BRIE AND BUTTER BAGUETTE SANDWICH
Steps:
- Cut the baguette in half lengthwise and spread the inside of each half with butter. Place the cheese on the bottom half and then place top of baguette on. Cut in half to eat it, if desired.
ARUGULA SALAD WITH QUICK-PICKLED GRAPES, FENNEL, PEAR AND BRIE

Steps:
- To assemble the salad: add the arugula to a large serving bowl. Top with the brie, fennel, pear and grapes. Top with the dressing and toss to combine.
- Add the vinegar and 1 cup of water to a small saucepan and heat over medium-high heat. Bring the mixture to a simmer, then turn off the heat and add the grapes. Let the grapes sit in the warm liquid for 20 minutes and then drain. Refrigerate in an airtight container for up to 3 days.
- Add the vinegar, olive oil, mustard and a pinch each of salt and pepper to a jar, secure the lid and shake vigorously to emulsify. Set aside until ready to dress the salad.

The arugula I planted took over my garden, but I didn't like it's peppery taste. Thanks, Michele, for suggesting this refreshing summer salad. It's my new favorite salad and everyone at work begs for it too! Michele said you can improvise by substituting beets with strawberries and watermelon.

- Gently toss arugula, beets, avocado, and olives together in a large bowl.
- Warm goat cheese in the microwave slightly, about 30 seconds; add to arugula mixture.
- Whisk olive oil, balsamic vinegar, and mustard together vigorously in a small bowl until smooth; drizzle over the salad and toss to coat ingredients in dressing.

- Place baguette slices on a baking sheet and lightly toast under the broiler.
- Place brie on top of baguette slices. Drizzle with olive oil, sprinkle with a little pepper. Broil until cheese is slightly melted.
- Arugula salad: In a bowl, combine arugula, oil, vinegar, salt and pepper to taste. Sprinkle with chives.
- Serve baguettes while warm, accompanied with a small portion of arugula salad.

- Slice baguette diagonally to cut 6 slices each ¼" thick. Brush each slice with olive oil on one side only.
- Heat a small pan or skillet on medium-high heat. Place each baguette slice, oiled-side facing down, and toast 1-2 minutes until fragrant and slightly golden brown at the bottom. Transfer bread to baking sheet, toasted side facing up.
