Steps:
- Spray inside of 9-inch square baking dish with cooking spray.
- In a big pan, saute sausage over medium heat until it is browned, breaking it up with a fork, 8-10 minutes; drain off fat.
- Add in onion; saute for another 2-3 minutes.
- Sprinkle in the flour; stir until the flour is combined and coats the sausage and onion.
- Cook for about 2 minutes, stirring constantly.
- Slow pour in the milk and stir up the bits from the bottom of the skillet; bring to a boil and add in the Tabasco.
- Stir in 1 cup of cheese and continue stirring until cheese melts; cool for 10 minutes.
- Add in hash browns, green onions, and eggs, stirring until the mixture is combined.
- Pour into prepared dish; sprinkle with remaining cheese.
- Preheat oven to 350°; bake for 25-30 minutes, until puffed, golden, and set in the center; let rest for 10 minutes before serving.
- Note-after step 9, may cover and refrigerate for up to 2 days or freeze for up to 1 month; when ready to use, defrost in the refrigerator overnight, let casserole come to room temperature for about 30 minutes, then bake as directed.

- Preheat the oven to 350 degrees F (175 degrees C).
- Combine ground beef, onion, and bell pepper in a large skillet over medium heat. Cook and stir until vegetables are tender and beef is browned and cooked through, 10 to 15 minutes. Season mixture with salt and pepper while cooking.
- Meanwhile, fill a 5-quart Dutch oven or other oven-safe pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain noodles and return to the pot.
- Add diced tomatoes, condensed soup, cottage cheese, sour cream, and Worcestershire sauce to the egg noodles; stir to blend. Stir in ground beef mixture until evenly combined. Taste and adjust seasonings. Sprinkle Cheddar cheese over the top.
- Bake uncovered in the preheated oven until heated through and cheese is melted and golden, 25 to 30 minutes. Serve immediately.

Steps:
- Preheat oven to 375 degrees F. Coat a 3-quart casserole dish with cooking spray.
- In a large skillet, heat oil over medium heat and saute onion 2 to 3 minutes. Add ground beef and cook 4 to 6 minutes, or until browned.
- In a large soup pot, cook noodles according to package directions; drain well and return noodles to pot. Add ground beef mixture and remaining ingredients, except paprika; mix well. Place in prepared casserole dish and sprinkle with paprika.
- Cover and bake 25 to 30 minutes, or until heated through.
