4 thick slices white bread, crusts removed (homemade style is better than wonder bread style)
2 tablespoons olive oil
1/2 cup olive oil
1 red onion, diced
2 garlic cloves, minced
2 red peppers, diced
3 1/2 ounces serrano ham, thinly sliced and cut into strips
2 spanish chorizo, diced
1/2 teaspoon smoked paprika (Spanish, pimenton)
4 eggs
2 tablespoons fresh parsley, minced

Steps:

  • Cut or tear the bread into small pieces. Heat the 2 tbsp olive oil in a large heavy-bottomed frying pan over medium heat.
  • Add the bread pieces and toss to coat. Keep stirring until the bread is lightly golden (3-4 minutes). Remove and drain on paper towels. Season with salt and pepper and allow to cool.
  • Heat 2 tbsp of oil in the same frying pan. Add the onions, garlic and peppers and stir until softened, about 10 minutes.
  • Add the ham, chorizo and paprika and continue to cook on medium high until lightly browned, 10 minutes. Sprinkle with half the bread pieces and stir through. Remove from heat and keep warm.
  • Heat the remaining oil in a clean frying pan and when hot, crack the 4 eggs into the pan. Scoop hot oil over the eggs so the outer edges become crispy while the inner yolk is still liquidy and soft.
  • Remove eggs and drain the oil off.
  • To serve, divide the remaining breadcrumb mixture among 4 serving bowls, top with the warm ham mixture and top this with the fried egg.

Someone very very kind at Zaar helped me find this (correctly spelled!!) recipe! I am so greatful. My grandmother made this when I was growing up all the time. I can't wait to make this for my kids. Its awesome!

2 corn tortillas
4 eggs
3 -4 tablespoons tomato sauce
1 tablespoon onion, minced (optional)
vegetable oil
salt

Steps:

  • Tear tortillas in small pieces.
  • Fry in skillet in hot oil until crisp.
  • Add onion to hot oil just before tortillas are done.
  • Drain excess oil.
  • Beat eggs in bowl.
  • Add eggs, salt and tomato sauce to pan and scramble.
  • I would also scramble in 1/2 cup mild shredded cheese and as a personal prefrence I'll use a little more tomato sauce!

5 large eggs
6 (6 inch) corn tortillas, cut into bite-sized strips
1 large tomato, diced
1 medium onion, chopped
3 medium fresh jalapeno peppers, chopped
1 cup shredded Cheddar cheese, divided
1 tablespoon garlic, minced
nonstick cooking spray (such as Pam®)
salt and ground black pepper to taste

Steps:

  • Beat eggs in a bowl until frothy. Add tortilla strips and let soak a few minutes.
  • Add tomato, onion, jalapeno peppers, and a bit of Cheddar cheese to the egg mixture.
  • Spray a skillet with nonstick spray and heat over medium-high heat. Add garlic; cook and stir to brown lightly, about 1 minute. Pour in egg mixture; cook and stir until eggs are set, about 5 minutes. Season with salt and pepper.
  • Reduce heat to low and sprinkle remaining Cheddar over top. Cover and cook until cheese is melted, 2 to 3 more minutes.

Easy, inexpensive, delicious breakfast or brunch item that smells great on a Sunday morning. Shown to me by a former Mexican neighbor of mine. I usually make it vegetarian for myself, but with guests, I add a meat, usually sausage or chorizo. Delicious! Always a favorite and a classic in Mexico and Texas!

2 tablespoons vegetable oil
1 cup coarsely broken tortilla chips
½ medium onion, chopped
½ medium green bell pepper, chopped
¾ cup chopped chorizo sausage
1 medium tomato, diced
5 large eggs, beaten
salt and ground black pepper to taste
6 (6 inch) warm corn tortillas
1 cup shredded Cheddar cheese
¼ cup salsa

Steps:

  • Heat oil in a skillet over medium-high heat. Add broken tortilla chips; cook and stir for 2 to 3 minutes. Add onion; cook and stir for 3 minutes. Add bell pepper and cook until tender, 3 to 5 minutes. Stir in sausage and let cook until heated through, about 3 minutes.
  • Add tomato and mix until well combined. Pour beaten eggs into the skillet and season with salt and pepper. Cook, stirring regularly, until eggs are set and thoroughly cooked, about 5 minutes.
  • Serve skillet mixture with tortillas, Cheddar cheese, and salsa for guests to assemble themselves.
