2 bottles red wine of choice
Rind from 2 oranges
1 cup honey
15 cloves
5 cinnamon sticks
1 vanilla bean, split (or 1/2 teaspoon vanilla extract)
1 (2-inch) piece ginger, sliced

Steps:

  • Combine all the ingredients in a large pot or a slow cooker. Warm over medium heat stirring occasionally to dissolve the honey; do not bring to a boil. Cook over low heat to infuse the spices, about 25 to 30 minutes. Strain and ladle into mugs.

7 cups apple cider or juice
1 cup cranberry juice
2 tablespoons brown sugar
1 cinnamon stick (3 inches)
1 fresh rosemary sprig
2/3 cup orange juice

Steps:

  • In a Dutch oven, bring the apple cider, cranberry juice, brown sugar, cinnamon and rosemary to a boil. Reduce heat; cover and simmer for 10-15 minutes or until flavors are blended., Discard cinnamon and rosemary; stir in orange juice. Serve warm.

This is a classic warmer-upper that you can serve on chilly winter days. Pass the brandy separately for those who want it.

3 cinnamon sticks (3 inches)
3 whole cloves
2 whole allspice
1 bay leaf
3 quarts apple cider or apple juice
1/4 cup orange juice
1/4 cup lemon juice
1 tablespoon grated orange zest
2 tablespoons brown sugar
Dash salt
1 to 1-1/2 cups brandy, optional

Steps:

  • Place the cinnamon stick, cloves, allspice and bay leaf on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. , In a large saucepan, combine the apple cider, juices, orange zest, brown sugar, salt and spice bag. Bring to a boil. Reduce heat to medium-low and simmer mixture for 30 minutes to blend flavors. Discard spice bag. Strain cider mixture and stir in brandy if desired. Serve immediately.

20 whole cloves
1/2 cup white sugar
12 cinnamon sticks (4 inch)
14 whole allspice
1/2 teaspoon salt
1 lemon, sliced thin

Steps:

  • Place the cider in a large pot.
  • Place the cloves and allspice in a cheesecloth spice bag.
  • Add the spice bag, sugar and salt to the cider and bring to a boil.
  • Reduce heat and simmer for 15 minutes.
  • Remove spice bag.
  • Pour Mulled Cider into 12 mugs, adding one cinnamon stick and one slice lemon to each.
  • Serve hot.

1 large orange

2 ¾ cups fresh orange juice
8 cups apple juice
¼ cup raisins
1 cinnamon stick

Steps:

  • Peel the skin from the orange leaving the bitter white pith behind. Stick the cloves into the skin. Squeeze the juice from the orange and add to the 2-3/4 cups orange juice. Place all ingredients into a large nonreactive pan and bring to a boil over high heat. Remove from heat, cover and allow to stand at least 30 minutes to allow flavors to blend. Serve warm or cold.
