Why make one strudel when you can just as easily make four? Switch up the filling between crispy sheets of puff pastry to transform a sweet dessert into a savory appetizer. No matter which strudel you choose, you're in for a flavorful flaky treat.

2 sheets frozen puff pastry, thawed
1 large egg, beaten
2 tablespoons peach jam
2 tablespoons blueberry
2 tablespoons orange marmalade
2 tablespoons fresh cranberries
2 slices swiss cheese, quartered
2 slices ham, quartered
½ teaspoon freshly ground black pepper
4 slices prosciutto
10 pieces asparagus, cut into 2 in pieces (5 cm)
½ teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Cut the puff pastry sheets into 2 x 5-inch (5 cm x 12 cm) rectangles. You should have 16 rectangles total.
  • Make the blueberry peach strudels: In a small bowl, mix together the peach jam and blueberries. Scoop 1 tablespoon of the mixture onto the bottom third of 4 pastry rectangles. Brush the exposed pastry with the beaten egg, then fold the bottom of the pastry over the filling and continue rolling to seal. Place seam-side down on the prepared baking sheet. Cut 2 diagonal slits on the top of each strudel and brush with more egg wash.
  • Make the cranberry orange strudels: In a small bowl, mix together the orange marmalade and cranberries. Scoop 1 tablespoon of the mixture onto the bottom third of 4 pastry rectangles. Brush the exposed pastry with the beaten egg, then fold the bottom of the pastry over the filling and continue rolling to seal. Place seam-side down on the prepared baking sheet. Cut 2 diagonal slits on the top of each strudel and brush with more egg wash.
  • Make the ham and Swiss strudels: Place 2 Swiss cheese quarters and 2 ham quarters at the bottom third of 4 pastry rectangles. Brush the exposed pastry with the beaten egg, then fold the bottom of the pastry over the filling and continue rolling to seal. Place seam-side down on the prepared baking sheet. Cut 2 diagonal slits on the top of each strudel. Brush with more egg wash and top with a pinch of pepper.
  • Make the prosciutto asparagus strudels: Wrap a slice of prosciutto around 2 or 3 pieces of asparagus and place at the bottom third of 4 pastry rectangles. Brush the exposed pastry with the beaten egg, then fold the bottom of the pastry over the filling and continue rolling to seal. Place seam-side down on the prepared baking sheet. Cut 2 diagonal slits on the top of each strudel. Brush with more egg wash and top with a pinch of pepper.
  • Bake the strudels for 30 minutes, until puffed and golden brown.

1 Granny Smith apple - peeled, cored and coarsely shredded
3 Granny Smith apples - peeled, cored and sliced
1 cup brown sugar
1 cup golden raisins
1 sheet frozen puff pastry, thawed
1 egg
¼ cup milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Place apples in a large bowl. Stir in brown sugar and golden raisins; set aside. Place puff pastry on baking sheet. Roll lightly with a rolling pin. Arrange apple filling down the middle of the pastry lengthwise. Fold the pastry lengthwise around the mixture. Seal edges of pastry by using a bit of water on your fingers, and rubbing the pastry edges together. Whisk egg and milk together, and brush onto top of pastry.
  • Bake in preheated oven for 35 to 40 minutes, or until golden brown.

3/4 cup strawberry preserves
1/2 cup cream cheese, room temperature
1 egg, separated
4 tablespoons powdered sugar
1 tablespoons water
2-3 teaspoons sugar
1/4 teaspoon vanilla extract
1 pinch salt

Steps:

  • 1.Preheat oven to 400º F and line a baking sheet with parchment paper or a silicon baking mat. 2.In a large bowl or mixer, beat cream cheese with vanilla extract, 3 tablespoons powdered sugar, egg yolk and salt. Beat until smooth. 3.Dust remaining powdered sugar over work surface and unfold puff pastry sheets. 4.Cut pastry along the creased lines and then evenly cut pastry strips into small squares or rectangles. 5.Place strawberry preserves in a small glass or bowl and whisk until relaxed and loosened. 6.Take 1-2 teaspoons cream cheese filling and place it in middle of pastry square. Top cream cheese with 1 teaspoon strawberry preserves. 7.Take another piece of puff pastry and place it on top of filled puff pastry. Seal the edges and use a small knife to cut 2 small vents into the top of strudel to allow steam to escape. 8.Beat egg yolk and water in a small bowl and brush it over mini strudels. Sprinkle sugar over strudels, transfer to baking sheet and place in oven. 9.Bake for 17-19 minutes or until golden brown. Remove and let cool 5 minutes before serving.

3 apples, we used honey crisp
2 tablespoons lemon juice
4 tablespoons sugar
½ cup almond
17 oz puff pastry dough, 1 box, fresh or frozen
½ cup cream, for coating pastry
water, for coating pastry
1 egg
1 package cook and serve vanilla pudding, not instant
1 ½ cups whole milk, or half of the amount in package instructions
powdered sugar, for topping

Steps:

  • Peel and dice apples and put them in a large bowl. Set apple peel aside for decoration, if desired.
  • Add lemon juice, sugar, and almonds, and mix.
  • Roll out half of the puff pastry until thin, and cut into three even, long slices. Coat the slices with cream.
  • Spread half the apple mixture on all three slices, covering three quarters and leaving about an inch (2 ½ cm) empty at the sides.
  • Brush all the edges except the bottom one with water.
  • Roll the dough over the apple mixture from bottom to top, until you have even rolls. Pinch the sides of the rolls to seal them with dough.
  • Cut rolls in the middle and transfer with the closed side down into a greased muffin pan. Repeat with second half of puff pastry and apple mixture until you have 12 strudels.
  • Mix vanilla powder with half of the milk described in package, usually 1 ½ cups (355 ml).
  • Pour 2-3 tablespoons into each strudel.
  • Spread egg wash over strudels.
  • Bake at 400˚F(200˚C) for 25-30 minutes, until golden brown.
  • Take strudels out of the pan and dust with powdered sugar. The leftover apple peel can be rolled into "roses" for decoration.
  • Enjoy!

Steps:

  • Mix apples with cinnamon, sugar and milk in a bowl.
  • Mix flour, sugar and baking powder in a separate mixing bowl. Then, add cold butter and squish, add milk until you form a dough.
  • Spread dough and put it in a cupcake baking sheet.
  • Fill the cups with the apple filling.
  • In a separate bowl, mix together ingredients for crumble topping until well-combined. Then, top strudels with crumble.
  • Preheat the oven to 250°F and bake your strudels for 45 minutes.
  • Serve warm.

1 1/2 cups chopped peeled tart apples
2 tablespoons sugar
2 teaspoons sugar
2 tablespoons chopped walnuts
1 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
6 sheets phyllo dough (14 inches x 9 inches)
butter-flavored cooking spray
powdered sugar (optional)

Steps:

  • Combine the apples, sugar, walnuts, flour and cinnamon. Set aside.
  • Spray a baking sheet with cooking spray. Set aside.
  • Place one sheet of phyllo dough on a work surface (Keep remaining dough covered with plastic wrap and a damp towel to prevent it from drying out). Spray with buttered flavored cooking spray.
  • Fold in half widethwise; spray with flavored spray. Spoon 1/3 cup filling onto phyllo dough (about 2 inches from a short side.) Fold side and edges over filing and roll up. Place seam side down on a baking sheet. Continue same process with remaining dough and filling.
  • Cut diagonal slits in tops of studels. Spray strudels with butter-flavored cooking spray. Bake at 350° for 20-22 minutes or until golden brown. Sprinkle with confectioners' sugar if desired.
