MARINATED FLANK STEAK
A wonderful flank steak on the grill recipe I invented that friends just love! My girls think this is great, and it doesn't take long to grill. This also works great when sliced and used for fajitas.

Steps:
- In a medium bowl, mix the oil, soy sauce, vinegar, lemon juice, Worcestershire sauce, mustard, garlic, and ground black pepper. Place meat in a shallow glass dish. Pour marinade over the steak, turning meat to coat thoroughly. Cover, and refrigerate for 6 hours.
- Preheat grill for medium-high heat.
- Oil the grill grate. Place steaks on the grill, and discard the marinade. Grill meat for 5 minutes per side, or to desired doneness.

- Mix Marinade Mix, oil and water in small bowl. Place steak in large resealable plastic bag or glass dish. Add marinade; turn to coat well.
- Refrigerate 30 minutes or longer for extra flavor. Remove steak from marinade. Discard any remaining marinade.
- Grill over medium heat 6 to 8 minutes per side or until desired doneness.

SMOKY MESQUITE MARINADE
Mesquite smoke flavors our marinade for meats and poultry. You will be smoking it on your grill with wood to infuse it and use for future dishes.

- Combine the olive oil, rice wine vinegar, red wine, garlic , lemon juice, sugar, salt, and pepper.
- Heat one side of the barbecue grill and place a chunk of soaked mesquite wood directly on hot coals (or lava rocks when using a gas grill). Adjust the heat to keep the wood from flaming. You want to smoke it and not fire.
- Place the marinade in an open pot on the opposite side of the grill and close the lid of the grill. Let it smoke for 20 to 25 minutes. The smoke will flavor the marinade.
- Remove the pot and add additional red wine to replace the liquid lost by evaporation.
- Cool it to room temperature, then refrigerate if not using immediately. Be sure to keep it in a tightly closed container to keep the delicious smoke in the marinade and not flavoring everything else in your refrigerator.

- Score the flank steak by making shallow crisscross cuts on both sides.
- Place the olive oil, light brown sugar, red wine, soy sauce, onion powder, honey, green onions, garlic cloves, garlic vinegar, ground ginger, and garlic powder in a blender. Puree until smooth; pour mixture into a resealable plastic bag. Add the steak, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator overnight.
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Allow the flank steak to rest at room temperature for 20 minutes. Remove the steak from the marinade, and shake off excess. Pour the marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low, and simmer for 10 minutes; set aside.
- Grill the steak on the preheated grill until it starts to firm, and is reddish-pink and juicy in the center, about 7 minutes per side, basting often with the sterilized marinade. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).

MARINATED FLANK STEAK
This is a favorite of mine that I found in the Eating For Life Cookbook. This cookbook is a helpful tool when participating in the Body For Life program. Keep in mind that the Body For Life program equates a protein portion to the size of your palm, so the portion size maybe small for someone not participating in this program. I absolutely love this recipe because it doesn't taste like it would be healthy, but it is.

- Combine first 6 ingredients in a small bowl.
- Pierce both sides of the flank steak with a fork.
- Place steak and mixed ingredients into a large size Ziploc bag.
- Refrigerate 4 hours minimum, but overnight for the best flavor.
- Preheat broiler or grill. (I have never grilled this steak, but I am sure it would be excellent grilled.)
- Place broiler pan in oven for one minute.
- Place the marinaded steak on the heated broiler pan.
- Broil in oven on top rack for about 6 minutes per side for medium-well doneness.
- Let steak cool for a few minutes and then slice across the grain into very thin slices( 1/8" approx.).

- Combine all seasonings and rub into the steaks. Marinate overnight in the refrigerator.

- In a 9-by-13-inch baking dish, whisk together garlic, 1/2 teaspoon each salt and pepper, apple juice, whiskey (if using), mustard, oil, Worcestershire, and hot sauce. Add steaks, and turn to coat; marinate at room temperature, turning occasionally, 1 hour, or cover with plastic wrap and refrigerate up to 1 day.
- Lift steaks from marinade onto a platter; set aside. Make sauce: Place reserved marinade in a large saucepan. Bring to a boil over high heat; cook until thickened and reduced to about 1 cup, 20 to 25 minutes. Season with salt and pepper.
- Meanwhile, heat grill to high; lightly oil grates. Place steaks on grill. Cook, turning once, until well browned and cooked to desired doneness, 6 to 8 minutes per side for medium-rare (130 to 135 degrees on an instant-read thermometer). Transfer steaks to a cutting board, and tent with aluminum foil. Let rest 10 minutes before thinly slicing against the grain. Serve with sauce.
