IMITATION CRABMEAT SALAD



Imitation Crabmeat Salad image

Great deli-like salad. Our family never seems to get tired of it! You may use low-fat sour cream and mayonnaise if you wish. Serve on lettuce leaves with tomato wedges for a garnish.

½ cup diced red onion
½ cup diced green bell pepper
½ cup diced celery
1 pound imitation crab meat, flaked
¼ cup sour cream
1 ½ cups mayonnaise
⅔ cup Italian-style salad dressing
2 tablespoons lemon juice
½ teaspoon dried oregano
salt and pepper to taste

Steps:

  • In a large bowl, combine onion, green pepper, celery and imitation crab meat.
  • In a separate bowl, mix together sour cream, mayonnaise, salad dressing, lemon juice, oregano, salt and pepper.
  • Pour the dressing mixture into the crab/vegetable mixture and toss lightly to combine. Cover and chill at least 2 hours before serving.

1/2 cup reduced-fat mayonnaise
1/2 cup reduced-fat ranch salad dressing
1 teaspoon dill weed

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Toss with crab and vegetables. Combine remaining ingredients. Pour over pasta mixture; toss to coat. Cover and refrigerate at least 2 hours before serving.

1 (3 ounce) package oriental-flavor instant ramen noodles
1/2 cup chopped celery
1/2 cup grated carrot
1 green onion, chopped
1/2 cup yellow bell peppers or 1/2 cup orange bell pepper
1/2 cup snow peas
1 cup cooked shredded chicken breast
1 seasoning, packet (from ramen noodles)
1 tablespoon fresh squeezed orange juice
2 teaspoons soy sauce
1 teaspoon honey
1 tablespoon mayonnaise

Steps:

  • Cook and drain ramen noodles according to package direction; then cool. Reserve seasoning packet for dressing.
  • For dressing, whisk togethre ramen seasoning, orange juice, soy sauce, and honey in a small bowl. Add mayonnaise and whisk again until creamy and smooth. (May add another tablespoon of mayonnaise for creamier consistency.).
  • In a large bowl, toss togethre vegetables, chicken and dressing.
  • Add noodles and gently mix. Cover and chill at least one hour before serving.
