FRIED APPLE PIES
Get traditional taste in an individual hand pie. Apples, butter and cinnamon get tucked into biscuit dough before frying. Sprinkle with powdered sugar before serving with ice cream.

Steps:
- Filling: Add the butter to a large saute pan and melt. Add the apples, sugar, cinnamon and lemon juice. Cook over medium heat until the apples are soft, about 15 minutes. Remove from the heat and cool.
- When the filling is cool, roll the biscuits out on a lightly floured surface so that each biscuit forms a 7 to 8-inch circle. Place 2 to 3 tablespoons of the filling on each biscuit circle. Brush the edges of the circle with water. Fold the circle over the filling to make a half-moon shape. Seal by pressing the edges with the tines of a fork.
- Preheat deep-fryer with oil to 350 °F.
- Carefully add the pies to the oil, 1 at a time, and fry until golden brown, turning the pies as necessary for even browning, about 5 to 8 minutes. Drain on paper towels. Sprinkle with powdered sugar immediately.
MIMI'S MAINE APPLE PIE
Maine has some of the finest apple orchards in the United States. Can you tell that I'm partial to Maine? Even though we do have good apples, many other states have good ones too. So where ever your apples come from, this is a good pie to use them in.

- Peel and slice the apples.
- Combine the sugar, flour, cinnamon, nutmeg, and salt.
- Mix lightly through the apples.
- Heap into a pastry-lined 9" pie plate.
- Dot with butter.
- Adjust top crust and flute the edges; cut vents.
- Bake in a 425 degree oven 50-60 minutes or till crust is browned and apples are done.
- NOTE: I put thin strips of aluminum foil around the edges of the pie before I bake it so that the edges don't burn; I take them off the last 10 minutes or so, just to make sure they are browned up.

FRIED APPLE PIES

- Heat a large cast-iron skillet over medium heat. Add the brown sugar, butter and 1 tablespoon water. Cook, stirring, until the sugar is dissolved and the mixture is bubbling. Add the apples, vanilla, salt, cinnamon and lemon juice. Mix together the cornstarch and 1 tablespoon water in a small bowl to create a slurry. Add the cornstarch mixture to the skillet and stir to combine. Cook, stirring occasionally, until the apples are tender, about 5 minutes. Pour into a heatproof bowl and let cool completely. You can make this ahead of time and chill in the fridge a day or so in advance if needed.
- To make the pies, roll each biscuit into about a 5-inch circle that is about 1/8 inch thick. Spoon 2 generous tablespoons of the apple filling on each round of dough, just off center. Use your finger and run a little water around the edges to help them seal completely. Fold one half of each circle over onto the other half and seal in the apple filling, forcing out any air that you can. Press the edges together and crimp with a fork. Continue until they're all assembled.
- Heat the oil in a high-sided skillet over medium heat until it reaches 350 degrees F. Fry the pies 2 or 3 at a time for about 5 minutes, carefully turning them halfway through. Remove them to a paper towel-lined baking sheet to drain.
- When all the pies are fried, sift the confectioners' sugar over top. Serve with Cinnamon-Caramel Sauce or store-bought caramel sauce.
- Mix the brown sugar, half-and-half, butter and a pinch of salt in a saucepan over medium-low heat. Cook, whisking gently, until it thickens, 2 to 3 minutes. Whisk in the vanilla, cinnamon and a second pinch of salt and cook another minute to thicken further. Turn off the heat and allow to cool to room temperature before serving. Chill if not using immediately.
AUNT DEE DEE'S APPLE COFFEE CAKE
Layers of apple pie filling make this cake moist and delicious.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 pan.
- Mix pie filling and cinnamon, set aside.
- Beat flour, white sugar, milk, 1/2 cup softened butter, baking powder, salt and eggs in mixing bowl on low speed for 30 seconds. Beat on medium speed for 2 minutes.
- Pour half of the batter into prepared pan. Spoon half of the pie filling over the batter. Spread remaining cake batter over pie filling, and top with the remaining half of the pie filling.
- Mix brown sugar and nuts together and sprinkle over top of cake. Drizzle with 2 tablespoons melted butter.
- Bake at 350 degrees F (175 degrees C) for 45 to 55 minutes. Allow cake to cool 20 minutes.
- Combine confectioners sugar, 1 tablespoon butter, 3/4 teaspoon vanilla, 2 to 3 teaspoons hot water. Beat until smooth. Drizzle over cake.

- Sift flour and salt together. Cut in the shortening with a pastry blender until the mixture resembles coarse crumbs. Add cold water 1 tablespoon at a time and mix with fork. When the flour mixture is moistened, gather it into a ball, wrap it in plastic, and refrigerate for 30 minutes.
- Peel and dice the apples and place them in a saucepan. Combine the sugar and cinnamon; pour over the apples and toss to coat. Cook, covered, in a saucepan on low heat. Cook until soft, then mash with fork to form a thick applesauce. Allow to cool.
- Transfer the dough to a lightly floured work surface. Roll the dough out to 1/8 inch thick and cut rounds with a large cookie cutter (4 inches in diameter).
- In each round, place 1 heaping tablespoon fruit. Moisten edges with cold water, fold in half, and press edge with a fork to seal. Repeat with the remaining pastry and filling.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Fry the pies, a few at a time, 2 to 3 minutes on each side; cook until the crust is golden brown. Drain on paper towels.

- Cover dried apricots with water, and cook in a sauce pan till "jam" like texture.
- Set aside to cool.
- Roll out biscuits to 6-8' circle's.
- Place 2-3 Tbs. of apricots in center of biscuit.
- Fold biscuit in half. Seal with Fork.
- Fry in med. hot cooking oil- until golden brown.
- Sprinkle with Sugar while warm.
- Let em' cool a bit, and ENJOY!

DEEP FRIED TWINKIES - DEE DEE'S
A deep-fried Twinkie involves freezing the cake, dipping it into batter, and deep-frying it to create a variation on the traditional snack cake. It was described by The New York Times story in this way: "Something magical occurs when the pastry hits the hot oil. The creamy white vegetable shortening filling liquefies, impregnating the sponge cake with its luscious vanilla flavor... The cake itself softens and warms, nearly melting, contrasting with the crisp, deep-fried crust in a buttery and suave way. The pièce de résistance, however, is a ruby-hued berry sauce, adding a tart sophistication to all that airy sugary goodness". The Texas State Fair had introduced the fried Twinkie to great popular acclaim, and the notion spread to other state fairs across the U.S., as well as some establishments that specialize in fried foods. Fried Twinkies are sold throughout the U.S. in fairs as well as ball games. Pièce de résistance (French pronunciation: [pj?s d? ?ezist??s]) is a French term (circa 1839), translated into English literally as "piece of (or for) resistance," referring to the best part or feature of something (as in a meal), a showpiece, or highlight. It can be thought of as the portion of a creation which defies (i.e. "resists") orthodox or common conventions and practices, thereby making the whole of the creation unique and special. The phrase gives the sense that the referred-to element is the most outstanding, notable, or defining of the collection. Twinkies were introduced in 1933 by The Continental Baking Company in Indianapolis, Indiana. Today they are one of Hostess's best selling snack cakes, with 500 million cakes being sold each year. - Freeze Twinkies several hours or overnight.
- Heat 4 cups vegetable oil in deep fryer to about 375F.
- For batter, mix together milk, vinegar and oil.
- In another bowl, blend flour, baking powder and salt. Whisk wet ingredients into dry and continue mixing until smooth. Refrigerate while oil heats.
- Push stick into Twinkie lengthwise, leaving about 2 inches to use as a handle. Dust with flour and dip into the batter. Rotate Twinkie until batter covers entire cake.
- Place carefully in hot oil. The Twinkie will float, so hold it under oil with a utensil to ensure even browning. It should turn golden in 3 to 4 minutes. Depending on the size of your deep fryer, you might be able to fry only one at a time.
- Remove the Twinkie and place on paper towel to drain. Remove stick and allow Twinkie to sit for about five minutes before serving. Sprinkle with powdered sugar.
- For berry sauce, heat preserves over low heat until melted. Add fresh or frozen mixed berries. Heat until sauce simmers. Cover and refrigerate until served.
