BREAD PUDDING IN THE MICROWAVE
I have no idea where I got this recipe, but it is handwritten in a small book where I saved recipes back in the mid-80s. I haven't made this in ages, but I do recall I used to make it a lot. I think I will make it again today! :-) Ordinary sandwich bread works fine, or use a spiffier bread to make a spiffier pudding. Serve with a vanilla custard sauce, whipped cream, or even ice cream.

Steps:
- Spread bread cubes evenly in an 8-inch round glass pan.
- Sprinkle with the sugar, salt, and raisins.
- Place milk in a 4-cup glass measuring cup and add the butter.
- Microwave on High for four minutes, until butter melts and milk is warm.
- Rapidly, stir in eggs with a fork or small whisk and combine well.
- Pour over bread.
- Microwave on Medium-High for 9 to 12 minutes.
- When cooked, centre may still be slightly soft, but does set up as pudding cools.
- Serve warm or chilled; your preference.
MICROWAVE HOT FUDGE PEANUT BUTTER PUDDING
If you love chocolate and peanut butter, this is a fast and easy dessert that will be ready in about 15 minutes. It creates a 'sauce' as it cooks.

- Mix flour, white sugar, milk, peanut butter, 2 tablespoons cocoa powder, vegetable oil, vanilla extract, baking powder, and salt together in a bowl until batter is smooth; spread into an 8x8-inch microwave-safe dish.
- Mix water, brown sugar, and 1/4 cup cocoa powder together in a bowl until dissolved; pour over batter.
- Cook at 50% in microwave for 9 minutes. Rotate dish 1/2 turn and microwave on high until set, about 6 more minutes.

MICROWAVE BREAD AND BUTTER PUDDING
I foudn this recipe yesterday and made it stright away. I am posting it so that I don't lose the recipe as it can be made last minute. I used the end of the challa, instead of brioche. Use whatever you have handy. I think next time I might pop it under te grill for that crispy topping you don't get in the microwave.

Steps:
- Cut the bread into fingers and layer them in the bottom of a small dish. (About 600 ml capacity).
- Add dried fruit.
- Whisk together the egg, milk, cream, vanilla extract and cream.
- Pour over the bread and let it sit for about 1 hour. If you don't have an hour it does not matter too much.
- Micorwave on medium power for 4 - 5 minutes until it begins to set at the edges.
- Let it stand for 5 minutes and then serve with cream or custard and a big grin.

- In a large microwave-safe bowl, combine the cream, chocolate chips, cream cheese, sugar and butter. Cover and microwave on high for 2-3 minutes or until chips are melted; stir until smooth. Add the bread cubes; toss to coat., Place half of the bread mixture in a greased 8-in. square microwave-safe dish. Sprinkle with peanut butter cups; top with the remaining bread mixture. Microwave, uncovered, on high for 1-1/2 minutes or until peanut butter cups are melted. Serve warm.

- In your microwavable mug, mix together the milk, egg, sugar, cinnamon and vanilla until combined
- Add the bread and raisins to the mug and press them down so they are submerged within the liquid. I like to leave it on the counter for 10 minutes for the bread to soak up the custard
- Microwave for roughly 1-1½ minutes. It does take a little longer than my other microwave cakes. I suggest checking it after 1 minute and go from there. The timing is based on my 1200W microwave so yours might vary.
