Basic microwaved eggs are a quick and easy alternative to getting out a skillet pan. In just a couple of minutes you can enjoy your eggs soft or hard boiled.

Pinch salt
1 egg

Steps:

  • Spray microwave-safe container (e.g. mug, ramekin, or egg cooker) with cooking spray or wipe lightly with vegetable oil. Sprinkle a few grains of salt into bottom of container (salt attracts microwave energy and helps to cook egg evenly).
  • Break one or two eggs into container. Pierce yolks and whites with fork four or five times to bottom of container (piercing is necessary to prevent "exploding" during cooking). If using a mug or ramekin, cover with plastic wrap, pulling back small area for venting. If using an egg cooker, place lid on cooker base, lining up notches. Twist to secure.
  • For Soft Boiled Egg: Microwave on High (100% power) for 30 seconds, or on Medium (50% power) for 50 seconds. Let stand for 30 seconds before removing plastic wrap or lid. If still undercooked, turn egg over in container, cover, and microwave for another 10 seconds, or until cooked as desired.
  • For Hard Boiled Egg: Microwave on High (100% power) for 40 seconds. Let stand for 30 seconds before removing plastic wrap or lid. If still undercooked, turn egg over in container, cover, and microwave for another 10 seconds, or until cooked as desired.

Steps:

  • Break the eggs into a microwave-proof mixing bowl. Add milk and salt; mix well.
  • Pop the bowl into the microwave and cook on high power for 30 seconds. Remove bowl, beat eggs very well, scraping down the sides of the bowl, and return to the microwave for another 30 seconds. Repeat this pattern, stirring every 30 seconds for up to 2 1/2 minutes. Stop when eggs have the consistency you desire.

Steps:

  • Fill a bowl with warm water and place cold eggs into the bowl, to keep from cracking when you cook them.
  • Fill a microwave-safe bowl with water; add salt. Microwave on high power to boil, 1 to 1 1/2 minutes.
  • Place warm eggs into the bowl of hot water and cover the bowl with plastic wrap.
  • Place the bowl of covered eggs into the microwave and microwave on 60% power for 1 1/2 minutes.
  • Remove from the microwave and transfer eggs to a bowl of cool water to stop the cooking process. Peel and serve.

The reward for this delightful steamed egg dish, smooth and savory, will seem much too high for the effort. Reminiscent of Chinese zheng shui dan, Japanese chawanmushi and Korean gyeran jjim, this streamlined recipe cooks entirely in the microwave. The key to that perfect, soft-set wibble-wobble texture (think silken tofu) is using your microwave at around 500 watts - or half its power on a 1,000-watt machine. This lower heat lets the eggs and broth steam together gently until they cohere into something ethereal, existing somewhere between liquid and solid. More slurpable than chewable, it tastes fantastic as a light starter or breakfast on its own, or for lunch or dinner alongside steamed rice and other dishes to complete the spread.

2 large eggs
1 cup instant or kombu dashi (see Tip), vegetable or chicken broth, or water
Pinch of salt
1 teaspoon soy sauce
1 teaspoon maple syrup
1 tablespoon finely snipped chives or scallion greens, for garnish (optional)

Steps:

  • In a medium, microwave-safe shallow cereal bowl, whisk together the eggs, dashi and salt until very well combined, at least 30 seconds. Skim off any bubbles with a spoon or pop them by blowing on them.
  • Cover the bowl with a microwave-safe plate and microwave at 500 watts (on 50 percent power or power level 5 on a 1,000-watt microwave) until the eggs have just set and are no longer liquid in the middle, 5 to 7 minutes. (Every machine differs, so check for doneness at 5 minutes, then in 30-second intervals after that if needed.)
  • Let sit in the microwave to cool slightly, then carefully remove, uncover and drizzle with the soy sauce and maple syrup, and garnish with the chives, if using. Serve immediately.

Scrambling eggs in the microwave is a one dish affair. No muss, no fuss. These come out perfectly and taste delicious. Found this in an issue of Everyday Food. Microwave cooking times vary and mine actually needs 55 seconds at each step instead of the 45 seconds listed. Don't add extra salt until you've tasted it.

2 tablespoons milk
1/8 teaspoon cayenne pepper
1/4 teaspoon salt
1 scallion, thinly sliced (green onion)
2 tablespoons cheddar cheese, grated
1 cherry tomatoes, quartered (optional)
salt and pepper

Steps:

  • In a large (10oz) microwave-safe custard cup or ramekin, combine eggs, milk, cayenne pepper, and salt. Stir in scallion.
  • Microwave (uncovered) on high for 45 seconds; stir with a fork. Continue cooking until eggs are almost set, about 45 seconds more. Remove from microwave.
  • With a clean fork, stir in cheese; cover with a paper towel. Let stand until cheese has melted and eggs are set, about 1 minute. Top with tomato and season with salt and pepper to taste.
