1-1/2 cups reduced-sodium chicken broth or vegetable broth
1/2 cup white wine or reduced-sodium chicken broth or vegetable broth
1 medium onion, chopped
1/2 cup dried lentils, rinsed
1/2 cup uncooked brown rice
1 garlic clove, minced
1 bay leaf
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1/8 teaspoon pepper
1 cup Italian stewed tomatoes, cut up
1/4 teaspoon salt
1/2 cup reduced-fat shredded Swiss cheese

Steps:

  • In a 1-1/2 qt. baking dish coated with cooking spray, combine the first 10 ingredients. Cover and bake at 350° for 40 minutes. , Stir in the tomatoes and salt. Cover and bake for 20-30 minutes longer or until rice and lentils are tender. Remove and discard bay leaf. Sprinkle with cheese. Bake, uncovered, for 5-8 minutes or until cheese melts.

1 tablespoon olive oil
2 garlic cloves, minced
1-1/2 cups vegetable broth
1/2 cup dried lentils, rinsed
3 teaspoons chili powder
1-1/2 teaspoons ground cumin
1 cup frozen corn
1 cup salsa
1/4 cup tomato paste
1 teaspoon dried oregano
1 teaspoon white vinegar
2 cups hot cooked brown rice
3/4 cup shredded reduced-fat sharp cheddar cheese

Steps:

  • In a large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add the broth, lentils, chili powder and cumin. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until lentils are almost tender., Stir in the corn, salsa, tomato paste, oregano and vinegar. Bring to a boil. Reduce heat; cover and simmer 10 minutes longer or until lentils are tender. Serve with rice; sprinkle with cheese.

1 (15 ounce) can stewed tomatoes, drained and chopped, with liquid set aside
1 (13 ounce) can chicken broth
1 large onion, finely chopped
1 cup dried lentils
1 cup water
1/2 cup brown rice or 1/2 cup basmati rice
1 1/2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1/8 teaspoon cayenne pepper
1/4 cup chopped fresh cilantro (optional)

Steps:

  • Combine all ingredients, including canned tomato liquid, in stockpot.
  • Bring to boil.
  • Redcue heat to medium and cover.
  • Simmer 55 to 60 minutes or until liquid is absorbed and rice is tender, stirring occasionally.
  • Serve with cilantro sprinkled on top.

1/4 teaspoon pequen chili powder or cayenne pepper
1/2 teaspoon kosher salt
1/2 teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees. Line a 9-by-13-inch baking dish with parchment paper, leaving an overhang on two sides. Press the paper into the corners of the pan and lightly grease the paper with butter.
  • Melt the 2 sticks of butter in a nonstick saucepan over medium-low heat; do not boil. Remove from the heat and let cool slightly. Add the sugar, eggs and vanilla to the saucepan and stir with a wooden spoon until combined.
  • Add the cocoa, flour, cinnamon, chili powder, salt and baking powder and mix until smooth. 1 large onion, rough chopped
2 garlic, pegs crushed
500 ml vegetable stock or 500 ml chicken stock
1 -2 slice bacon, stock cubes
1 cup water
400 g brown lentils (OR x2 400ml can brown lentils for the quick version, drained)

Steps:

  • Put lentils in bowl & cover with water.
  • Leave to soak overnight.
  • Rinse & drain lentils.
  • Put all ingredients into a large saucepan.
  • Put on high heat & bring to the boil.
  • Reduce heat to low and simmer until lentils are cooked and pumpkin is soft & broken down.
  • Add water if needed--mixture should not dry out.
  • Serve as a side dish or eat just as they are.

I learned how to make these growing up watching my mother Alma. We have never used an actual recipe, but for your convenience I came up with one.

3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons salt
¾ cup shortening
¾ cup hot water

Steps:

  • Combine the flour, baking powder, and salt. Either by hand or with a pastry cutter, cut in the shortening till the mixture is crumbly. If the mixture looks more floury than crumbly, be sure to add just one or two more tablespoons of shortening till it is crumbly. Add about 3/4 cup hot water to the mixture, or just enough to make the ingredients look moist.
  • With your hand or a large fork, knead the mixture making sure to rub the dough against the sides of the large mixing bowl to gather any clinging dough. If the dough still sticks to the side of the bowl, add a couple more tablespoons of flour until the dough forms a soft round shape. The dough is ready to roll out now, but it is best to let it rest. Cover it with a dish towel, and let it sit for about an hour or so.
  • Take the dough, and pull it apart into 10 to 12 balls. Lightly flour your rolling area, and roll each ball with a rolling pin to about 1/8 inch thickness.
  • Place each tortilla on a medium hot cast iron skillet. Cook for about 1 to 2 minutes on each side, or until the tortilla does not look doughy.

I found this recipe a while ago, but I changed it quite a bit, so here is my version. This type of brownie is not too sweet nor too dense. I would definitely say this is a mature brownie.

1 ½ cups unsalted butter
3 cups white sugar
6 eggs
1 tablespoon vanilla extract
1 ¼ cups unsweetened cocoa powder
1 ½ cups all-purpose flour
1 ¾ teaspoons ground Mexican cinnamon (canela)
½ teaspoon ground pequin chile pepper
¾ teaspoon kosher salt
¾ teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 12x15-inch baking pan with parchment paper, leaving about 3 inches of paper overhanging 2 sides to use as handles.
  • Place the butter in a microwave-safe bowl, and cook on Medium until the butter is about half melted, about 1 minute. Mash the butter with sugar until well combined, and stir in eggs one at a time, incorporating each one before adding the next. Mix in vanilla extract.
  • Sift the cocoa, flour, cinnamon, pequin pepper, salt, and baking powder into a bowl. Sprinkle in any salt caught in the sifter. Mix the flour mixture into the butter mixture, stirring to blend well, and pour the batter into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out with moist crumbs, 20 to 25 minutes. Let cool in the pan, and use parchment paper handles to remove the brownies for slicing.

Steps:

  • Make brownies:
  • Preheat oven to 325°F. Line 8-inch square baking pan with foil, extending foil over sides. Stir unsweetened chocolate and butter in heavy large saucepan over low heat until melted and smooth. Cool 5 minutes. Whisk in sugar, cinnamon, and salt. Whisk in eggs, 1 at a time, then vanilla. Continue to whisk until batter is smooth, about 2 minutes. Add flour and whisk just until blended. Stir in chocolate chips. Pour batter into prepared pan, smoothing surface. Bake until tester inserted into center comes out with a few moist crumbs attached, about 35 minutes. Cool completely in pan on rack.
  • Make topping:
  • Whisk sugar, cream and butter in heavy small saucepan over low heat until mixture is smooth and comes to boil. Remove from heat; mix in vanilla. Cool 10 minutes. Whisk until thick enough to spread. Spread over brownie. Sprinkle with almonds. Let stand until topping sets, about 1 hour. (Can be made 1 day ahead. Cover and keep chilled.)
  • Using foil as aid, life brownie from pan. Cut brownie into 16 squares. Serve cold or at room temperature.
