MERINGUE SWIRLS

- Preheat the oven to 250 degrees F. Line 2 baking sheets with parchment paper. Beat the egg whites and salt in a large bowl with a mixer on medium speed until frothy (use the whisk attachment if using a stand mixer). Add the cream of tartar; increase the speed to medium high and add the superfine sugar, 1 tablespoon at a time. Scrape the seeds from the vanilla bean into the meringue (or add the extract) and continue beating until the sugar is dissolved and the meringue is thick, glossy and forms stiff peaks, about 6 minutes.
- Fit a piping bag with a large star tip. Fill the bag with the meringue and pipe spirals on the prepared baking sheets, about 1 inch apart. Sprinkle with the coarse sugar.
- Bake 1 hour, then turn off the oven and let the meringues stand in the oven until dry, about 2 hours. Store in an airtight container up to 1 week.

- In a large mixing bowl, cream butter and cream cheese until smooth. Beat in vanilla. Combine flour and salt; gradually add to creamed mixture. Divide into 3 portions. Wrap each in plastic wrap; refrigerate for 2 hours or until easy to handle.
- On a lightly floured surface, roll each portion into a 16 x 9 inch rectangle. Combine pecans and sugar; sprinkle over to to within 1/2 inch of edges. Roll up each rectangle tightly jelly-roll style, starting with a long side. Wrap in plastic wrap; refrigerate for 2 hours. Unwrap and cut into 3/8 inch slices. Place 2 inches apart on lightly greased baking sheets. Bake at 400 for 12-14 minutes or until lightly browned. Remove to wire racks to cool.

MEXICAN SWIRLS
A yummy hot hors d'oeuvre, especially enjoyed by men. I obtained this recipe from a church potluck dinner. It is a must now at many family get togethers. Can be made a few days ahead and stored in fridge before cooking.

Steps:
- Soften the cream cheese and beat well with electric mixer.
- Add the Jalapeno peppers, Cumin and beat well with electric mixer.
- Add the cheese and chicken and mix well with spoon.
- Spread mixture evenly on tortillas& roll up tightly.
- Trim ends of the roll.
- eat the ends!
- Wrap tightly in plastic wrap and chill.
- Slice roll into ¾-1 inch pieces, and place upright on its side on non stick baking pan.
- Bake in 400 degree oven till hot but not overly melted, 8-10 minutes.
- Serve.
