MICROWAVE ASPARAGUS SALAD
Fresh asparagus is cooked in the microwave then tossed with nuts and greens and drizzled with a tangy balsamic vinegar dressing.

Steps:
- Trim, peel and rinse asparagus (do not dry). Place spears flat, two or three deep, in a glass pie plate or similar dish. Cover tightly with microwavable plastic wrap and microwave on high 2 1/2 to 5 minutes, depending on wattage.
- Whisk together dressing ingredients, pour over asparagus and marinate in refrigerator until cool.
- Divide greens onto four salad plates; top each with six asparagus spears.
- Drizzle with equal amounts of dressing, and top with hazelnuts.

MICROWAVE STEAMED ASPARAGUS
Steps:
- Put the asparagus in a microwave-safe dish and sprinkle with the olive oil and 1 tablespoon water, season with salt and pepper and top with the tarragon. Cover the dish with plastic wrap and seal well. Microwave for 2 minutes. Top with freshly shaved Parmesan and serve immediately.
STEAMED ASPARAGUS

- Pour or spritz the water onto 4 paper towels. Spread out the paper towels and lay the asparagus on top of the dampened towels. Sprinkle with the salt. Roll up the asparagus in the dampened towels. Lay the bundle, seam side down, in the microwave. Microwave on high until the asparagus is just crisp tender, about 3 to 4 minutes. Remove from the microwave using tongs and carefully unwrap. Arrange on a serving platter and serve immediately.

- Chop woody ends off asparagus. Microwave for 2 to 3 minutes, or cook in boiling, salted water until barely tender, about 4 to 6 minutes.
- Plunge into ice water to stop cooking. Drain. Add cherry tomatoes.
- Stir together vinegar, orange juice and garlic; season to taste. Spoon dressing over asparagus and tomatoes.
- Sprinkle with Parmesan cheese.

ASPARAGUS QUINOA SALAD
Steps:
- Put the quinoa in a strainer and rinse it for a minute or two under running water. Put the water and a pinch of salt in a medium saucepan over high heat and bring to a boil. Stir in the quinoa, lower the heat to medium-low, cover, and cook over medium-low heat for 20 minutes, or until soft. (When it's done, the quinoa seeds will have little wisps spiraling off of them-this is the germ separating from the seed.) Drain the quinoa in a strainer.
- While the quinoa is cooking, break off and discard the tough ends of the asparagus and cut the asparagus into 1-inch pieces. Place in a saucepan, add about 1/2 inch of water, and bring to a boil. Cover and cook over medium-low heat for 3 to 4 minutes, or until barely tender. (Alternatively, if you have a microwave, place the asparagus in a microwave-safe bowl. Add a few tablespoons of water, cover with plastic wrap or wax paper, and microwave on high heat for 3 to 4 minutes, or until barely tender.) Drain the asparagus and place it under cold running water for 1 minute to cool it down.
- Cut the kalamata olives into thin slices. Cut the tomato in half, scrape the seeds out of the tomato with a small tool or your finger, and chop into 1/2-inch pieces. Finely grate 1 teaspoon of the lemon peel. Be careful to only grate the yellow part; the white pith underneath is bitter. Squeeze 3 tablespoons of juice from the lemon.
- Place the quinoa in a bowl with the asparagus, kalamata olives, tomato, and lemon zest and stir until combined. Whisk together the lemon juice and olive oil and pour over the quinoa mixture. Stir well and season with salt and pepper. Serve topped with the feta cheese.

MICROWAVE STEAMED ASPARAGUS TIPS
What I love about this recipe is the ease of preparation. The asparagus comes out still crisp. To make things easier I use a Tupperware microwave steamer and I have a gadget called "Misto" that you put olive oil in to mist your foods. Cooking time includes standing time.

- Clean fresh Asparagus and snap off wooden ends. Discard wooden ends or use in another recipe.
- Place water in bottom of steamer.
- In steamer basket lay the Asparagus with tips pointing towards the outer edge of basket.
- Mist Asparagus with olive oil or drizzle lightly with olive oil.
- Sprinkle with seasoned salt. I usually eyeball this, but it is around 1/2 teaspoon.
- Place in Microwave. Microwave on high 2 to 3 minutes. Let stand 2 minutes.
- Enjoy.
