Steps:
- Peel, core and slice the apples.
- Place apples in a large microwave-safe bowl.
- Add in 1/4 cup water, cinnamon (start with 1/2 teaspoon) and nutmeg, if using; stir to combine.
- Cover with heavy microwave-safe plastic wrap (leave a little side opened to allow steam to escape).
- Microwave on HIGH power for 10 minutes.
- Remove the bowl and stir the apples, then contine to microwave uncovered until apples are very tender (about 5-6 minutes longer).
- Using a large fork (I use a potato masher for this) coarsley mash apples to desired texture.
- Add in sugar to taste while the apples are still hot; mix well to combine.
- Bring to room temperature and then refrigerate for up to two days, or freeze in plastic freezer containers.

- Peel, core and slice apples 1/4-inch thick. Place apple slices in a large saucepan. Add remaining ingredients and simmer until a sauce consistency, about 45 minutes. Use a potato masher, if necessary, to break up any lumps, but leave slightly chunky.

- Cut apples in half lengthwise. Using spoon, remove and discard cores, making at least a 1-inch indentation in each apple half. In microwavable pie plate, arrange apple halves, cut sides up. If needed, cut thin slice off bottoms to keep halves from tipping.
- Fill each apple half evenly with raisins and brown sugar; dot with butter. Cover with microwavable plastic wrap, folding back one edge 1/4 inch to vent steam.

STRAWBERRY APPLESAUCE

- Peel and core apples then cut into small chunks. In a large saucepan, bring apples, cinnamon stick, and water to a boil and simmer until apples are tender when poked with a fork, about 15 minutes. Add strawberries and cook 5 minutes more. Remove from heat. Press the mixture through a sieve over a bowl. Taste, and if sugar is needed, add now while the mixture is still warm. Refrigerate until ready to serve.
BRAISED APPLES WITH ORANGE SAUCE

- Preheat oven to 325 degrees. Carefully pare the peel from the oranges and cut into julienne strips. Simmer the strips for 10 minutes in water. Drain and rinse. Squeeze the juice from the oranges, strain and set aside.
- Peel and core the apples and put them in a bowl with water to cover and add the juice of the lemon to prevent them from discoloring.
- Drain the apples. Using 2 tablespoons butter, grease a flameproof baking dish just large enough to hold them comfortably. Put a teaspoon butter in each apple. Sprinkle with sugar. Add 2 tablespoons of the cognac, white wine and orange juice. Bring to simmer on top of the stove, cover loosely with foil paper and put into the oven.
- Bake for 25 minutes, checking occasionally to make sure that the liquid remains at a simmer and that the apples are not overcooking. If they cook too long, they will collapse.
- When the apples are done, arrange them on a serving dish. Add the jelly to their cooking juices and bring to boil. Stir in remaining cognac and orange peel. Cook for a minute or two, or until the sauce is thick enough to coat the spoon. Pour over the apples. Serve at room temperature, with the cream in a small jug.

- Place the apples in a microwave container, sprinkle with cinnamon and pour the orange juice over the top.
- Cover and cook on high in the microwave for 3 minutes, toss and then cook for another 3-4 minutes, or until tender.
- At the same time, puree the strawberries and add 1 teaspoon sugar, or to taste.
- Then drain the juice from the apples into a saucepan together with the strawberry puree and cook over a high heat to reduce.
- Place the apples in a bowl and pour the sauce over the top.
- Garnish with almonds and serve warm or hot.
