If you are watching your carbs and craving pancakes, here is a breakfast you will like. To obtain almond meal, put some almonds in your food processor and pulse them until they are the consistency of cornmeal. Be careful if you over-pulse, you will obtain almond butter :).

1/4 cup sparkling water (you can use flavored)
2 tablespoons oil

Steps:

  • Mix all ingredients together.
  • Cook the batter as you would pancakes, be careful not to burn them as you might not get the regular bubbles.
  • Serve them with sugar-free syrup.

1 cup soy flour
1/4 cup wheat flour
4 teaspoons baking powder
2 tablespoons Splenda sugar substitute
1/4 teaspoon salt
3 eggs
1 1/2 cups half-and-half
3 tablespoons canola oil
1/2 teaspoon vanilla extract

Steps:

  • Pancake Preparation:(approximately 2.5 net carbs per pancake).
  • Beat oil, eggs, vanilla extract and half and half in a large bowl with a wire whip. Sift in dry ingredients and beat batter until smooth. Don't worry about over-mixing. Preheat large frying pan over medium-medium high heat. Spray pan liberally with canola cooking spray. Spoon a generous tablespoon of batter into pan making sure pancakes don't touch. Flip pancake when bubbles start to form on top. Cook about 2 minutes each side.

1/4 cup bob's redmill low-carbohydrate baking mix
4 drops sweet leaf stevia
1/2 tablespoon baking powder
1/4 tablespoon vegetable oil
1/4 teaspoon salt
1/4 cup soymilk or 1/4 cup coconut milk
1 teaspoon vanilla extract

Steps:

  • In a bowl, lightly mix all the dry ingredients first. As soon as you add the liquids the batter will rise. If you plan to make multiple pancakes, use a big bowl.
  • Do not over mix the ingredients. Lightly fold everything a few times.
  • Cook on a greased skillet or griddle over medium to medium high heat until golden. I normally cover the pan and that helps it cook faster.
  • Serve immediately.

5 tablespoons soy flour
2 tablespoons wheat gluten
1 (1 ounce) packet Splenda sugar substitute
3 teaspoons baking powder
1 large egg
3/4 cup 1% low-fat milk, warmed to room temperature
3 tablespoons salted butter, melted

Steps:

  • Preheat your skillet.
  • Combine dry ingredients in a bowl.
  • Add in eggs and milk and mix before adding the melted butter.
  • Check your skillet by putting a drop of water on it-it should instantly evaporate with a hissing sound.
  • Fry 'em up!
  • Note: My dad always taught me to flip pancakes when the little air bubbles that appear on the top of the pancake burst, and the hole they leave doesn't close right away. If that's your method I want to warn you right now it doesn't work with soy flour. The holes will be closing over long after the bottom of the pancake is black. You need to lift the edges of these with a spatula in order to know when to flip.
