Prize-Winning Recipe 2010! What's better than a cookie? Two cookies sandwiched around a creamy peanut butter frosting filling.

1 pouch (1 lb 1.5 oz) Betty Crocker™ oatmeal cookie mix
1/4 cup packed brown sugar
1/2 cup butter or margarine, softened
1/2 cup creamy peanut butter
1 tablespoon water
1 egg
1 cup creamy peanut butter
1/2 cup Betty Crocker™ Rich & Creamy vanilla frosting
4 teaspoons milk

Steps:

Heat oven to 375°F. In large bowl, stir cookie mix, brown sugar, butter, peanut butter, water and egg until soft dough forms.
Roll dough into 40 (1 1/4-inch) balls; place 2 inches apart on ungreased cookie sheet. Press each ball with fingers to slightly flatten.
Bake 9 to 10 minutes or until light golden brown. Cool 3 minutes; remove from cookie sheet to wire rack. Cool completely, about 15 minutes.
In small bowl, stir peanut butter, frosting and milk until well blended.
For each sandwich cookie, spread about 1 tablespoon filling on bottom of 1 cookie. Top with another cookie, bottom side down. Press together lightly, twisting slightly. Store tightly covered at room temperature.

1/2 cup butter, softened
1/2 cup creamy peanut butter
1/2 cup sugar
1/2 cup brown sugar, packed
1 teaspoon pure vanilla extract
1 egg
3/4 cup flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1 cup quick oats
3 tablespoons butter, softened
1 cup powdered sugar
1/2 cup creamy peanut butter
2 tablespoons milk

Steps:

Cream the butters and sugars. Add the vanilla and egg. Stir in the flour, baking powder, soda, and salt till well combined; stir in the oatmeal.
Drop by teaspoonfuls onto lightly greased cookie sheets. Press each cookie twice with a wet fork (In a crisscross pattern) to make 1/4 inch thick cookies. I use a small bowl of water to keep the fork wet.
Bake at 350 degrees F for 10 minutes or until light brown. Cool on wire racks.
To make filling: Cream all ingredients until smooth. Spread filling between two cookies to form sandwiches and hide from your husband.

3/4 cup shortening
1 cup sugar
1 cup packed brown sugar
1 large egg
1/4 cup water
1 teaspoon vanilla extract
1-1/2 cups self-rising flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
3 cups quick-cooking oats
3/4 cup raisins
FILLING:
1/2 cup butter, softened
1/2 cup shortening
3-3/4 cups confectioners' sugar
2 tablespoons 2% milk
1 teaspoon vanilla extract
Dash salt

Steps:

In a large bowl, cream shortening and sugars until light and fluffy. Beat in the egg, water and vanilla. Combine the flour, baking soda and cinnamon; gradually add to creamed mixture and mix well. Stir in oats and raisins., Drop by tablespoonfuls 3 in. apart onto ungreased baking sheets. Flatten with a glass. Bake at 325° for 13-14 minutes or until lightly browned. Remove to wire racks to cool., In a large bowl, combine filling ingredients; beat until smooth. Spread on the bottoms of half of the cookies; top with remaining cookies.

- ¾ cup all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ½ teaspoon salt
- ½ cup butter, softened
- ½ cup peanut butter
- ½ cup white sugar
- ½ cup packed light brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup quick cooking oats
- 3 tablespoons butter, softened
- 1 cup confectioners' sugar
- ½ cup smooth peanut butter
- 2½ tablespoons heavy whipping cream

Steps:

In a large bowl, cream together ½ cup butter or margarine, ½ cup peanut butter, white sugar, brown sugar, and vanilla. Add egg and beat well.
In another bowl, combine the flour, baking soda, baking powder, and salt. Add these dry ingredients to the creamed mixture. Stir. Add oatmeal and stir.
Drop by teaspoons onto greased baking sheet, and press each mound down with a fork to form ¼ inch thick cookies. Bake at 350 degrees F (175 degrees C) for 10 minutes, or until cookies are a light brown.
To Make Filling: Cream 3 tablespoons butter or margarine with the confectioners' sugar, ½ cup smooth peanut butter, and the cream. Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.
