MEXICAN BEEF AND BEAN CASSEROLE

Steps:
- Heat the oven to 375°.
- Cook the beef in the skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.
- Rinse and drain the beans in a strainer. Mix the beef, beans, tomato sauce, salsa and chili powder in the ungreased baking pan.
- Cover with lid or aluminum foil and bake 40 to 45 minutes, stirring once or twice, until hot and bubbly. Carefully remove the lid, and sprinkle cheese over the top. Continue baking uncovered about 5 minutes or until the cheese is melted.

- In a large skillet, cook beef over medium heat for 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in taco seasoning and water. Bring to a boil; cook until liquid is evaporated. Transfer to an 11x7-in. baking dish; layer with salsa, corn and cheese., In a large bowl, mix biscuit mix and milk just until blended; drop by tablespoonfuls over cheese (dish will be full). Sprinkle with pepper., Bake, uncovered, at 350° for 35-45 minutes or until bubbly and topping is golden brown.

- Preheat oven to 400 degrees. In a 10 inch oven proof skillet, cook beef over medium heat for 5 - 7 minutes or until no longer pink, breaking into crumbles; drain. Stir in beans, tomatoes, enchilada sauce, and cumin; bring to a boil. Reduce heat; simmer, uncovered for 20 minutes to allow the flavors to blend, stirring occasionally. Stir in 2 tablespoons cilantro.
- In a bowl, combine the baking mix, 1/2 cup cheese, bacon, and remaining cilantro. Add milk and beaten egg; stir just until a soft dough forms (it may be on the wet side). Spoon over beef mixture.
- Bake, uncovered, for 13 - 15 minutes or until golden brown. Sprinkle remaining cheese; bake 2 - 3 minutes longer or until cheese is melted. Let stand for 10 minutes before serving.
