SHRIMP TOSTADAS WITH AVOCADO-TOMATILLO SALSA



Shrimp Tostadas with Avocado-Tomatillo Salsa image

Blend tomatillos with avocado for a chunky salsa to top tostadas with refried beans and grilled shrimp.

1 tablespoon vegetable oil, plus more, for the grill grates
1 clove garlic, quartered
1 jalapeno, quartered, seeded for less heat
1 small onion, quartered
4 tomatillos (about 8 ounces), husked and coarsely chopped
1/2 ripe avocado, seeded, peeled and chopped
Kosher salt
1/4 cup lightly packed fresh cilantro leaves, coarsely chopped, plus whole leaves, for serving
1 1/2 pounds medium shrimp (about 30), peeled and deveined
One 15- to 16-ounce can refried beans
1 head romaine, thinly sliced
8 corn tostadas

Steps:

  • Prepare a grill for medium-high heat; lightly oil the grates.
  • Put the garlic, jalapeno and onion in a food processor and pulse until finely chopped. Add the tomatillos, avocado and 1/2 teaspoon salt and pulse until chopped but still chunky. Transfer to a bowl, stir in the chopped cilantro and adjust the seasoning with additional salt; set aside.
  • Toss the shrimp with the oil and season generously with salt. Grill, turning once, until just cooked through, about 2 minutes per side.
  • Warm the beans in a small skillet over medium heat. Spread a thin layer on each tostada and top with some lettuce and a spoonful of the avocado-tomatillo salsa. Top with 3 to 4 shrimp per tostada and sprinkle with some cilantro leaves.

6 flour tortillas
2 tablespoons butter, melted
1 lb shrimp
½ teaspoon salt
½ teaspoon pepper
1 teaspoon cumin
1 teaspoon paprika
½ teaspoon chili powder
¼ teaspoon cayenne pepper
2 cloves garlic, minced
1 tablespoon lime juice
2 avocados, diced
1 tomato, large, diced
1 medium red onion, diced
¼ cup jalapeño, diced
2 tablespoons lime juice
¼ cup fresh cilantro, chopped
½ teaspoon salt
½ teaspoon pepper
sour cream, as garnish

Steps:

  • Preheat oven to 375˚F (190˚C).
  • Butter each side of the tortillas and cut into even quarters, making 24 pieces.
  • Place one piece in each cup of a muffin tin and push down so it creates a cup shape. (Make 2 batches or use 2 muffin tins to make the full amount of cups).
  • Bake for 10-12 minutes or until crisp.
  • In a bowl, mix together shrimp, salt, pepper, cumin, paprika, chili powder, cayenne, garlic, and lime juice.
  • Cook over medium high heat for 8 minutes, flipping halfway. Set aside.
  • In another bowl, combine diced avocado, tomato, red onion, jalapeno, cilantro, lime juice, salt, and pepper. Stir gently.
  • Assemble the cups by placing a spoonful of the avocado salsa in the toasted cup. Place a piece of shrimp on top, followed by a dollop of sour cream.
  • Serve with lime wedges.

These super easy, healthy tacos are completely delicious. (This is an adaptation of a recipe by Layla for Gimme Delicious.) The calorie count in this recipe is based on a regular flour tortilla, but if you want to cut out 100 calories per taco, try using low-carb, high fiber, low calorie tortillas. I love the "Ole Mexican Xtreme Wellness" tortillas that you can find at Walmart. They taste great. You can also substitute plain yogurt for the sour cream to reduce the fat. Enjoy!

1 lb medium shrimp (raw, peeled and deveined)
1/2 cup fire roasted corn
1/2 cup black beans (rinsed and drained)
1 1/2 tablespoons olive oil
1 garlic clove (minced)
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
1/4 teaspoon onion powder
1/4 teaspoon kosher salt
1 tablespoon olive oil
1 tablespoon lime juice
1 tomatoes (seeded and chopped)
1 avocado (peeled and chopped)
1 jalapeno (seeded and chopped)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lime juice
1/4 cup loosely packed fresh cilantro leaves (coarsely chopped)
1/2 sour cream (or plain yogurt)
1 tablespoon lime juice
6 small flour tortillas (or corn tortillas)

Steps:

  • To cook the shrimp: In a medium bowl whisk together olive oil, garlic, cumin, chili and onion powders, cayenne pepper, and salt. Add in shrimp, corn and black beans, and toss to coat completely. Cover and refrigerate for at least 10 minutes or up to 24 hours. Heat a large heavy-duty or cast iron skillet on high heat for 2 minutes. Add the olive oil and shrimp. Cook shrimp in a skillet over medium-high heat until pink and cooked through, about 5 minutes. Turn off heat and finish with a squeeze of lime (optional).
  • To make salsa: Combine tomato, avocado, jalapeno, salt, pepper, lime juice, and cilantro in a small bowl and stir to combine. Set aside. (If not using right away, place a piece of plastic wrap inside the bowl and directly over salsa to prevent discoloration and refrigerate.).
  • To make sauce: Stir sour cream with cilantro and lime juice in a small bowl; set aside.
  • To assemble tacos: Grill tortillas on stovetop over the flame until lightly charred (this step is optional). Spoon avocado salsa generously over warm tortillas, then top with 3 shrimp and drizzle with sour cream sauce. Serve tacos with lime wedges on the side.
