Mexican Night Salad image

This salad is the perfect compliment to mexican food! It originally came from a Rosarita recipe booklet, but I've tweaked it a bit.

Yield 1 1/2 heads romaine, 3-6 serving(s)

Number Of Ingredients 12

2 tablespoons mayonnaise (Hellmans or Best Foods)
2 tablespoons sour cream
1 tablespoon lime juice
1/2 teaspoon sugar
1/4 teaspoon kosher salt or 1/8 teaspoon table salt
1/8 teaspoon cinnamon
1 dash ground pepper
1/4 cup chopped pecans
1 head romaine lettuce, chopped
1 avocado, chopped
1 orange, sectioned and chopped (optional)
1/4 small red onion, thinly sliced

Steps:

  • I like to make this in my mini food-processor, but I'll give the directions both ways.
  • FOOD PROCESSOR: Combine all ingredients except pecans and blend well. Add pecans and blend so that some of the pecans are ground fairly fine and some are still recognizable.
  • BY HAND: If you have anyway to crush the pecans, crush a tablespoon or so. Combine all ingredients and blend well.
  • TOSS WITH SALAD: Add a little at a time and toss in an oversized bowl. Store leftover dressing in the fridge.
  • NOTE: When we're dieting, I substitute low-fat mayo and sour cream.

In many Mexican restaurants, street corn is one of my favorite dishes. Throw all the ingredients together in a bowl for this delicious salad!

2 Tablespoons olive oil
16 ounces frozen corn (1 bag)
3 Tablespoons mayonnaise ((I used light))
4 ounces Cotija Cheese (crumbled, (could also use feta cheese))
2 Tablespoons lime juice ((fresh is best))
1 Tablespoon jalapeno pepper (finely chopped)
⅓ cup fresh cilantro (finely chopped)
2 Tablespoons red onion (finely chopped)
2 garlic cloves (minced)
½ teaspoon chili powder
salt and pepper, to taste

Steps:

  • Heat oil over medium heat. Add frozen corn and let cook until corn starts to char, stirring occasionally (it took about 7-8 minutes before my corn was lightly charred).
  • While the corn is cooking, mix together mayonnaise, cheese, lime juice, jalapeno, cilantro, red onion, garlic, chili powder, salt, and pepper in a large bowl. When corn is done, gently fold it in with other ingredients.
  • Serve immediately and store any leftovers in the refrigerator.

1 (29 ounce) can canned peaches in syrup, drained and cubed
5 medium red apples, cored and diced
1 (20 ounce) can pineapple chunks, drained
1 (15.25 ounce) can fruit cocktail, drained
1 pint heavy cream
1 (14 ounce) can sweetened condensed milk

Steps:

  • Combine peaches, apples, pineapple, and fruit cocktail in a large salad bowl.
  • Mix cream and condensed milk in a bowl. Pour over fruit and mix to coat.
  • Cover and refrigerate before serving, at least 30 minutes.

  • Preheat oven to 325 degrees F. Spread the pepitas in a single layer on an ungreased baking sheet. Place in the oven and toast until the pepitas turn darker (they'll be a deep goldish brown) and are fragrant, about 8 to 10 minutes. Remove from the oven and carefully transfer the pepitas to a small plate or bow. Set aside. Increase the oven temperature to 450 degrees F.
  • On a rimmed baking sheet (I use the same one I toasted the pepitas on to save a dish; just brush it off first), toss sweet potatoes with the olive oil, chili powder, cumin, smoked paprika, and salt, until evenly coated. Spread into an even layer and roast until browned and tender, 20 to 22 minutes, stirring once halfway though. Let cool slightly.
  • Meanwhile, whisk together the dressing ingredients: Greek yogurt, olive oil, lime zest and juice, garlic, salt, and cumin. Taste and adjust seasoning as desired. The dressing should taste very bright and limey—it's flavor will mellow once it's tossed with the other ingredients.
  • In a large bowl, place the chopped romaine hearts. Drizzle with about ¼ cup of the dressing and toss to moisten. Add the sweet potatoes, beans, jalapeno, radish, and cilantro and drizzle on another ¼ cup dressing. Toss to coat. Sprinkle with tortilla strips. Enjoy, with extra dressing as desired.
