Number Of Ingredients 3

1/2 baguette
2 to 3 tablespoons butter
4 to 6 thick slices of Brie or Camembert

Steps:

  • Cut the baguette in half lengthwise and spread the inside of each half with butter. Place the cheese on the bottom half and then place top of baguette on. Cut in half to eat it, if desired.

Arugula Salad with Quick-Pickled Grapes, Fennel, Pear and Brie image

5 ounces arugula
4 ounces brie, cut into bite-size pieces
1 bulb fennel, trimmed and sliced
1 green pear, cored and sliced
Quick-Pickled Grapes, chilled (see recipe below)
Dressing (see recipe below)
1 cup apple cider vinegar
1 1/2 cups green seedless grapes, cut in half
1/3 cup apple cider vinegar
1/4 cup extra-virgin olive oil
1 teaspoon whole grain mustard
Kosher salt and freshly ground black pepper

Steps:

  • To assemble the salad: add the arugula to a large serving bowl. Top with the brie, fennel, pear and grapes. Top with the dressing and toss to combine.
  • Add the vinegar and 1 cup of water to a small saucepan and heat over medium-high heat. Bring the mixture to a simmer, then turn off the heat and add the grapes. Let the grapes sit in the warm liquid for 20 minutes and then drain. Refrigerate in an airtight container for up to 3 days.
  • Add the vinegar, olive oil, mustard and a pinch each of salt and pepper to a jar, secure the lid and shake vigorously to emulsify. Set aside until ready to dress the salad.

The arugula I planted took over my garden, but I didn't like it's peppery taste. Thanks, Michele, for suggesting this refreshing summer salad. It's my new favorite salad and everyone at work begs for it too! Michele said you can improvise by substituting beets with strawberries and watermelon.

3 cups arugula
1 (15 ounce) can sliced beets, drained and cut into bite-size pieces
1 avocado, diced
½ cup sliced black olives
½ cup crumbled goat cheese
¼ cup olive oil
¼ cup balsamic vinegar
2 tablespoons spicy mustard

Steps:

  • Gently toss arugula, beets, avocado, and olives together in a large bowl.
  • Warm goat cheese in the microwave slightly, about 30 seconds; add to arugula mixture.
  • Whisk olive oil, balsamic vinegar, and mustard together vigorously in a small bowl until smooth; drizzle over the salad and toss to coat ingredients in dressing.

14 ounces brie cheese, cut in 12 slices
2 tablespoons olive oil
black pepper
3 ounces arugula
1/3 cup olive oil
5 teaspoons balsamic vinegar
salt and pepper
1 teaspoon fresh chives

Steps:

  • Place baguette slices on a baking sheet and lightly toast under the broiler.
  • Place brie on top of baguette slices. Drizzle with olive oil, sprinkle with a little pepper. Broil until cheese is slightly melted.
  • Arugula salad: In a bowl, combine arugula, oil, vinegar, salt and pepper to taste. Sprinkle with chives.
  • Serve baguettes while warm, accompanied with a small portion of arugula salad.
