"To complete the meal, I pass a basket of Mini Cheese Biscuits," Chris notes. "We're garlic lovers, so we enjoy the flavor of these easy biscuits. If your taste buds prefer, omit the minced garlic altogether. "Friends and family tell me these treats are best warm from the oven," Chris adds. "But then, they never last long enough to cool off!"

Number Of Ingredients 6

2 cups biscuit/baking mix
1/2 cup shredded cheddar cheese
2 garlic cloves, minced
2/3 cup milk
2 tablespoons butter, melted
1/4 teaspoon garlic powder

Steps:

  • In a bowl, combine biscuit mix, cheese and garlic. With a fork, stir in milk just until moistened. Drop by rounded tablespoonfuls onto a lightly greased baking sheet. Bake at 450° for 9-11 minutes or until golden brown. Combine butter and garlic powder; brush over biscuits.

When my mom dropped her homemade rolls while on the way to my house one Thanksgiving, I improvised and whipped up a batch of these buttery bite-sized biscuits. Since then they've been part of our traditional Thanksgiving meal. -Beverly Raleigh, Tulsa, Oklahoma

Number Of Ingredients 3

2 cups self-rising flour
1 cup cold butter, cubed
1 cup sour cream

Steps:

  • Place flour in a bowl; cut in butter until mixture resembles coarse crumbs. Stir in sour cream until just until moistened. , Drop by rounded tablespoonfuls into ungreased miniature muffin cups. Bake at 450° for 11-15 minutes or until lightly browned. Cool for 5 minutes before removing from pans to wire racks.

3 cups of Self-Rising Flour, sifted
¾ cup Buttermilk
¼ cup Lard, or shortening if desired.

Steps:

  • Place sifter in a large mixing bowl, add flour and sift into bowl.
  • Create a well in the middle of the flour.
  • Add lard.
  • Add buttermilk.
  • Squish lard and buttermilk between fingers until fairly smooth.
  • Stir the wet ingredients into the flour using small circular motions. Draw the flour into the wet ingredients slowly as you continue to stir.
  • When the dough ball forms, flip the dough and knead it a few times, working in flour as needed until a soft, smooth dough ball is achieved. Use a light touch as you work without pressing the dough too hard.
  • Sprinkle your work surface with flour.
  • Place the dough ball on the floured work surface, sprinkle dough lightly with flour.
  • Lightly flour rolling pin then, gently roll the dough out until it's about ½ inch thick.
  • Dip your biscuit cutter into some flour, press into dough, cut and remove biscuits.
  • Place the formed biscuit in a pan that has been lightly greased with lard.
  • Repeat the process until all dough is used.
  • Bake at 500º for about 8-10 minutes or until the tops start to lightly brown.
  • Remove from oven, brush with butter, cover with a clean cloth and let rest.
  • Serve warm and enjoy.

LEMON AND SUGAR MINI BISCUITS

2 cups all-purpose flour, plus more for dusting
2 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
4 tablespoons cold unsalted butter, cubed
1 tablespoon finely grated lemon zest
1 cup buttermilk
1 egg, beaten
3 tablespoons raw sugar, for garnish

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, combine the flour, granulated sugar, baking powder, salt and baking soda and whisk well to combine. Next, add the butter and lemon zest and combine the mixture with a fork until coarse crumbles are created. Add the buttermilk and mix until just combined. Make a disk with the dough and cover in plastic wrap. Chill for 15 minutes.
  • Dust a cutting board with flour. Roll out the dough to about 3/4-inch thickness. Cut the biscuits with a 1 1/2-inch floured cookie cutter, juice glass or something similar. Reroll the remaining dough and continue making biscuits.
  • Place the biscuits on the prepared baking sheet. Brush the tops with the beaten egg and sprinkle with the raw sugar. Bake until golden brown, about 15 minutes.

QUICK AND EASY MINI BISCUITS

1 1/2 teaspoons salt
3/4 cup lard, shortening or a mix of butter and shortening

Steps:

  • Preheat the oven to 475 degrees F.
  • Sift the flour and salt together into a bowl Add the lard and cut together with a pastry cutter. Use a fork to stir in the buttermilk gently. Gently knead the dough a few times, adding more flour if you need to.
  • Roll out the dough and cut out biscuits with a small round cutter. Place on baking sheets and bake for 10 minutes. Brush with butter when you remove them from the oven.
  • Serve with slices of Christmas ham.
