This is a recipe I saved from Ediets. I have found that I prefer a little sea salt, fresh ground pepper and splenda mixed with the sauce, but the original recipe did not call for it. I hope you enjoy!

- Rinse and snap beans.
- Mince garlic.
- Mix garlic, vinegar and olive oil and set aside.
- Steam beans until tender but firm, approximately 10-15 minutues.
- Toss with balsamic vinegar dressing.
- Can be refrigerated and served cold.

- Place beans in a 6-qt. stockpot; add water to cover. Bring to a boil. Cook, covered, 8-10 minutes or until crisp-tender. Drain and immediately place in ice water. - Make the dressing: in a small bowl, whisk together all dressing ingredients.
- Trim ends off green beans and rinse. Steam (or boil) for about 3-4 minutes until crisp-tender. In a colander, rinse well with cold water to stop cooking, then pat dry. Cut green beans into 1 to 2 inch pieces.
- Finely dice red onion.
- Place onion and green beans in a bowl. Drizzle dressing over top and toss to coat.
- Cover and refrigerate for at least an hour to marinate for best flavor.
- When ready to serve, add diced tomatoes, vegan feta (optional) and lightly toss.

- Thinly slice the onion and place into a colander over the sink. Add the cleaned green beans to a large pot of boiling water and boil until crisp tender (about 4 minutes). When the beans are done, drain the water into the colander to slightly cook the onions. Immediately rinse all in cold water to stop the cooking process.
- For the dressing: In a large bowl, whisk together the garlic, rice wine vinegar, cider vinegar, oil, sugar, salt, pepper, hot sauce and Worcestershire sauce. Add beans, onions and cheese and stir until combined. Place in a nonreactive container and refrigerate for at least 4 hours. Enjoy!

- To make the dressing, put the bacon in a medium heavy nonstick skillet set over moderately low heat, cover and cook until it's crisp and browned and has rendered it's fat out, about 8 minutes Add the onions, cover and cook until they are wilted, about 5 minutes adding 1 Tbls of water if necessary to prevent sticking Remove the lid and continue cooking until the onions are golden brown, about 8 minutes Add the bay leaves, balsamic vinegar and water, simmer for 30 seconds.
- Stir in the beans and salt to taste.
- Simmer 5-10 minutes, tossing occasionally, until the beans are heated through Pepper generously and stir in the parsley.
- Serve warm.

Steps:
- Make dressings about an hour before serving.
- Whisk the salt and vinegar together in a small bowl and set aside (room temperature).
- Put the olive oil in a small jar with a lid, adding the garlic and shallots (room temperature).
- Peel, seed, and coarsely chop tomatoes, and put in colander and sprinkle lightly with salt.
- Allow tomatoes to drain.
- Clean beans, break into bite size, and blanch 4-6 minutes.
- Plunge beans into ice water to stop cooking for 2 minutes.
- Drain, dry, wrap in towel.
- When ready to serve, add the vinegar to the olive oil mix, cover, and shake vigorously.
- Put beans in chilled bowl, pour dressing over beans, and toss.
- Add the drained tomatoes.
- Garnish with the parsley and correct the seasoning.
- Serve.
