Caramel Peanut Brittle from Werther's® image

An exciting twist to your grandmother's famous peanut brittle, this recipe is sure to be a hit.

1 (5.5 ounce) package Werther's Original Hard Candies, unwrapped
5 pieces Werther's Original Caramels, unwrapped
1 tablespoon butter
1 tablespoon water
1 cup dry roasted peanuts
½ teaspoon baking soda
½ teaspoon vanilla extract

Steps:

  • Spray cookie sheet with non-stick cooking spray.
  • Melt caramels and hard candies with butter and water in a medium saucepan over low heat until smooth, stirring often. Add the peanuts and cook 2 minutes. Stir in the baking soda and vanilla. Immediately spread out thinly onto a cookie sheet to cool completely. Break into pieces to serve.

2 cups pure maple syrup
½ cup chopped walnuts

Steps:

  • In a large heavy-bottomed saucepan, bring the maple syrup to a boil over medium-high heat stirring occasionally. Boil until syrup reaches 235 degrees F (110 degrees C) on a candy thermometer.
  • Remove from heat and cool to 175 degrees F (80 degrees C) without stirring, about 10 minutes.
  • Stir mixture rapidly with a wooden spoon for about 5 minutes until the color turns lighter and mixture becomes thick and creamy. Stir in chopped nuts, if desired.
  • Pour into molds. Set aside to cool. Once cool, unmold candy. Store in airtight containers up to 1 month.
