IMPOSSIBLY EASY MINI CHEESEBURGER PIES

Steps:
- Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
- In 10-inch skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Cool 5 minutes; stir in Worcestershire sauce, garlic salt and cheese.
- In medium bowl, stir baking mixture ingredients with whisk or fork until blended. Spoon 1 scant tablespoon baking mixture into each muffin cup. Top with about 1/4 cup burger mixture. Spoon 1 tablespoon baking mixture onto burger mixture in each muffin cup.
- Bake about 30 minutes or until toothpick inserted in center comes out clean, and muffin tops are golden brown. Cool 5 minutes. With thin knife, loosen sides of muffins from pan; remove from pan and place top side up on cooling rack. Cool 10 minutes longer, and serve with garnishes.

Steps:
- Preheat oven to 325˚F (170˚C).
- Saute bacon in a medium-sized frying pan. Add squash and onion, until the onions are translucent and the squash golden brown. Season with sage, salt, and pepper. Set aside to cool.
- Roll out pie crust into an even thin layer. With a 6-inch (15 cm) diameter bowl, cut out 6 circles. Fill a 6-cup cupcake tin with the cutouts.
- Mix eggs, sour cream, and milk. Season with salt and pepper.
- Add the onion-pumpkin-bacon mixture into the cups.
- Carefully pour egg mixture into every cup. Decorate pies with leftover pie crust, if desired.
- Cover edges and decoration with egg wash.
- Bake for 40 minutes or until egg mixture is cooked through and crust is golden brown. (Cover top with aluminum foil for the last 10 minutes if decoration gets too dark.)

- Separate crescent dough into eight triangles; place in a greased 10-in. pie plate with points toward the center. Press dough onto the bottom and up the sides of plate to form a crust; seal perforations. Spread with mustard., In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 2 tablespoons drippings. Saute zucchini and onion in drippings until tender. In a large bowl, combine the eggs, cheese, seasonings, bacon and zucchini mixture. Pour into crust., Bake at 375° for 25-30 minutes or until a knife inserted in the center comes out clean. Cover edges loosely with a foil if pastry browns too quickly.

MINI BACON & ZUCCHINI PIES
This is a great little recipe I came up with yesterday, to use up some leftover ingredients! They are great hot, or cold! You can make these as written, in a muffin pan, or make small free form pies by cutting the pastry sheet into 4 squares, and placing a spoonful of filling in each square, then pinch the sides up to form a parcel. I have posted pics of both.

- Cut pastry sheets into 5 rounds each, and line a large cup muffin tray with the rounds.
- Mix all other ingredients together.
- Spoon mixture into pastry cases.

MINI BACON AND MUSHROOM PIES
Steps:
- Preheat the oven to 400 degrees F
- Cut the puff pastry sheets into 35 rounds, using a 2-inch fluted pastry cutter, and fill 2 small muffin tins with the rounds. Top each muffin tin with a second muffin tin to secure the puff pastry and form pie shells.
- Bake until the pie shells are golden brown and cooked through, 15 to 17 minutes. Let cool.
- Meanwhile, coat a large saute pan with olive oil over medium heat and cook the bacon until brown and crispy and the fat has rendered out. Transfer to paper towels to drain.
- Add the leeks into the pan, sprinkle with salt and sweat until wilted. Stir in the mushrooms, sprinkle with more salt and saute until soft. Carefully pour in the whiskey and cook until the pan is basically dry. Remove from the heat and stir in the creme fraiche, followed by the bacon.
- Fill the pie shells, and serve garnished with chives.

- Preheat the oven to 400 degrees F (200 degrees C).
- Place bacon slices in a single layer on a bacon rack or foil-lined, rimmed baking sheet, making sure they do not overlap.
- Bake in the preheated oven until browned and crisp, 10 to 11 minutes. Remove from the pan and drain bacon slices on a paper towel-lined plate.
- Increase the oven to 425 degrees F (220 degrees C). Grease a 12-cup muffin tin with some of the rendered bacon fat.
- Saute onion and garlic in a little bacon fat over medium heat until translucent, about 5 minutes. Remove from the heat.
- Beat milk, eggs, and cream in a mixing bowl with an electric mixer until fluffy. Add spinach, Cheddar cheese, and the cooked onion mixture. Season with salt and pepper and mix with a spatula to combine.
- Make a ring of bacon by running a slice around the sides of each muffin cup. Scoop egg mixture into the center of each bacon ring.
- Bake in the preheated oven until a toothpick inserted into the centers comes out clean, about 15 minutes.

Steps:
- Whisk together eggs, milk, cream, parmesan, salt, and pepper.
- Cut 5 rounds out of each sheet of pastry, and use the rounds to line the holes of 2x12 large cup muffin pan.
- Divide the chopped bacon between the pastry rounds.
- Pour egg mixture over bacon, to almost at the top of the pastry.
- Top each pie with a slice of tomato.
- Bake for 20 minutes at 200°C.

- In a medium frying pan, cook the bacon over medium heat until crisp. Remove the bacon and let drain on a clean kitchen towel or paper towels. Once it’s cooled a bit, chop it up into bits. Drain most of the fat from the pan, leaving about 1 – 2 teaspoons of bacon fat.
- Meanwhile, add the zucchini, onion, jalapeno and garlic to the pan and cook for a few minutes over medium heat, until the onion is translucent and the zucchini is tender. Stir in the cheese, millet (or rice or quinoa) until the cheese is melted, then stir in the chopped bacon. Pour the cheesy zucchini mixture into the pie plate and smooth with a spatula.
- In a separate bowl, whisk together the eggs and milk. Pour the egg mixture over the zucchini mixture in the pie pan, being careful not to let it spill over.
