DOUBLE CRUST APPLE PIE

- Melt 3 tablespoons of the butter in a large, heavy-bottomed saute pan over medium heat. Add the apple wedges and saute until slightly softened but holding their shape, 3 to 4 minutes. Add the 1/2 cup of sugar and stir to combine. Add the raisins, cinnamon, and cloves and stir.
- In a bowl, combine the lemon juice and cornstarch. Stir the mixture into the apple mixture and remove the pan from the heat. Let cool completely.
- Preheat the oven to 375 degrees F.
- Fill an unbaked bottom crust with apple filling and dot the top crust with the remaining 3 tablespoons butter. Top with a rolled-out top crust. Cut 1/2-inch vents in a round-the-clock pattern into the top crust to allow steam to escape. Brush the top lightly with egg wash and sprinkle with the remaining 1 tablespoon sugar.
- Put the pie on a cookie sheet or other low-sided baking tray to catch any spillage. Place on the middle rack of the oven and bake for 20 minutes, checking occasionally to ensure that the top is browning evenly. Rotate the pie 180 degrees to move the front edge to the back of the oven, and bake until the top is uniformly golden brown, 15 to 20 minutes more.
- Remove the pie from the oven and let cool for 20 minutes before slicing and serving.
- Put the flour and baking powder in the bowl of a food processor and pulse to combine. Add the cold butter cubes and pulse a few times until the mixture begins to become mealy and the butter forms plainly visible pea-size nuggets.
- Dissolve 1/2 teaspoon salt in the water. With the motor running, pour in the water and let mix, just until the dough pulls together. Do not over-mix the dough. If it appears dry and is not holding together, add a few additional tablespoons of water.
- Form the dough into a ball, flatten, and wrap in plastic wrap, and refrigerate until ready to use.
- Lightly flour a pastry board and a rolling pin and unwrap the dough. Divide the dough into 2 equal pieces and keep the second piece refrigerated. Tamp down the dough with the rolling pin and gently begin to roll it out into a circular pie shape by rolling evenly in one-eighth turns to keep the rolling even. When the dough is rolled out to an even thickness of about 1/8-inch and is about 12 inches in diameter, it is ready to be transferred to a 10-inch pie dish.
- Lightly butter the dish, lift the dough with the rolling pin by partially rolling the dough up on the pin, center the dough in the dish, and unroll. Pierce the dough in several places with the tines of a fork.
- Roll the second half of the dough into a circle slightly larger than the pie dish. Fill the bottom crust with your chosen filling. Cover the filling with the top half of the dough. Using both hands, crimp the edges of the 2 crusts together to seal. With a sharp knife, make several crosshatch slits in the top crust. Brush with the egg wash and bake in a preheated 375 degree Foven for 35 to 40 minutes. Remove from the oven and cool for 20 minutes.

- Method Preheat oven to 350 degrees. Whisk oats, almond meal, brown sugar and salt together in a large bowl. Add butter and mix well until evenly combined. Add water and stir until mixture forms a cohesive dough. Knead once or twice to gather up any extra dry ingredients. Add a few more drops water if needed. Divide in half and form into 2 flattened discs, one slightly larger than the other. Wrap in plastic and refrigerate until firm and ready to use (at least one hour). Toss the apples with the brown sugar, cornstarch and cinnamon. Using rice flour, dust your hands, the work surface, the roller and the dough, then roll the larger pastry disc out into a 12-inch round and fit it into an 8-inch pie plate. You will find the dough easy to work with but also easily torn, so patch as needed. You may find it easy to fold the disc into quarters than pick it up and unfold it over the pie plate. Add the apples. Roll out the other disc into a 12-inch round and place over top of apples. Trim and seal edges of pie and poke 3 or 4 vent holes into the top of the pie so that steam will be released and not blow out the crust. Place onto the bottom rack of the oven and bake for 1 hour or until the crust is golden and juices are bubbling. Serves 6 to 8
EMILY'S FAMOUS APPLE PIE
This is the easiest apple pie in the world to make. I like to use fresh Granny Smith apples. For special occasions I make a lattice top for this all-American treat!

- Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl stir together the sugar, flour, cinnamon and cloves.
- Place one of the pie shells into a 10 inch pie pan. Put 1/2 of the sliced apples into the shell and sprinkle half of the sugar mixture over them. Top with the remaining apples and the remaining sugar mixture.
- Cover apples with the top crust. Press edges with the tines of a fork to seal and poke holes in the top with a knife. Bake in preheated oven for 45 minutes.

I found this one on Food.com, from Chef Michael Smith. Not only does it look really simple for an apple pie, it's whole grain AND adds an interesting flavour twist! - Preheat your oven to 350F (180C).
- Put the dry pastry ingredients in one bowl and the dry crumble ingredients in the other, and whisk each well, evenly distributing the finer powders amongst the coarser ones.
- For the pastry, sprinkle the oil and water together over the dry ingredients. Work with your fingers until it's evenly mixed and moist. Form the dough into a ball. Lightly dust the ball with flour then toss it into a 9-inch (23-cm) pie plate. Press the dough evenly into the plate, taking care to avoid a thickening at the base of the sides, in the corner. Set aside.
- For the crumble, toss the vegetable oil into the remaining dry ingredients and work the mixture with your fingers until it's well distributed. Set aside.
- Mix and toss the apples, rosemary, whole-wheat flour and brown sugar together in a bowl. Transfer this mixture into the bottom crust and evenly top with the crumble mixture.
- Bake until it's golden brown on top and bubbling, about an hour or so. Serve it warm.

- Preheat oven to 425°; line a 9-inch pie plate with 1 rolled-out crust.
- Put the apples in a large bowl, add the lemon juice, and toss to coat.
- Separately, combine the sugar, flour, cinnamon, and nutmeg, mix thoroughly, then add to the apples.
- Gently stir until the apples are thoroughly coated, then spoon the mixture evenly into the crust.
- Dot the top with the butter.
- Brush the rim of the crust with water, cover with the second rolled-out crust, seal and flute or crimp the edges, and cut a few steam vents in the top.
- Make the glaze-mix the warm milk with the sugar.
- Brush the glaze over the top crust.
- Bake for 15 minutes, then lower the oven temperature to 350° and bake another 30-40 minutes, until the crust is golden brown and the fruit is tender.
- Check the pie about halfway through the baking time, and place pie crust shield over pie crust edges (if getting too brown).
- Cool on a wire rack for 1-2 hours before slicing.

- Unroll and stack 2 pie crusts; gently roll or press together.
- Fit pastry into a 9 inch deep-dish pie plate.
- Toss together apples and lemon juice in a large bowl.
- Combine brown sugar, granulated sugar, and next 3 ingredients; sprinkle over apple mixture and toss to coat.
- Spoon into prepared pie crust.
- Unroll and place remaining pie crust over filling.
- Fold edges under, and crimp; cut slits in top for steam to escape. (I also cover the crimped edges of my crust with foil to prevent burning).

PERFECT GRANNY SMITH APPLE PIE
Lately, I've been on an apple pie binge and I've made it so many times that they're all starting to blur together. I started out simple, with just a recipe I found somewhere, but then I started tweaking, and I think that this recipe is almost perfect, well, for me anyway. This recipe can also be made gluten free!! Now I have been trying to make this pie all organic (which makes it taste 10x better!! highly recommend it!) but I've run into a problem with the apples. They're just too juicy to make the filling come out gooey, if you have any suggestions please leave a comment!

- Making the Crust:.
- Combine flour and salt in a large bowl. Cut in cold butter/shortening with flour salt mixture until it starts balling up to the size of a pea or smaller.
- Knead the cold water into the flour mixture by spoonful until the bowl starts to clean itself or the dough start to feel slightly wet (make sure not to over knead!). Pack your dough carefully into a ball and put into a zip-lock bag and refrigerate it for at least 30 minute.
- Making the Filling (Preheat the oven to 450 F).
- Split the dough into halves, flour a flat surface, roll out into circle until 1/4 inch thick, and put into the pie pan. Place the pie pan back into the fridge along with the.
- Combine sugar, cinnamon, nutmeg, and cornstarch in a small bowl. Peel, core, and slice Granny Smith's to desired thickness (prefer 1/4 inch) and place inside large bowl. Add lemon zest and sugar mixture to the apples until evenly distributed.
- Place apples into into pie crust one layer at a time. In between layers add drops of softened butter, about 5 small drops on each layer. Once apples are all in, add the extra juice from the bottom of the bowl.
- Roll out your top crust on a floured surface, Place your top crust on the pie (if not lattice, make sure to cut about 3 finger length slits in the top for the steam to escape).
- Beat 1 egg and brush over the pie crust. Sprinkle cinnamon sugar mixture to the crust until completely covered.
- Bake for 10 minutes at 450 F (put a cookie sheet a rack beneath your pie in case it dribbles over).Turn oven down to 350 F and bake for 50 minutes.
- Take it out and set on cooling rack. Let it cool completely and then enjoy!
