HOMEMADE FLOUR TORTILLAS DONE RIGHT

Homemade Flour Tortillas Done Right image

Homemade flour tortillas are healthier and cheaper than storebought tortillas. And they taste better!

Provided by Mexican Please

Number Of Ingredients 4

3 cups unbleached all purpose flour
3 tablespoons lard
1.5 teaspoons salt
1 cup warm water

Steps:

  • Add the salt to the flour and mix well. Use your fingers to crumble the lard into the flour mixture. Add 1 cup warm water and stir as much as you can with a spoon, then dump onto a flat surface and knead into a cohesive ball. Let rest for at least 30 minutes.
  • Tear into golfball sized chunks, rolling between your hands to shape them into smooth balls.
  • Use a rolling pin to roll them out approximately 5-6 inches in diameter.
  • Heat a comal/griddle to medium high temperature and add a tortilla.
  • Cook each side for 45-60 seconds or until light brown spots form.
  • As one tortilla cooks, roll out the next to expedite the process.

AUTHENTIC MEXICAN TORTILLAS

Authentic Mexican Tortillas image

I learned how to make these growing up watching my mother Alma. We have never used an actual recipe, but for your convenience I came up with one.

Provided by Jamie Mikall Martinez

Categories     Bread     Quick Bread Recipes     Tortilla Recipes

Time 55m

Yield 12

Number Of Ingredients 5

3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons salt
¾ cup shortening
¾ cup hot water

Steps:

  • Combine the flour, baking powder, and salt. Either by hand or with a pastry cutter, cut in the shortening till the mixture is crumbly. If the mixture looks more floury than crumbly, be sure to add just one or two more tablespoons of shortening till it is crumbly. Add about 3/4 cup hot water to the mixture, or just enough to make the ingredients look moist.
  • With your hand or a large fork, knead the mixture making sure to rub the dough against the sides of the large mixing bowl to gather any clinging dough. If the dough still sticks to the side of the bowl, add a couple more tablespoons of flour until the dough forms a soft round shape. The dough is ready to roll out now, but it is best to let it rest. Cover it with a dish towel, and let it sit for about an hour or so.
  • Take the dough, and pull it apart into 10 to 12 balls. Lightly flour your rolling area, and roll each ball with a rolling pin to about 1/8 inch thickness.
  • Place each tortilla on a medium hot cast iron skillet. Cook for about 1 to 2 minutes on each side, or until the tortilla does not look doughy.

MEXICAN-STYLE FLOUR TORTILLAS RECIPE

Mexican-Style Flour Tortillas Recipe image

Flour tortillas are central to the cuisine of Northern Mexico. Rich with lard and whole milk, these flour tortillas are airy, tender, and subtly sweet.

Provided by Christian Reynoso

Categories     Bread

Yield 12

Number Of Ingredients 6

11 ounces (315g) all-purpose flour (about 2 1/2 cups), plus more for dusting
2 teaspoons Diamond Crystal kosher salt (8g); for table salt, use about half as much by volume or the same weight
2 teaspoons baking powder
1 teaspoon sugar
1/2 cup lard (115g), melted
3/4 cup plus 3 tablespoons (220ml) whole milk, warmed to 125°F (50°C) on an instant-read thermometer

Steps:

  • In a stand mixer fitted with the whisk attachment, add flour, sea salt, baking powder, and sugar. Turn mixer to low speed and mix until dry ingredients are well combined, about 30 seconds. Turn off mixer, detach whisk, and use it to scrape down bowl to quickly incorporate any unmixed flour.
  • With the mixer still at medium speed, add milk in intervals, pouring it steadily in 3-second additions followed by 3-second pauses to allow the milk to mix in. Repeat until all the milk has been added. Increase mixer speed to high and let run until dough is smooth and elastic, 3 minutes.

MEXICAN WHOLE WHEAT FLOUR TORTILLAS

Mexican Whole Wheat Flour Tortillas image

I learned this recipe from watching my mom in Mexico, however, nobody (not even my mom) knows how much of every ingredient you are supposed to use, so I experimented with different amounts of ingredients and came up with this one, which is pretty good and not so loaded with fat. This is great to do with kids on the weekend, and something you can enjoy anytime!

Categories     Bread     Quick Bread Recipes     Tortilla Recipes

Time 1h36m

Yield 18

Number Of Ingredients 6

1 cup all-purpose flour
4 cups whole wheat bread flour
½ cup shortening
2 teaspoons salt
1 ½ cups boiling water
all-purpose flour for rolling

Steps:

  • In a large bowl, stir together 1 cup all-purpose flour, the whole wheat flour, and salt. Rub in the shortening by hand until the mixture is the texture of oatmeal. Make a well in the center, and pour in the boiling water. Mix with a fork until all of the water is evenly incorporated. Sprinkle with a bit of additional flour, and knead until the dough does not stick to your fingers. The dough should be smooth.
  • Make balls the size of golf balls, about 2 ounces each. Place them on a tray, and cover with a cloth. Let stand for at least 1 hour, or up to 8 hours.
  • Heat a griddle or large frying pan over high heat. On a lightly floured surface, roll out a tortilla to your preferred thinness. Fry one at a time. Place on the griddle for 10 seconds, as soon as you see a bubble on the top, flip the tortilla over. Let it cook for about 30 seconds, then flip and cook the other side for another 30 seconds. Roll out the next tortilla while you wait for that one to cook. Repeat until all of the balls have been cooked. Tortillas can be refrigerated or frozen.
