Sweet potato bread is a Southern classic and this recipe is incredibly moist.

Steps:
- Preheat 350°F or 175°C and set an oven rack in the middle position.
- Whisk together flour, granulated sugar, brown sugar, baking soda, cinnamon, nutmeg, cloves, and salt in a mixing bowl.
- Add eggs, mashed sweet potato, oil, water, nuts, and vanilla to the same bowl. Mix until well combined.
- Pour the batter into a parchment paper lined bread pan and bake for 50 to 60 minutes, or until tester inserted into the center comes out clean.
- Remove from oven and let cool for about 10 minutes. Then, remove and place on a wire rack to cool completely.

A Southern delight with a 'more-ish' taste. One bite and you want more! This bread freezes well.

- Combine sugar and oil; beat well. Add eggs and beat. Combine flour, baking soda, salt, cinnamon and nutmeg. Stir flour mixture into egg mixture alternately with water. Stir in sweet potatoes and chopped nuts.
- Pour batter into greased 9x5 inch loaf pan (or 2 small loaf pans). Bake at 350 degrees F (175 degrees C) for about one hour.

SUN OVEN SAFFRON POTATO BREAD

- Place the potato in a sauce pan of boiling water, reduce the heat and simmer until tender. Drain the potato, reserving 7/8 cup of the cooking water in a cup. Add the saffron threads to the hot water and let stand for 30 minutes. Mash the potato and let cool. Add the saffron water to the bread machine pan. Add the mashed potato and the egg. Sprinkle flour over the ingredients in the pan, ensuring that they are completely covered. Add the dry milk. Add the honey, butter, and salt in separate corners. Make a shallow indentation in the center of the flour and add the yeast. Set the bread machine to the dough setting and press start. Check the dough after the first few minutes of kneading and add more water, 1 teaspoon at a time, if needed. When the dough cycle has finished turn the dough out onto a lightly floured surface. Gently punch it down. Shape the dough into a plump ball. Place it on a lightly floured baking sheet. Cover with oiled plastic wrap and let rise for 30 to 45 minutes. Set Global Sun Oven out to preheat while the dough rises Slash the top of the loaf with three or four cuts, rotate and repeat to make a criss-cross pattern. Bake this in Sun Oven 1 to 1-1/2 hours or until it sounds hollow when tapped. Turn out onto a wire rack.

SUN OVEN SWEET POTATO BREAD

- Pour the water into the pan of a bread machine. Sprinkle the flour, oats, and dry milk over the water making sure to completely cover it. Add the mashed sweet potato. Place the salt, sugar, and butter in separate corners of the pan. Make a shallow indentation in the center of the flour and add the yeast. Set the machine to the dough setting and press start. When the cycle has finished turn the dough out onto a lightly floured surface and punch down gently. Shape the dough into a loaf and put it in a lightly oiled bread pan. Cover with oiled plastic wrap and let rise in a warm spot 30 to 40 minutes. Set the Sun Oven out to preheat while the bread rises. Just before putting the bread in the Sun Oven spray the top with water and a sprinkling of rolled oats. Bake until lightly golden and sounds hollow when tapped, 45 minutes to an hour.

SUN OVEN PINTO BEAN CHILI WITH SWEET POTATO

- Set Sun Oven out to preheat. Put the beans in a dark pot with enough water to cover them by about two inches. Put a lid on the pot and cook in the Sun Oven until tender about 1-1/2 hours. Heat the oil in a separate pot. (If possible, use two pots that fit in the solar oven together so the beans and sweet potatoes can cook at the same time.) Add chopped onion to heated oil and sauté until the onion is soft. Stir in chili powder. Add water, sweet potato and tomato. Put a lid on the pot; place it in the Sun Oven until sweet potato is tender, about 45 minutes. Remove the sweet potato mixture from the Sun Oven, transfer it to a large Dutch oven and puree with a hand held blender until smooth. Drain the cooked beans reserving cooking liquid. Combine beans with pureed sweet potato mixture in Dutch oven. Add enough cooking liquid to achieve the desired consistency. Return Dutch oven to the solar oven. Leave it in for at least an hour to allow the flavors to blend. Remove the Sun Oven, mix in cilantro and lime peel. Season to taste with salt and pepper.

SUN OVEN TWICE BAKED SOUTHWESTERN STYLE SWEET POTATOES

- Set Sun Oven out to preheat. Lightly coat a baking pan with cooking spray. Place the sweet potatoes in the pan and bake in the Sun Oven until soft, 1 1/2 to 2 hours. Remove pan from the Sun Oven. When the potatoes are cool enough to handle cut off the top third of each one. Scoop out all the flesh from the smaller top parts and discard the skin. Scoop out the flesh from the larger parts leaving a 1/2-inch thick layer inside the skins. Place the skins back in the baking pan. Using an electric mixer or food processor, mix the scooped out flesh, chipotle chilies, and salt. Spoon the mixture into the reserved skins. Cover the pan with tin foil and a dark tea towel and bake in the Sun Oven until heated through, 30 to 40 minutes.

- In a large bowl, dissolve yeast in warm water. Add the sweet potatoes, 1/2 cup butter, honey, egg, salt and whole wheat flour. Beat until smooth. Stir in enough all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two greased 9x5-in. loaf pans. Cover and let rise until doubled, about 25 minutes. , Bake at 375° for 40-45 minutes or until golden brown (cover loosely with foil if top browns too quickly). Remove from pans to wire racks. Melt remaining butter; brush over warm bread. Cool., In a small bowl, beat butter and cream cheese until fluffy. Stir in walnuts. Serve with bread.

- Preheat oven to 350 degrees F (175 degrees C). Wash sweet potatoes, slice lengthwise and place on a lightly greased baking sheet. Bake in preheated oven until tender, about 30 minutes. Let cool, peel and mash.
- In a large mixing bowl, beat together sugar, eggs and oil. Stir in orange juice and 2 cups mashed sweet potatoes. In a separate bowl, mix together flour, salt, baking soda, cinnamon, nutmeg, allspice and cloves. Stir flour mixture into egg/sweet potato mixture until just combined. Fold in pecans if desired. Pour batter into prepared pans.

- Preheat oven to 375 degrees F (190 degrees C). Wrap sweet potato in aluminum foil.
- Bake sweet potato in the preheated oven until easily pierced with a fork, about 1 hour. Set aside to cool.
- Whisk white sugar and canola oil together in a bowl. Add eggs; mix well. Sift flour, cinnamon, and nutmeg into sugar mixture. Slowly whisk water into flour-sugar mixture until incorporated.
- Peel sweet potato; mash into the batter. Fold in 1/2 cup chopped pecans.
- Reduce oven temperature to 320 degrees F (160 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
- Pour batter into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, about 1 hour.
- Heat brown sugar and butter in a small saucepan over low heat until sugar is dissolved, about 5 minutes. Add 1/2 cup chopped pecans and stir to combine. Remove from heat. Pour glaze over bread.

- Preheat oven to 325ºF.
- Grease BOTTOM only of an 8½x4½x2½-inch loaf pan.
- Stir together flour and spices in mixing bowl.
- With a spoon, stir in sugar, eggs, oil and milk; blend well.
- Stir in sweet potatoes, pecans and raisins.
- Pour batter into prepared pan.
- Bake 1 hour and 10 minutes or until toothpick inserted in center comes out clean.
