COPYCAT MEXIMELTS



Copycat Meximelts image

Ditch the drive thru and learn how to make the Meximelt from Taco Bell at home! This easy copycat recipe is ready in about 15 minutes.

6 large flour tortillas
1 pound lean ground beef
2 tablespoons taco seasoning ((1 1-ounce packet))
½ cup water
8 ounces sharp cheddar cheese (freshly grated)
4 medium Roma tomatoes (seeded and diced)
½ cup finely chopped white onion
1 small jalapeno (seeded and membranes removed)
2 tablespoons cilantro leaves chopped
Juice of 1 lime
1/4 teaspoon salt

Steps:

  • In a large skillet over medium-high heat, crumble and brown ground beef until no longer pink. Drain grease.
  • Stir in water and taco seasoning, continuing to crumble ground beef with a potato mashed until it's finely crumbled. Bring to a gentle boil and simmer for about 10 minutes. Once the mixture has thickened and is saucy, remove from heat.
  • Wrap the tortillas in a clean kitchen towel or paper towels and heat in the microwave for 20 seconds to warm and soften.
  • Mix the pico de gallo ingredients together in a medium bowl.
  • Lay a tortilla on a flat surface and scoop the meat mixture, pico and cheese down the center. Tuck in the sides and roll up like a burrito.
  • Wrap each Meximelt in a paper towel and microwave for 15-20 seconds to melt the cheese.
  • Serve immediately.

18 uncooked jumbo pasta shells
3/4 lb lean (at least 80%) ground beef
1 small onion, chopped (1/4 cup)
1 tablespoon chopped fresh cilantro
1 teaspoon ground cumin
1 can (4.5 oz) Old El Paso™ chopped green chiles, drained
1 can (15 oz) chili beans in sauce, undrained
2 jars (16 oz each) Old El Paso™ Thick 'n Chunky salsa
1 cup shredded Monterey Jack cheese (4 oz)

Steps:

  • Heat oven to 350°F. Cook and drain pasta shells as directed on package.
  • Meanwhile, in 2-quart saucepan, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in cilantro, cumin, chiles and beans.
  • In ungreased 13x9-inch (3-quart) glass baking dish, spread 1 cup of the salsa. Spoon about 1 1/2 tablespoons beef mixture into each shell. Place shells, filled sides up, on salsa in dish. Pour remaining salsa evenly over shells. Sprinkle with cheese.
  • Cover with foil; bake 30 minutes. Uncover; let stand 10 minutes before serving.

2 (4 ounce) packages Spanish rice
2 (14 ounce) cans diced canned tomatoes and green chilies
2 (12 ounce) packages shredded mild cheddar cheese
1 (1 1/4 ounce) package taco seasoning
2 (13 ounce) bags corn chips
3 tablespoons sour cream (optional)
3 tablespoons salsa (optional)
3 tablespoons black olives (optional)
3 tablespoons lettuce (optional)
3 tablespoons tomatoes (optional)
3 tablespoons green onions (optional)

Steps:

  • brown burger in skillet;drain.
  • prepare spanish rice according to pkg;
  • mix cook spanish rice with drained burger, rotell(drained), and taco seasoning.
  • Cook till hot then add shredded cheese cover unil melted mix together.
  • serve on plates add corn chips and/or toppings. Enjoy!
