MEXICAN STUFFED SHELLS
A beloved favorite recipe that's been around awhile. While the crushed tortilla chips are optional, I personally love the crunch.

- After 30 minutes, add shredded cheese and crushed tortilla chips; bake for 10-15 more minutes, with the foil removed. Top with green onions and serve with sour cream and/or more salsa.

EASY MEXICAN CASSEROLE
This is based on a recipe from the Allrecipes website submitted by AndreaLF63, which I made a few minor changes to suit our taste preferences such as adding a can of white corn and using canned diced tomatoes instead of fresh chopped tomatoes. But I look forward to making this again and trying some of the other changes that some of the reviewers suggested, like maybe adding some minced garlic or perhaps a diced jalapeno pepper or chopped bell pepper.

- Easy to Adapt Mexican Casserole. The name says it all! Living with kids can often be a circus of navigating who eats what and doesn’t like certain veggies or textures.
- Mexican Chicken Casserole. Usually, pork is the main meat associated with Mexican cuisine, but chicken is a great healthy alternative as it’s low in saturated fat and high in protein.
- Mexican Beef and Rice Casserole. This recipe is a hearty take on, essentially, taco ingredients! Although this recipe is labeled a casserole and can be made in a casserole dish, it’s also possible to make in a skillet, if that’s your preference.
- Mexican Lasagna Recipe. Some things go together perfectly, even if you don’t expect them to. Mexican cuisine and lasagna – traditionally Italian – are great examples.
- Vegetarian Mexican Casserole. Are you surprised to see a vegetarian option on our list? Don’t be! Mexican food isn’t all about meat and can be enjoyed on veggie-only terms.
- Mexican Brown Rice Bake – Gluten Free. We officially have something for everyone with this gluten-free brown rice bake. Brown rice is surprisingly nutritious, whole grain rice full of protein, fiber, and manganese.
- Dorito Casserole. Alright, this might not be the healthiest recipe on our list, but it’s one of the most delicious. The Dorito casserole dives right in with layers of crushed Dorito chips, salsa, cheese, and ground beef – although the latter is optional if you’re not a fan of red meat.
- Mexican Beef and Rice Casserole. Are you looking for more Mexican ground beef casserole recipes? Look no further. As with other casseroles, this is a one-pan meal that doesn’t involve too much prep.
- Beef Enchilada Casserole. Enchiladas are delicious – mouthwatering, savory ingredients rolled in tortillas and topped with a creamy sauce. Unfortunately, they can also be very time-consuming to make, and there are many ways they can go wrong.
- Taco Stuffed Pepper Casserole. Stuffed peppers are delicious on their own, but they’re rarely enough to make a meal and can often be tough to pair with sides.
