MEXICAN LAYERED BEEF AND BEAN CASSEROLE
This is delicious creamy ground beef, bean and corn mixture layered between crushed tortilla chips and cheddar cheese then topped off with more cheese, tomatoes and green onions, if you like extreme spice then add in some cayenne pepper and use spicy salsa as well as the jalapeno peppers :)

Steps:
- Grease a 13 x 9-inch baking dish.
- In a skillet over medium heat brown the ground beef with garlic, onion, green bell pepper and jalapenos (if using) drain fat then add in taco seasoning, salt and black pepper to taste; heat stirring for 1-2 minutes; transfer the mixture into a large mixing bowl.
- Add in black beans, corn, sour cream and salsa; mix until well combined.
- Spoon 1/3 of the ground beef mixture or enough to cover the bottom of the dish.
- Arrange HALF (3 cups) of the crushed tortillas on top of the ground beef mixture, then sprinkle about 1 cup shredded cheese.
- Spoon another 1/3 of meat mixture on top of the cheese.
- Cover with remaining half (3 cups) of crushed chips then sprinkle with 1 cup shredded cheese.
- Spread the final layer of meat mixture on top then sprinkle with 1 cup cheese.
- Top the casserole with green onions and then chopped tomatoes.
- Bake at 350 degrees for about 40 minutes.
- Let sit for 15-20 minutes before slicing and serving.
CHEESY LAYERED MEXICAN BAKE

- Heat oven to 350°F. Lightly spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 12-inch nonstick skillet, cook sausage and beef over medium-high heat 5 to 7 minutes, stirring often, until thoroughly cooked; drain. Stir in beans, diced tomatoes, garlic powder, cumin, salt and pepper. Cook 2 minutes or until thoroughly heated.
- In 2-quart saucepan, stir together soups and enchilada sauce. Cook over medium heat 3 minutes, stirring constantly, until thoroughly heated.
- Spoon one-third of the sauce into baking dish; top with 3 of the tortillas. Spoon half of the meat mixture over tortillas; top with another one-third of the sauce and 1 cup of the Cheddar cheese. Top with 3 tortillas. Repeat layers with remaining meat mixture, sauce, Cheddar cheese and tortillas. Sprinkle with 1 cup of the Monterey Jack cheese.
- Cover loosely with foil. Bake 20 minutes. Uncover; sprinkle with remaining 1 cup Monterey Jack cheese. Bake 10 minutes longer. Let stand 10 minutes before serving. Top with tomato, onions, avocado and dollop of sour cream. Garnish with cilantro.

- Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. , Meanwhile, in a microwave-safe bowl, combine beans and salsa. Cover and microwave 1-2 minutes or until spreadable., Place three tortillas in a greased round 2-1/2-qt. baking dish. On a snowy evening, craving an easy dinner, I came up with a simple and delicious Mexican beef casserole. It's made with ground beef, refried beans, onions, sour cream, cheese, and guacamole!

- Chop avocado flesh and mash in a bowl. Add tomatoes, onion, lime juice, garlic, cilantro, and salt. Cover with a lid or plastic wrap and refrigerate guacamole until ready to serve.
- Preheat the oven to 375 degrees F (190 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add water and taco seasoning; stir until combined. Simmer until thickened, 3 to 4 minutes.
- Spread refried beans into the bottom of a 9x13-inch baking pan. Top with black beans. Spread ground beef mixture on top of beans. Drizzle tomato sauce over the whole mixture.

- Brown ground beef and onions; add chili powder, cumin, tomatoes and jalapenos. Heat through.
- Meanwhile line bottom and sides of a 13 x 9" pan with tortillas. Line bottom with refried beans.
