Mini Caramel Apple-Sugar Cookie Pizzas image

These easy caramel-apple mini fruit pizzas are bound to be a hit. Easy to make, and fun to customize!

1 pouch (17.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup butter, melted
3 tablespoons Gold Medal™ all-purpose flour
1 egg
3/4 cup butter, softened
3 tablespoons caramel topping
1/2 teaspoon vanilla
1 1/4 cups powdered sugar
3 medium apples, peeled, thinly sliced
2 tablespoons caramel topping
M&M's® Minis™ chocolate candies, crushed mini pretzel twists, chopped nuts, chopped candy bars, candy sprinkles, as desired

Steps:

  • Heat oven to 375°F. In large bowl, stir Cookie ingredients with spoon until soft dough forms. Cut dough in half.
  • On floured surface, roll half of dough 1/4 inch thick. Cut with floured 3-inch round cutter. On ungreased large cookie sheets, place cutouts 2 inches apart.
  • Bake 6 to 8 minutes or until edges are lightly golden brown. Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes. Repeat steps with second half of dough, adding leftover pieces into the mix to reroll.
  • In medium bowl, beat 3/4 cup softened butter, 3 tablespoons caramel topping and the vanilla with spoon until blended. Beat in powdered sugar until smooth and spreadable.
  • Spread 1 rounded tablespoon frosting on each cookie; arrange apple slices on top. Drizzle 2 tablespoons caramel over cookies, and sprinkle with desired toppings. Serve immediately.

Butter and egg called for on cookie mix pouch
1 cup Betty Crocker™ Rich & Creamy cream cheese frosting (from 16-oz container)
1/4 cup caramel topping
1 can (21 oz) more fruit apple pie filling, coarsely chopped (about 2 1/3 cups)
1/4 cup chopped pecans
2 tablespoons caramel topping

Steps:

  • Heat oven to 350°F. Spray 12-inch pizza pan with cooking spray.
  • In medium bowl, stir cookie mix, butter and egg until soft dough forms. Press dough evenly in pan.
  • Bake 15 to 20 minutes or until edges are golden brown. Cool completely in pan on cooling rack, about 1 hour.
  • In small bowl, mix frosting and 1/4 cup caramel topping. Spread frosting mixture over crust, leaving 1/2-inch border. Spread apple pie filling on top of frosting. Sprinkle with pecans, and drizzle with 2 tablespoons caramel topping. Cut into wedges to serve. Cover and refrigerate any remaining cookie pizza.

1 package (8 ounces) cream cheese, softened
1/2 cup peanut butter
1/2 cup packed brown sugar
2 tablespoons milk
4 cups sliced peeled tart apples
1 can (12 ounces) lemon-lime soda
1 teaspoon ground cinnamon
1/2 cup caramel ice cream topping
1/3 cup chopped pecans

Steps:

  • Press cookie dough into a greased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown. Cool on a wire rack. Run a large flat spatula under crust to loosen from pan. , In a bowl, beat the cream cheese, peanut butter, brown sugar and milk until smooth. Spread over the cooled crust. In a bowl, combine the apples and soda; drain well. Toss apples with cinnamon; arrange over cream cheese. Drizzle with the caramel topping and sprinkle with pecans. Cut into wedges.

1 large egg

1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
TOPPING:
1 package (8 ounces) fat-free cream cheese
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
3 medium tart apples, thinly sliced
1/4 cup fat-free caramel ice cream topping
1/4 cup chopped unsalted dry roasted peanuts

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg, oil, corn syrup and vanilla.
