SO EASY CHEESE SAUCE (MICROWAVE)



So Easy Cheese Sauce (Microwave) image

Warm the milk in the microwave before using for the sauce --- for the ease of this recipe you will be surprised at how good this is! :)

2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
1 cup half-and-half cream or 1 cup milk, warmed
Tabasco sauce (to taste or a pinch of cayenne)
1 1/2 cups shredded cheddar cheese (can use up to 2 cups)
ground black pepper (optional and to taste)

Steps:

  • In a large microwave-safe bowl (I use my 8-cup Pyrex measuring cup) microwave the butter for 30 seconds on HIGH.
  • Add in the warmed cream or milk, Tabasco and flour; whisk vigorously until completely combined.
  • Add in the shredded cheddar cheese.
  • Microwave on HIGH for about 2 minutes removing a few times during cooking to stir.
  • Cook until the cheese has melted and the mixture is thick.
  • If desired season with ground black pepper to taste.

1 cup warm milk

Steps:

  • In a large micro-wave safe glass bowl, heat butter for 50 seconds on high or until the butter is melted.
  • Whisk together the butter, flour and milk.
  • Add 1 cup shredded cheddar cheese.
  • Place bowl in microwave and cook on high for 1 1/2-2 minutes, whisking every 30 seconds or so, until sauce is thick and heated through.
  • Season with salt, if desired, and whisk until blended.

2 cups whole milk
Kosher salt
1 cup shredded deli yellow American cheese (about 4 ounces)
1 cup shredded pepper Jack or Monterey Jack cheese (about 4 ounces)
1/4 cup grated Parmesan
2 ounces cream cheese
1 teaspoon Dijon mustard

Steps:

  • Stir the macaroni, 1 cup of the milk and 1/4 teaspoon salt in a microwave-safe 4-quart bowl. (It is important that you use a bowl large enough to prevent the milk from boiling over.) Cover tightly with plastic wrap; cut a small slit in the center with the tip of a paring knife to vent excess steam. Microwave on high (at 100 percent power) for 4 minutes in either an 1,100- or a 700-watt oven. Uncover (be careful to avoid the hot steam) and stir. Cover and microwave on high (at 100 percent power) until the macaroni is about two-thirds cooked, a little harder than al dente, 1 1/2 minutes in an 1,100-watt oven or 3 1/2 minutes in a 700-watt oven.
  • Add the remaining cup of milk, American cheese, Jack cheese, Parmesan, cream cheese and mustard. Stir well, cover tightly and microwave on high (at 100 percent power) until all the cheeses have melted, 4 minutes in an 1,100-watt oven or 4 1/2 in a 700-watt oven. Stir until thoroughly combined. If there are still some pieces of unmelted cheese, microwave again, covered, in 30-second increments. (The sauce will continue to thicken as it sits.) If desired, transfer to a decorative dish for serving.

Steps:

  • Melt butter in microwave oven.
  • Stir in corn flour well.
  • Add the milk and stir.
  • Cook in the microwave for 4 to 6 minutes, taking out 1/2 way to give a good stir or whisk for 30 seconds.
  • Put back in for remainder of cooking time.
  • Ready when starting to bubble up the side of the container; it should be thick and creamy. (If too thick, stir in more milk a little at a time).

  • Select a small to medium-sized microwave-safe dish that is wide and shallow. A glass pie plate or glass casserole dish works well. It will need to have walls, so a dinner plate isn't the best choice.
  • Grate plenty of cheese into the dish. You don't have to measure. Just make a loosely packed layer an inch or so deep, depending on how much sauce you want to make and how large a dish you have.
  • Pour a tablespoon or two of milk into the cornstarch and make a slurry before adding the corn starch to the dish. Make sure all of the cornstarch is dissolved in the milk before you add it to the pie plate.
  • Stir everything together with a fork, making sure to mix the cornstarch so it dissolves completely.
  • Microwave the whole thing in the dish for two minutes. Cover the dish if you want to save yourself some cleanup.
  • Stir with a fork again. Break up and loosen any clumps of cheese that stick together, or to the bottom.
  • Repeat the microwaving and stirring until the sauce blends and thickens. Microwave the sauce for about two minutes at a time, stirring in between. It will take about 2-4 two-minute cycles, depending on your microwave and quantities.
