4 cups day-old, stale cornbread cubes, such as Skillet Cornbread, recipe follows
1/2 loaf day-old, stale ciabatta, cut into 1-inch cubes
2 carrots, peeled and cut into chunks
1 1/2 stalks celery, sliced
1 medium red onion, cut into chunks
1 tablespoon olive oil
6 bone-in, skin-on chicken thighs
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon ground sage
1/2 teaspoon ground thyme
4 tablespoons (1/2 stick) salted butter, cut into small pieces
1 cup yellow cornmeal
1/2 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon kosher salt
1 cup buttermilk
1/2 cup milk
1 large egg
1/2 teaspoon baking soda
1/4 cup plus 2 tablespoons shortening

Steps:

  • Preheat the oven to 425 degrees F.
  • Put the cornbread cubes, ciabatta cubes, carrots, celery and onion on a baking sheet, drizzle on the oil and toss together with your hands. Nestle the chicken thighs skin-side up among the bread and vegetables. Mix together the salt, pepper, sage and thyme in a small bowl and sprinkle it all over the chicken, bread and vegetables. Dot the top with the butter.
  • Roast for 15 minutes, then remove and stir the bread and vegetables with a wooden spoon, coating them in the butter. Do not disturb the chicken. Return the baking sheet to the oven and continue roasting until the chicken is completely cooked and the skin is golden and crisp, 25 to 30 minutes. Stir the bread and veggies once more and serve!
  • Preheat the oven to 450 degrees F.
  • Stir the cornmeal, flour, baking powder and salt in a bowl to combine. Measure the buttermilk and milk in a measuring cup and add the egg. Stir together with a fork. Add the baking soda and stir. Pour the milk mixture into the dry ingredients. Stir with a fork until combined.
  • Melt 1/4 cup of the shortening in a small pan on the stovetop or in the microwave in a small bowl. Slowly add the melted shortening to the batter, stirring until just combined.
  • In a cast-iron skillet, melt the remaining 2 tablespoons shortening over medium heat. Pour the batter into the hot skillet and spread to even out the surface. (The batter should sizzle.) Cook on the stovetop for 1 minute, then bake until the top is golden brown and the edges are crispy, 20 to 25 minutes.

6 cups chicken broth, divided
4 cups crumbled cornbread
5 biscuits, crumbled
½ cup margarine, melted
½ cup chopped celery
1 small onion, finely chopped
3 eggs, beaten
1 teaspoon sage
1 teaspoon black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large saucepan, bring the chicken broth to a boil.
  • In a large bowl combine the crumbled cornbread and biscuits. Pour in 3 cups of boiling broth; cover and let stand.
  • Meanwhile, heat margarine in a medium skillet over medium heat. Saute celery and onions until tender. Stir into cornbread mixture.
  • To the cornbread mixture add the remaining broth, eggs, sage and black pepper. Pour into a large iron skillet or roasting pan.
  • Bake in preheated oven for 1 hour, or until set and well browned.

6 cups coarsely crumbled cornbread
8 slices (1 oz each) firm white bread, torn
3 1/2 cups Progresso™ chicken broth (from 32-oz carton)
2 cans (10 3/4 oz each) condensed cream of chicken soup
1 medium onion, chopped (1/2 cup)
3 stalks celery, chopped
4 eggs, slightly beaten
2 teaspoons ground sage
1/2 teaspoon pepper
1/4 teaspoon salt
1/2 cup butter, cut into small pieces

Steps:

  • Heat oven to 400° F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In large bowl, stir together all ingredients except butter. Spoon mixture into baking dish. Dot evenly with butter.
  • Bake uncovered about 45 minutes or until bubbly and golden brown.

1/4 cup butter, cubed
2 cups chicken broth
1-1/2 teaspoons dried thyme
1 teaspoon poultry seasoning

1/4 teaspoon ground nutmeg
2 large eggs, lightly beaten, or 1/2 cup egg substitute
1 package (12 ounces) unseasoned stuffing cubes
1/4 cup minced fresh parsley
3 cups cubed cooked chicken
1 can (10-3/4 ounces) condensed cream of chicken or mushroom soup, undiluted
1/3 cup water

Steps:

  • In a large saucepan, saute onion and celery in butter until tender; remove from the heat. Stir in the broth, seasonings and eggs. Add bread cubes and parsley; toss to coat. , Transfer to a greased 13-in. x 9-in. baking dish. Top with chicken. Combine soup and water; spoon over chicken. Let stand for 10 minutes. , Cover and bake at 350° for 50 minutes. Uncover; bake 5-10 minutes longer or until a thermometer reads 160°.

3 pounds skinless, boneless chicken breast meat
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of celery soup
1 (10.75 ounce) can milk
1 ½ cups chicken broth
1 (6 ounce) package seasoned cornbread stuffing mix

Steps:

  • Place chicken in a large saucepan full of lightly salted water. Bring to a boil; boil for about 30 minutes, or until chicken is cooked through (juices run clear). Remove chicken from pan, reserving broth. Cut chicken into bite size pieces and place in bottom of a 9x13 inch baking dish.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl mix together cream of chicken soup and cream of celery soup. Fill one empty soup can with milk, and mix milk with soups. Pour mixture over chicken. In a small bowl combine stuffing and broth; mix together and spoon mixture over casserole.
  • Bake in the preheated oven for 45 minutes.

1 cup chopped celery
1/4 cup oil
1 tablespoon salt
1 tablespoon sage
1 teaspoon poultry seasoning
2 cups white bread (day old)
6 cups savory cornbread
2 (10 1/2 ounce) cans cream of chicken soup
2 (10 1/2 ounce) cans chicken broth
3 eggs
1 tablespoon vinegar
3 chicken breasts

Steps:

  • Cook the onion and celery until tender in the oil (6-8 min).
  • Add salt, sage and poultry seasonings.
  • Combine the breads in a large mixing bowl.
  • Stir in the cooked onion, celery, salt, sage and poultry seasonings. Place in crock pot.
  • In a small bowl combine the soup, broth, eggs, and vinegar. Pour over other ingredients in Crock-Pot and cook on high for 30 minutes.
  • Turn heat down to low and cook 3-4 hours.
  • Poach chicken breasts in chicken broth and break into pieces.
  • About 1 hour before it's done, fold in chicken.

1 whole chicken (about 5 pounds) rinsed, innards removed and patted dry
2 medium onions, quartered
4 medium carrots, peeled and chopped
4 stalks celery, chopped
4 cloves garlic
Salt
Freshly ground black pepper
2 bay leaves
3 sprigs fresh thyme
Water, to cover
2 tablespoons butter
2 cups chopped onions
1 cup chopped celery
Salt
Freshly ground black pepper
2 teaspoons chopped garlic
2 cups cornbread cubes
2 cups white bread cubes
2 tablespoons ground sage
1/4 cup finely chopped fresh parsley leaves, plus extra for garnish
1 large egg

Steps:

  • Preheat the oven to 375 degrees F.
  • For the stock: In a large stock pot, combine the chicken, onions, carrots, celery, garlic, salt, pepper, bay leaves, thyme and water. Season heavily with salt. Place the pot over medium heat and bring to a boil. Reduce heat to medium low and simmer for about 2 hours, or until the chicken is tender. Remove the pan from the heat and cool the chicken completely in the cooking liquid. Remove the chicken and strain the liquid, set aside. Remove the skin, fat and bones from the chicken. Medium dice the chicken meat and set aside.
  • For the dressing: In a saute pan, over medium heat, melt the butter. Add the onions and celery. Season with salt and pepper. Saute for 3 to 4 minutes, or until wilted. Add the garlic and continue to saute for 1 minute. Remove from heat and pour into a large mixing bowl. Add the bread cubes, sage, parsley, and egg. Mix well. Season with salt and pepper. Add the diced chicken meat. Stir in enough of the stock, so the mixture is very wet, about 3 to 4 cups. Allow the dressing to sit for 30 minutes. **Add more of the stock if needed. The mixture should still be very wet after it has set. Butter a deep casserole baking dish and pour in the mixture. Bake for about 1 hour, or until bubbly and golden brown. Spoon onto serving plates and garnish with parsley.

2 tablespoons rubbed sage, more for taste
2 eggs (beaten)
3 cups of deboned chicken (torn up small)
1/2 cup butter or 1/2 cup margarine

Steps:

  • Mix everything but butter into a large bowl.
  • (For moister dressing, add 1 can of cream of chicken soup).
  • Melt butter and pour into a 9x13 inch baking dish.
  • Pour dressing mix over butter.
  • Can cover and keep in fridge over night or cook immediately.
  • Bake at 350¹F for 40 to 60 minutes.
  • Great with chicken gravy to top.
