounces cream cheese
1/2 cup unsalted butter
3/4 cup powdered erythritol
1 large egg
2 tsp vanilla extract
1 1/3 cup almond flour
1/3 cup coconut flour
2 Tbsp protein powder
1 tsp baking powder
1/4 tsp salt
1/2 cup whipping cream
1/3 cup powdered erythritol
1 cup (8 ounces) full-fat cream cheese
1 tsp vanilla
2 drops pink food coloring

Steps:

  • Cream butter and cream cheese in a large bowl until the mixture is soft and spreadable.
  • Add sweetener, vanilla, and egg to the butter and cream cheese mixture and mix on high until well blended.
  • Add remaining dry ingredients to the wet ingredients and blend on low until ingredients are well incorporated.
  • Wrap cookie dough in plastic wrap and place in the fridge for 30 minutes to cool.
  • Preheat oven to 325F and line a heavy-duty cookie sheet with parchment. * See notes below about baking sheet.
  • Once the cookie dough is cooled, drop 1/4 cup round balls of dough onto your prepared cookie sheet. Press each dough ball flat with your fingers. The dough does not spread a lot, so the shape you create is the shape you will end up with, so try to flatten the dough evenly.
  • Bake in a 325F oven for 14-16 minutes until the outside edges of the cookies just start to brown. Do not over bake.
  • Frost with your favorite keto or low carb frosting
  • Cube one cup of cold full-fat cream cheese and mix with a stand mixer or hand mixer for 1 minute, until the cream cheese has no lumps. Scrape down the sides of the bowl if necessary.
  • Add vanilla, food colouring, and powdered erythritol.
  • Add 1/2 cup of full-fat whipping cream to the bowl and mix on low for 30 seconds, until blended with cream cheese. Turn up to medium and then high until the whipped cream and cream cheese fluff up and resemble buttercream frosting.
  • Do not overbeat. Over beating will cause the mixture to liquefy.

1 cup butter, softened
3 ounces cream cheese, softened
1 cup sugar
1 large egg yolk
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
2-1/4 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
Tinted frosting, coarse sugar and/or colored sugar

Steps:

  • In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Beat in egg yolk and extracts. Combine the flour, salt and baking soda; gradually add to creamed mixture and mix well. Cover and refrigerate for 3 hours or until easy to handle., On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with a floured 2-1/2-in. cookie cutter. Place 1 in. apart on ungreased baking sheets. Bake at 375° for 8-10 minutes or until edges begin to brown. Cool for 2 minutes before removing from pans to wire racks. Decorate as desired.

My Grandmas original sugar cookie recipe that we make every year, I've not found another sugar cookie recipe with these exact ingredients in it, so i'm posting this one here to share and keep for myself, since the original is written in fading pink ink on old paper :) I absolutely love these :)

1 cup powdered sugar
1 cup granulated sugar
1 cup butter, softened
1 cup shortening
2 eggs
1 teaspoon baking soda
1 teaspoon cream of tartar
4 cups flour
1 teaspoon vanilla
1 pinch salt

Steps:

  • Cream butter and shortening with the sugars.
  • Beat eggs and add to the butter along with the baking soda and cream of tartar, blend together thoroughly.
  • Gradually add the flour until well blended.
  • Either roll into small balls and flatten slightly with a glass dipped in sugar, or roll out on slightly floured surface (not too thin) and cut out shapes with cookie cutters.
  • Grease cookie sheets, and Bake in 350 degree oven 7-10 minute Be careful not to over bake, they should still be white on the top and a very light brown on the bottom. Cool.
  • If you want to put sugar on them, sprinkle with colored sugar before baking, otherwise frost with frosting once they are cool, either store bought or your own recipe. They turn out best with sugar or frosting as opposed to plain.

1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1/2 cup butter, softened (no substitutions)
1/2 cup confectioners' sugar
1/2 cup granulated sugar, plus
2 tablespoons granulated sugar
1 egg
1/2 cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350.
  • On waxed paper, combine flour, baking soda, cream of tartar and salt.
  • In a large bowl, beat butter, confectioners sugar, and 1/2 cup granulated sugar on medium speed about 2 min or until creamy. Reduce speed to low, beat in egg, then beat in oil and vanilla. Gradually beat in flour mixture just until blended, occasionally scraping bowl.
  • Place remaining 2 tbsp sugar in a small bowl or saucer. Shape dough by rounded tsp into 3/4 inch balls. Place balls 2 inches apart on ungreased cookie sheet. Dip punch cup or glass with raised or cut design on bottom, or coarse side of meat mallet into sugar in bowl, use to flatten each ball into a 1 1/2 inch round.
  • Bake 10-11 min until edges are golden. Transfer to wire rack to cool. Store cookies in tightly covered container at room temp up to 1 week or in freezer up to 3 monthes.
