MEXICAN CASSEROLE
Ultimate Mexican casserole with refried beans, rice, ground beef and veggies, layered and baked to cheesy perfection! A healthy family favorite!

- Be sure to cook your rice if you haven't already (if you are just reading this and just now realized you don't have any cooked rice and don't want to wait, consider switching to quinoa, which cooks much more quickly than brown rice. Instant brown rice also works in a pinch).
- Preheat the oven to 350 degrees F. Coat a large casserole dish (9x13 inch or similar) with nonstick spray and set aside.
- In a Dutch oven or large, deep skillet, heat the olive oil over medium high. Add the onion, green bell pepper, and red bell pepper. Sauté until slightly softened, about 5 minutes.
- Add the beef, chili powder, cumin, salt, black pepper, and cayenne pepper. Continue to sauté until the beef is cooked through and no longer pink, about 4 to 5 minutes. Add the garlic and cook just until fragrant, about 1 additional minute.
- Remove from the heat. Stir in the rice and Greek yogurt until evenly combined. Taste and adjust seasoning as desired.
- Assemble the casserole: Spread the beans into an even layer in the prepared baking dish.
- Sprinkle 1/4 cup cheddar cheese and 1/4 cup mozzarella cheese over the beans.
- Scatter the tomatoes with green chilis over the top.
- Spoon the rice and ground beef mixture on top of the tomatoes, spreading it into an even layer.
- Top with remaining 1/2 cup cheddar and 1/2 cupmozzarella.
- Bake the casserole, uncovered, until the cheese is melted and the casserole is hot, about 15 minutes.
- Turn the oven to broil, then continue cooking until the cheese is lightly browned, about 3 to 4 additional minutes, watching carefully so that the cheese does not burn.
- Let rest 5 minutes, sprinkle with chopped cilantro and green onions, and serve.

VEGETARIAN MEXICAN CASSEROLE WITH BLACK BEANS

- Gather the ingredients.
- Preheat oven to 350 F. Combine onion, pepper, garlic, salsa, cumin, and black beans in large skillet and bring to simmer over medium heat. Cook, frequently stirring, for 3 minutes.
- Arrange 6 tortillas in bottom of 9 x 13-inch baking dish, overlapping them as necessary.
- Spread half of bean mixture over tortillas and sprinkle with half of cheese. Repeat layering process with remaining tortillas, bean mixture, and cheese.
- Cover dish with foil and bake 15 minutes. Carefully remove foil and serve warm. Garnish with tomatoes, sour cream, and olives.

The tortilla chips on the bottom form a crispy crust, I sprinkle grated Parmesan cheese on top of the casserole before topping with the remaining shredded cheese, but that is only optional. Sour cream and chopped tomatoes are a must served with this casserole.

- Set oven to 350 degrees.
- Grease a 13 x 9-inch baking dish.
- Sprinkle the crushed tortilla chips evenly on the bottom of the dish.
- In a large bowl combine the cubed cooked chicken, beans, corn, tomato sauce, salsa, onion, bell pepper, garlic, salt and pepper; mix well to combine.
- Spoon HALF of the mixture over top of the tortilla chips in the baking dish.
- Sprinkle with 2 cups (or more if desired) shredded cheese.
- Cover with remaining half of the chicken/bean mixture, then top with remaining shredded cheese.
- Bake uncovered for 30-35 minutes.
- Let stand for 5-6 minutes before serving.
- Spoon onto plates and top with sour cream and chopped tomatoes.

CHEESY ZUCCHINI TORTILLA CASSEROLE
Cooked in the microwave in just 10 minutes, this easy casserole is layered with two popular Mexican staples - corn tortillas and pinto beans - as well as thinly sliced zucchini. Add shredded cheese in between layers for the perfect melt.

- Sprinkle the zucchini slices all over with 1/2 teaspoon salt. Set aside. Stir together the beans, pico de gallo and oregano in a medium bowl.
- Arrange the following in layers in a 9-inch deep-dish pie pan or 10-inch round microwave-safe dish: 4 of the tortilla halves, one-third of the bean mixture, one-third of the zucchini and 1/4 cup of the cheese. Repeat twice, while packing down the layers. Sprinkle with additional salt and the remaining 1/4 cup cheese.
- Microwave on high until the zucchini is fully cooked, about 10 minutes. Remove from the microwave and loosely cover with foil to finish the cooking process, about 5 minutes. (Alternatively, preheat the oven to 375 degrees F, cover the baking dish with aluminum foil and cook until heated through and the cheese is melted, 15 to 20 minutes.)
- Sprinkle with the cilantro, slice into 4 wedges and serve.

- Heat oven to 350°F.
- Bring onions, peppers, tomatoes, water, garlic and seasoning mix to boil in large saucepan on medium heat, stirring frequently. Simmer on low heat 10 min., stirring occasionally. Add beans; mix well.
- Spread 1/3 of the bean mixture onto bottom of 13x9-inch baking dish; cover with 6 tortillas, overlapping as necessary to make even layer. Top with layers of half each of the cheese and remaining bean mixture; cover with remaining tortillas and bean mixture.
- Bake 30 to 35 min. or until heated through. Sprinkle with remaining cheese. Let stand 10 min.
- Serve topped with remaining ingredients.

- Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Heat a large skillet over medium-high heat. Add ground beef and start to brown, then add onion, garlic, and taco seasoning. Cook until beef is no longer pink, 5 to 7 minutes. - Set oven to 350 degrees.
- In a large skillet or Dutch oven, heat the oil with water over medium heat.
- Add in the sliced mushrooms, green bell peppers, onion and garlic; simmer stirring often until onion is tender (about 10 minutes).
- Add in the tomatoes (with juice, and break up slightly with a fork), beans, rice, chili powder, cumin and cayenne; mix to combine.
