True Belgian Waffles image

It was on a visit to my husband's relatives in Europe that I was given this Belgian waffle recipe. These homemade waffles are great with any kind of topping: blueberries, strawberries, raspberries, fried apples, powdered sugar or whipped topping. -Rose Delemeester, St. Charles, Michigan

Number Of Ingredients 8

2 cups all-purpose flour
3/4 cup sugar
3-1/2 teaspoons baking powder
2 large eggs, separated
1-1/2 cups whole milk
1 cup butter, melted
1 teaspoon vanilla extract
Sliced fresh strawberries or syrup

Steps:

  • In a bowl, combine flour, sugar and baking powder. In another bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined. Beat egg whites until stiff peaks form; fold into batter. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with strawberries or syrup.

2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
4 large eggs, separated
2 tablespoons sugar
1/2 teaspoon vanilla extract
4 tablespoons unsalted butter, melted
2 cups milk
non-stick cooking spray

Steps:

  • Preheat the waffle iron according to the manufacturer's instructions. In 1 medium bowl sift together flour, baking powder, and salt. Set aside. In a second bowl use the wooden spoon to beat together the egg yolks and sugar until sugar is completely dissolved and eggs have turned a pale yellow. Add the vanilla extract, melted butter, and milk to the eggs and whisk to combine. Combine the egg-milk mixture with the flour mixture and whisk just until blended. Do not over mix. In third bowl, beat the egg whites with an electric mixer until soft peaks form, about 1 minute. Using the rubber spatula, gently fold the egg whites into the waffle batter. Do not overmix! Coat the waffle iron with non-stick cooking spray and pour enough batter in iron to just cover waffle grid. Close and cook as per manufacturer's instructions until golden brown, about 2 to 3 minutes. Serve immediately.

These are really pretty simple to make and very good! My husband is always grateful when I make them. You can use reduced-fat sour cream successfully (if you wish). I have made a batch ahead of time and used them throughout the week as well.

1 egg yolk
1 cup sour cream
1/2 cup milk
3 tablespoons butter, melted
1 cup flour
2 teaspoons sugar
1 teaspoon baking powder

1 egg white, stiffly beaten

Steps:

  • Preheat your waffle maker.
  • Place everything but the egg white in a large mixing bowl and beat on low until moistened.
  • Increase speed to medium, mixing until smooth.
  • By hand, gently fold in beaten egg white.
  • Pour a rounded 1/2 cup of batter over grids.
  • Close your waffle maker and bake until steam no longer escapes (about 3-5 minutes).
  • Remove waffle with a fork and garnish as desired.
  • Yum!

Steps:

  • Preheat waffle iron according to manufacture's directions. In a large bowl stir together all dry ingredients. The, add the buttermilk, milk, eggs, and melted butter. Mix together the wet and the dry. REMEMBER THE BATTER WILL LOOK LUMPY! Spray the waffle iron with the nonstick vegetable spray. Pour about a 1/2 cup of the batter onto the waffle iron. 2 1/2 teaspoons yeast
2 cups lukewarm milk
4 eggs, separated
1 teaspoon vanilla
2 1/2 cups flour
1/2 teaspoon salt
1 tablespoon sugar
1/4 cup melted butter
2 cups fresh strawberries, hulled and sliced
1/2 cup powdered sugar

Steps:

  • Sprinkle the yeast over warm milk; stir to dissolve.
  • Beat the egg yolks and add to yeast mixture along with vanilla.
  • Blend together the flour, salt and sugar; add to liquid ingredients.
  • Stir in the melted butter and combine well.
  • Beat the egg whites until stiff but not dry.
  • Carefully fold beaten egg whites into batter and let the mixture stand in a warm place about 45 minutes or until it doubles in bulk.
  • Using approximately 1/2 cup mix per waffle, pour into preheated waffle baker and bake according to manufacturers recommendations.
