These cute mini Greek pita pizzas are the perfect healthy snack or meal for the whole family and can be customized with whatever toppings you desire! You can also serve them up to guests as a quick and easy appetizer! {Vegetarian & low calorie}

Steps:
- Preheat oven to 400 degrees F. Place 6 mini whole-wheat pitas or three sandwich thin halves on a baking sheet. Brush some olive oil evenly over each pita.
- Bake in the oven for 10 minutes or until lightly browned and crispy.
- Remove from oven and spread a thin layer of hummus over each round, going close to the edge.
- Top each round with equal amounts of diced tomato, cucumber, olives, red onion and feta. Serve immediately.

- Heat oven to 350°F. Place mini pita halves, split side up, on parchment paper-lined cookie sheet. Brush with olive oil.
- Spoon tomato sauce onto each pita; sprinkle with onion, roasted pepper, olives and feta cheese. Bake 8 to 10 minutes or until toppings are hot and cheese softens. Transfer to serving platter. Top with pepperoncini and cucumber.

- Heat oil in a large nonstick skillet; cook the beef, onion and garlic over medium heat until meat is no longer pink, 5-6 minutes; drain. Stir in tomato sauce and rosemary; bring to a boil. A light and flavorful pizza featuring feta, tomatoes, and spinach. I like to use a homemade whole wheat crust, rolled thin.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). If using a pizza stone, place in oven to preheat.
- Heat 1 tablespoon olive oil in a large skillet; cook and stir onion and garlic until tender, about 5 minutes. Add spinach and continue to cook and stir until all liquid has evaporated, 5 to 7 minutes. Remove from heat and season with basil, lemon juice, oregano, and pepper. Allow mixture to cool slightly.
- Unroll pizza dough on preheated pizza stone or a large baking sheet and brush with remaining 1 tablespoon olive oil. Spread spinach mixture over dough, leaving a small border at the edge of the pizza crust. Top with 1 cup mozzarella cheese.
- Press tomato slices into seasoned bread crumbs until coated; arrange tomatoes over pizza. Spread remaining 1 cup mozzarella cheese and feta cheese over tomatoes.
- Bake in preheated oven until pizza crust is golden brown and cheese is melted, about 15 minutes.
