Steps:
- Preheat the oven to 475 degrees F.
- Bring a large pot of water to a boil. Season generously with salt. Add the pasta and cook for 3 minutes less than the package instructions. Drain and set aside.
- Meanwhile, heat a large pan over medium heat and add the oil. When hot, add the cauliflower and onions and saute until starting to soften, 3 to 5 minutes. Add the garlic and cook for another minute. Add the water or stock, bring to a simmer and simmer until everything is soft, about 3 minutes. Add the nutmeg. Check the seasoning and add salt and pepper to taste. Remove from the heat and let cool slightly. Transfer to a blender and puree until smooth.
- Toss the pasta with the puree in a medium bowl. Transfer to a baking dish and top with the breadcrumbs, herbs and dairy-free Parmesan. Bake until warmed through and the breadcrumbs are toasted, 3 to 5 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain; pour macaroni into the prepared dish.
- Beat eggs, sour cream, seasoned salt, and black pepper into a smooth mixture; stir Cheddar cheese and Cheddar-Monterey Jack cheese into mixture until thoroughly combined. Pour over macaroni and mix well. Top casserole with torn pieces of processed cheese. Drizzle melted butter over casserole, especially along the sides.
- Bake in the preheated oven until casserole is bubbling and cheese has melted, about 30 minutes.

Can mac 'n' cheese be haute? Yes, in the hands of Maximo Lopez May, the executive chef of Wall & Water at the Andaz Wall Street Hotel in Manhattan, who adds exotic mushrooms. "It only works if the mushrooms are great," he said, "so go for elegant ones, like chanterelles or trumpets." If your budget doesn't allow for those, then use oyster mushrooms, hen o' the woods or cremini. But use a mix.

- Preheat the oven to 350 degrees F. Bring a large pot of lightly salted water to a boil. Add pasta, and cook until al dente, 10 to 13 minutes, depending on the size of the pasta. Drain and set aside.
- In a small pan over medium heat, melt 4 tablespoons butter. Remove from heat and set aside. In a small bowl, combine bread, thyme, and half the melted butter. Mix and set aside.
- In a large sauté pan over medium heat, combine remaining melted butter, onion and garlic. Sauté until onion is translucent, 3 to 5 minutes. Add mushrooms, adding olive oil if pan looks dry, and sauté until tender, about 12 minutes.
- When the mushrooms are tender, add wine and stir until it has evaporated. Add cream and 1 cup milk, and bring to a boil. Add the pasta, 10 ounces grated cheese, lemon zest and chopped parsley. Mix well, and season with salt and pepper to taste. If desired, add more milk and cheese as needed for a creamy, cheesy sauce.
- Butter a 10-inch diameter baking dish, 3- to 4-inches deep. Pour in pasta mixture, and top with bread mixture. Bake, uncovered, until the bread turns golden brown, 7 to 10 minutes. Serve hot.
MIKE'S FARM MAC AND CHEESE RECIPE

- Preheat the oven to 350 degrees F.
- Cook the macaroni for 6 minutes in boiling water or according to package instructions. Do not forget to add a pinch of salt in boiling water. Then drain the macaroni and set aside.
- Mix together mozzarella cheese, cheddar cheese, sour cream, mayo, salt, and pepper.
- Stir in macaroni with cheese mixture and pour it into a baking dish. Bake the mac and cheese mixture for 30 minutes until cheese is melted.
- Remove the dish from the oven, garnish with fresh parsley and serve.
MACARONI AND CHEESE

- Season chicken breasts with paprika salt and pepper and set aside. Heat olive oil in large saute pan and place chicken in it browning on both sides. Place in 400-degree oven for 8 to10 minutes. Remove from oven and let cool then dice into large pieces. Heat cream in large saucepan, add herbs, salt, and pepper and reduce by half. Add the cooked rigatoni, cheese and cooked chicken and simmer for 2 minutes. Remove from heat and serve.

IRON MIKE'S WHITE SHARP CHEDDAR N' HAM MACARONI AND CHEESE
I ate the most incredible macaroni and cheese with ham that my wife brought home from some fancy restaurant in town known for their Mac n Cheese. (It was packaged in aluminum foil which was formed to look like a swan - I don't even WANT to know how much she paid for this dish!) ANYway - Since Kraft doesn't make this in a box, I thought I'd try out my hand (and whisk) at making it from scratch. Below is the result of many trials (and a few errors...) on my journey to Mac 'n Cheese perfection. I hope you enjoy this as much as my family. There are some recommendations at the bottom regarding different substitutions... I'd appreciate any feedback!

Steps:
- Begin the cooking process of the macaroni- according to package directions; Add cubed ham (to warm) during the final minute or so of cooking the macaroni; Drain and set aside.
- While water is heating and macaroni is cooking, make your White Sauce: Melt butter in a saucepan over medium-low heat; add Flour and Salt, and cook about 1 minute, stirring constantly with a wire whisk until mixture is smooth and bubbly.
- Stir the Milk into the mixture and bring to a boil.
- Stirring constantly, boil mixture for 1 minute.
- Lower heat and cook until thickened, stirring regularly about 4-6 minutes.
- (Don't forget to add the ham to the macaroni as it is cooking!).
- Remove White Sauce from heat; Add cheese; stir until melted; Pepper to taste.
- Combine cheese sauce with the macaroni and ham in a bowl (or the macaroni pot); stir well.
- Serve with a yummy green vegetable on the side like green beans or asparagus.
- Enjoy!
- CHEF'S NOTES: You may use Medium/Mild Cheddar or maybe even PepperJack with this recipe as well; I would add a little"kick" with the milder cheeses by adding a clove of minced garlic, or by using salami pieces instead of ham- Yum!

- Preheat oven to 400 degrees.
- Cook macaroni according to package directions.
- Drain, rinse with cold water and set aside. Blond roux: Melt 1 stick of butter in small saucepan.
- Add 3/4 cup of flour.
- Blend well.
- Cook while stirring constantly, about 3-5 minutes, until flour and butter are well blended and start to dry slightly.
- Reserve for cheese sauce. Cheese sauce: In a large sauce pan, bring milk to simmer over medium heat. Whisk in 1/2 cup of the roux.
- Continue to whisk over heat until smooth and sauce begins to thicken, about 10 minutes.
- Saute diced onion in oil over medium heat until soft. Add onion to roux.
- Next add Worcestershire sauce, Dijon mustard, salt and pepper.
- Whisk to incorporate all ingredients.
- Begin to add cheddar cheese, gradually, in small amounts.
- Whisk constantly to help dissolve. Add remaining cheddar, the Gorgonzola and 3/4 cup of Parmesan.
- Whisk until smooth.
- Mix cheese sauce with cooked macaroni.
- Place in a large buttered oven-proof dish.
- Top with bread crumbs and remaining 1 cup of Parmesan cheese. Bake for about 10 minutes or until hot. To brown, place under the broiler until top is evenly browned; watch carefully.
- Note: The recipe says "8 servings", however it seems more like twelve or more.
