CHICKEN FIESTA CASSEROLE
This is a recipe that my mom made a lot when we had left over tortillas. I loved it when the tortillas were crunchy and smothered in cheese. :D Posted for Zaar World Tour 05

Steps:
- PREHEAT oven to 375°F
- Brown the chicken with the onion and peppers in a large skillet, stirring frequently; drain.
- Stir in salsa, cream of mushroom, tomatoes and corn; bring to boil.
- Place 6 tortillas, overlapping as necessary onto the bottom of a 13x9 baking dish. Spoon the chicken mixture over tortillas; top with 1 cup of the cheese. Top with the remaining 6 tortillas. Cover with foil.
- BAKE 25 to 30 minutes or until heated through.
- Remove from oven; uncover. Sprinkle with the remaining cheese.
- Turn off the oven and replace the dish untils the cheese is melted.
- Serve hot with a salad, chips or cold fruit on the side. Don't forget the sour cream!
- Note: Sometimes Mom would add spices or salsa to the cheese topping. Or Ortega chiles. I loved it when she added some salt & pepper with garlic and the the Ortegas. This is still one of my favorite meals. :D. Especially when we had a fruit salad on the side.

- In a Dutch oven, cook beef over medium heat until it is no longer pink, 5 to 7 minutes; crumbling beef; drain. Add the beans, tomato sauce and chili seasoning; simmer for 30 minutes, stirring occasionally. , On 2 serving platters with sides, layer the corn chips, rice, onions, meat mixture, cheese, lettuce, tomato and olives. Sprinkle with hot sauce if desired.

MEXICAN FIESTA BITES

Steps:
- Heat oven to 350°F.
- Place 1 won ton wrapper in each of 24 mini muffin pan cups sprayed with cooking spray, with edges of wrappers extending over tops of cups. Bake 5 min. Meanwhile, combine sausage and salsa.
- Spoon sausage mixture into won ton cups. Bake 10 min. or until filling is heated through and edges of cups are golden brown. Top with cheese; bake 1 to 2 min. or until melted.
- Top with sour cream and cilantro.

MEXICAN DELIGHT
This is a recipe my mother has made for years that she had gotten from a friend. If I knew where she had gotten it I would certainly give them credit! I wasn't sure about how many servings, but it makes a good amount. As far as the amount of toppings, I just estimated...everyone likes a different amount of lettuce, olives and cheese etc. I look forward to hearing what you think of it or what you did differently!

Steps:
- Combine garlic clove, chopped onion and ground beef. Brown and drain in large skillet.
- Add tomato sauce, paste, water (I just use the empty tomato sauce can to measure the water) chili powder, oregano, seasoning salt, salt, sugar, Tabasco sauce, and pepper. Simmer 30 minutes.
- Add 1 cup cooked white rice, stir.
- Layer Frito's on a plate (a little will go a long way!) and top with meat mixture, then cheese and so forth with additional toppings (lettuce, tomatoes, green onions, avacado, sour cream).
- Enjoy!

This dish can be many things for someone should they make it. It is smothered in cheese, salsa, and so much more just telling you about it is making my mouth water.

Steps:
- Empty one package of taco seasoning into the ground beef stirring till mixed well.
- Cook the ground beef till done drain only slightly leave enough greese in there to help thin out the refried beans.
- (after the beef is done this process goes extremly quickly),.
- Empty both cans of refried beans into the skillet with the beef stirring till it is thin and mixed well with the ground beef.
- Next you will take the salsa pour in about 1 cup or however much you desire, mix well and time it for only 1 minute till it starts to slightly bubble.
- Take the bag of Cheese grabbing about 2 handfulls which would be 2 1/2 cups then place in the beef and bean mixture.
- Stir quickly so that the cheese melts and is distributed evenly.
- Next add half a Tbls of Taco seasoning into the mix again stir quickly.
- Last and final step -- remove skillet from heat then cover it with handfulls of cheese be sure to do this evenly then wait a moment.
- Serve with chips and or tortillas, Sour Cream, salsa, and black olives.
- You can also add a layer of chips before adding the cheese on top whatever you desire take this and make it your own :).

- Choose one or two proteins, then sides of choice. See linked recipes for directions (except tortilla chips and grilled corn, see below).
- Main Taco Filling Selection: The most convenient big batch protein is Pork Carnitas because it freezes great and only requires a quick pan fry to freshen up, and stays good for several hours (tips are in Carnitas recipe notes). The Shredded Chicken and Beef are almost as good (pork is slightly juicier) and stored similarly. The next simplest is Fish Tacos because it's very quick to cook, then just put them in a serving dish and break into chunks with fork. If you want to use one of the chicken recipes to make ahead, use boneless thigh fillets, cook, then keep whole, cover and cool, reserve every drop of leached juice. Before serving, chop/slice, cover and microwave reheat.
- Taco Fixings: I like to have at least one fresh thing to stuff in tacos (pickled cabbage is my choice in this Fiesta), + a sauce (the Restaurant Style Salsa,) + avocado in some form (guac or slices or in Pico de Gallo) + coriander/cilantro. Chopped white onion is very common in Mexico, and Tex Mex fans such as myself will almost always have sour cream and shredded cheese too!
- Other Sides: Tortillas + things to stuff in tortillas usually makes for a satisfying meal in itself, but to round things out I usually provide a salad or vegetables of some form. Plain grilled corn is very on theme!
