MINESTRONE SOUP WITH SWEET SAUSAGE



Minestrone Soup with Sweet Sausage image

Number Of Ingredients 26

3 tablespoons EVOO
3/4 cup broken spaghetti or linguine
1 pound sweet Italian sausage, bulk or cut from casing
1 carrot, chopped
1 bulb fennel, chopped
4 cloves garlic, sliced or chopped
1 onion, chopped
Salt and freshly ground pepper
One 14-ounce can cannellini beans, drained
One 14-ounce can garbanzo beans, drained
8 cups Chicken Poaching Liquid, recipe follows, or store-bought chicken stock
2 plum tomatoes
A few sprigs fresh rosemary, leaves stripped and chopped
A few sprigs fresh thyme, leaves stripped and chopped
Grated Parmigiano-Reggiano, to pass at the table
Ciabatta rolls, for serving
One 4-pound whole chicken
2 bay leaves
2 carrots, quartered
2 ribs celery, quartered
1 lemon, sliced
1 large onion, quartered with root end attached
A few black peppercorns
A few stems fresh rosemary
A few stems fresh thyme
Salt

Steps:

  • Heat 1 tablespoon EVOO in a soup pot over medium heat. Add the pasta and toast until deep golden, nutty and fragrant, then remove the pasta and reserve. Add the remaining 2 tablespoons EVOO and raise the heat a bit. Add the sausage and cook until browned, then transfer the sausage to a plate. Add the carrots, fennel, garlic and onions, and season with salt and pepper. Cook until tender, about 10 minutes. Return the sausage to the pot and add the beans and Chicken Poaching Liquid. Using the large holes of a box grater, grate the tomatoes into the soup. Add the rosemary and thyme, and season with salt and pepper. Simmer the soup to combine the flavors. Return the soup to a boil, stir in the toasted pasta and cook until al dente. Ladle the soup into shallow bowls and top with the cheese. Serve with ciabbatta rolls. Cook's Note: If you are not serving the soup immediately, cool and store it in the refrigerator before adding the pasta. Return it to a boil and cook the pasta as directed.
  • Place the chicken in a pot and add the bay leaves, carrots, celery, lemons, onions, peppercorns, rosemary, thyme and some salt. Cover with water and bring to a boil. Reduce the heat to a simmer and poach the chicken for 1 hour. When the chicken is cool enough to handle, discard the skin and bones and separate the meat into bite-size pieces. Strain the stock and reserve.

Think of this recipe as a guide. The soup is excellent as written, but this is the perfect opportunity to use up vegetables in the fridge. This is great eaten straight away and it will keep overnight. The pasta may become softer overtime, but the flavors of the soup will improve.

2 tablespoons extra-virgin olive oil
8 ounces bulk spicy or Italian pork sausage, see note
2 medium bulbs fennel, trimmed and finely chopped
1 medium onion, finely chopped
3 medium carrots, peeled and finely chopped
3 stalks celery, finely chopped
3 garlic cloves, minced
2 medium zucchini or yellow summer squash, finely chopped
1 (15-ounce) can diced tomatoes, with juice
1 (15-ounce) can cannellini beans (white kidney beans)
8 cups low-sodium chicken stock, see how we make chicken stock
1 bay leaf
3 sprigs fresh thyme
3/4 cup small dried pasta such as penne, elbow or orecchiette
1 pound baby spinach (about 4 cups)
Salt and fresh ground black pepper
1/4 cup fresh parsley leaves and tender stems, chopped
Fresh grated Parmesan cheese for serving

Steps:

  • Heat the olive oil over medium-low heat in a large, heavy soup pot or Dutch oven and add the fennel, onion, carrots and celery. Cook, stirring, until beginning to soften, about 3 minutes. Stir in 1/2 teaspoon of salt and garlic and cook for 1 minute.
  • Add zucchini, tomatoes with juice, beans, bay leaf, thyme and the chicken stock, and bring to a simmer. Stir in 1 teaspoon of salt, taste then adjust with more as needed. Add 6 to 7 generous grinds of black pepper. Reduce heat to low and simmer about 20 minutes.
  • Add pasta and cook until it is tender but not mushy, 8 to 10 minutes. Stir in spinach and parsley and cook until wilted, about 2 minutes. Taste the soup and adjust with more salt and/or pepper. Serve with parmesan cheese on top.

Many years ago I watched chef and TV personality Mario Batali make an Italian soup that had fennel, garlic and bread as the base. I have dietary restrictions that don't allow me to eat bread, so I made my own version by omitting the bread and adding sausage for protein. It's hearty and irresistible on a cold night. It can feed a crowd or provide plenty of leftovers. If you find yourself missing the bread, serve it on the side to perfectly round out your meal. -Suzanne Clark, Fort Dodge, IA

2 tablespoons olive oil, divided
1 package (12 ounces) fully cooked Italian or spicy chicken sausage links, halved and sliced 3/4 inch thick
1 medium fennel bulb, cut into 3/4-inch pieces (2 cups)
3 medium carrots, cut into 1/2-inch slices
1 medium onion, coarsely chopped
3 garlic cloves, thinly sliced
3/4 pound red potatoes (about 3 medium), cut into 3/4-inch cubes
1 can (15 ounces) cannellini beans, rinsed and drained
1 carton (32 ounces) chicken broth
4 cups water
1 can (14-1/2 ounces) diced tomatoes, drained
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a 6-qt. stockpot, heat 1 tablespoon oil over medium-high heat; saute sausage until lightly browned, 2-3 minutes. Remove sausage, reserving drippings in pot., In same pot, heat remaining oil over medium heat; saute fennel, carrots and onion 8 minutes. Add garlic; cook and stir 1 minute. Add potatoes, beans, broth and water; bring to a boil. Reduce heat; simmer, covered, 10 minutes., Stir in tomatoes, salt, pepper and sausage; return to a boil. Reduce heat; simmer, uncovered, until vegetables are tender, about 5 minutes.

  • Heat the oil in a large Dutch oven or stock pot. Brown the sausage over high heat, breaking up the meat with your spatula to form small clusters, until cooked through and beginning to crisp, about 4 minutes. Remove to a plate with a slotted spoon.
  • Add the onions, carrots, and fennel to the sausage drippings. Saute over medium-high heat until soft, 5 minutes. Stir in the garlic and cook for another minute, until fragrant. Pour in the tomatoes and simmer until the liquid is reduced and the tomato chunks have softened, 5 minutes. Add the cooked sausage, stock and salt to the pot. Bring to a boil.
  • Stir in the pasta and beans and reduce the heat to medium-low. Simmer until the pasta is cooked through. Off the heat stir in the herbs and taste for seasoning. Serve alongside some crusty bread and garnish with a drizzle of olive oil, shaved Parmesan or pecorino.
