This is a recipe I saved from Ediets. I have found that I prefer a little sea salt, fresh ground pepper and splenda mixed with the sauce, but the original recipe did not call for it. I hope you enjoy!

2 1/2 cups fresh green beans
2 garlic cloves
5 teaspoons balsamic vinegar
2 1/2 teaspoons olive oil

Steps:

  • Rinse and snap beans.
  • Mince garlic.
  • Mix garlic, vinegar and olive oil and set aside.
  • Steam beans until tender but firm, approximately 10-15 minutues.
  • Toss with balsamic vinegar dressing.
  • Can be refrigerated and served cold.

Steps:

  • Place beans in a large saucepan and cover with water. Bring to a boil. Cover and cook for 3 minutes. Drain and immediately place beans in ice water. Drain and pat dry., In a large bowl, combine the tomatoes, cucumber and beans. In a small bowl, whisk the remaining ingredients. Pour over vegetables; toss to coat.

1/4 cup olive oil
3 tablespoons lemon juice

1/8 teaspoon pepper
1 large red onion, chopped
4 cups cherry tomatoes, halved
1 cup (4 ounces) crumbled feta cheese

Steps:

  • Place beans in a 6-qt. stockpot; add water to cover. Bring to a boil. Cook, covered, 8-10 minutes or until crisp-tender. Drain and immediately place in ice water. Drain and pat dry., In a small bowl, whisk oil, lemon juice, vinegar, salt, garlic powder, mustard and pepper. Drizzle over beans. Add onion; toss to coat. Refrigerate, covered, at least 1 hour. 1 lb. fresh green beans
1 cup cherry or grape tomatoes
1/2 small red onion
Optional: vegan feta crumbles
2 Tbsp. balsamic vinegar
2 Tbsp. fresh lemon juice
1-2 cloves garlic (minced)
1 Tbsp. olive oil (optional - omit for oil-free)
Salt/pepper

Steps:

  • Make the dressing: in a small bowl, whisk together all dressing ingredients.
  • Trim ends off green beans and rinse. Steam (or boil) for about 3-4 minutes until crisp-tender. In a colander, rinse well with cold water to stop cooking, then pat dry. Cut green beans into 1 to 2 inch pieces.
  • Finely dice red onion.
  • Place onion and green beans in a bowl. Drizzle dressing over top and toss to coat.
  • Cover and refrigerate for at least an hour to marinate for best flavor.
  • When ready to serve, add diced tomatoes, vegan feta (optional) and lightly toss.

  • Cook beans in large pot of rapidly boiling salted water until just crisp-tender. Rinse with cold water. Drain. Transfer to bowl. Combine shallots and vinegar. Gradually mix in oil. Add basil. 1 sweet onion, peeled
2 cloves garlic, chopped
½ cup rice wine vinegar

⅓ cup canola oil

1 dash Worcestershire sauce

  • Thinly slice the onion and place into a colander over the sink. Add the cleaned green beans to a large pot of boiling water and boil until crisp tender (about 4 minutes). 1 ounce thick-sliced lean bacon or 1 ounce thick-sliced pancetta, cut into 1/4" dice
3 medium onions, halved and thinly sliced lengthwise
2 bay leaves
1/3 cup balsamic vinegar
2 tablespoons water (or reserved bean cooking liquid)
3 cups drained and cooked beans or 3 cups drained and cooked lentils, or canned beans rinsed well and drained
kosher salt
freshly ground black pepper
1/4 cup fresh flat-leaf parsley

Steps:

  • To make the dressing, put the bacon in a medium heavy nonstick skillet set over moderately low heat, cover and cook until it's crisp and browned and has rendered it's fat out, about 8 minutes Add the onions, cover and cook until they are wilted, about 5 minutes adding 1 Tbls of water if necessary to prevent sticking Remove the lid and continue cooking until the onions are golden brown, about 8 minutes Add the bay leaves, balsamic vinegar and water, simmer for 30 seconds.
  • Stir in the beans and salt to taste.
  • Simmer 5-10 minutes, tossing occasionally, until the beans are heated through Pepper generously and stir in the parsley.
  • Serve warm.

Summer bounty. Green beans, Tomatoes, Shallots, & Garlic. Cooking time includes the time dressing needs to rest. This recipe was told to me by my chiropractor. He shares my love for shallots, and is also a self proclaimed "foodie".

Number Of Ingredients 9

1 tablespoon white balsamic vinegar
1 dash sea salt or 1 dash other coarse salt
2 tablespoons olive oil
2 garlic cloves (finely diced)
1/2 cup shallot (finely diced)
1/2 lb tomatoes
1 teaspoon sea salt or 1 teaspoon other coarse salt, to sprinkle over tomatoes
1/2 lb green beans
2 tablespoons flat-leaf Italian parsley (finely minced)

Steps:

  • Make dressings about an hour before serving.
  • Whisk the salt and vinegar together in a small bowl and set aside (room temperature).
  • Put the olive oil in a small jar with a lid, adding the garlic and shallots (room temperature).
  • Peel, seed, and coarsely chop tomatoes, and put in colander and sprinkle lightly with salt.
  • Allow tomatoes to drain.
  • Clean beans, break into bite size, and blanch 4-6 minutes.
  • Plunge beans into ice water to stop cooking for 2 minutes.
  • Drain, dry, wrap in towel.
  • When ready to serve, add the vinegar to the olive oil mix, cover, and shake vigorously.
  • Put beans in chilled bowl, pour dressing over beans, and toss.
  • Add the drained tomatoes.
  • Garnish with the parsley and correct the seasoning.
  • Serve.

1 lb fresh green beans, rinsed, trimmed and cut in half
10 ounces grape tomatoes, whole
3 ounces fresh Baby Spinach, whole leaves (about 2 cups packed)
1 small red onion, halved and thinly sliced
2 (14 ounce) cans hearts of palm or 2 (14 ounce) cans marinated hearts of palm, sliced into 1/2-inch slices
1 lemon, juice of (about 1/4 cup)
1/4 cup balsamic vinegar
1/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh oregano, minced
2 garlic cloves, minced
2 g Splenda sugar substitute (optional for a sweet taste) (optional) or 2 g sugar, to taste (optional for a sweet taste) (optional)
feta cheese, to top (optional)

Steps:

  • Mix salad ingredients together.
  • Mix dressing ingredients together (except the feta).
  • Toss everything together.
  • Best if it stands for at least an hour at room temperature.
  • To serve top each serving with feta.
  • This stores well for a long time in a large ziploc bag if you only add the feta when served.
