Posting another recipe for the Swiss region of ZWT. Found this recipe at cdkitchen online. I love quiches and especially the Swiss quiches. This would be great to make and then freeze leftover quiches for a quick week day breakfast.

15 ounces pkg. pie crusts, refrigerated
1 1/2 cups swiss cheese, shredded
2 tablespoons green onions, sliced
1 tablespoon bacon, cooked and crumbled
2 eggs
1/2 cup milk
1/4 teaspoon salt
1 dash nutmeg

Steps:

  • Allow both pie crust pouches to stand at room temperature for 15 to 20 minutes. Heat oven to 375. spray 24 miniature muffin cups with nonstick cooking spray.
  • Unfold 1 pie crust; peel off top plastic sheet. Press out fold lines. Place crust on cutting board or pastry cloth; peel off remaining plastic sheet. Using a 2-1/2 inch round cookie cutter, cut 12 circles. Repeat with remaining pie crust. Press 1 circle of dough into bottom and up the sides of each sprayed muffin cup.
  • Place 1 tablespoons cheese in each cup, top each with a few onion slices and crumbled bacon. In a 2-cup measuring cup; combine eggs, milk, salt and nutmeg; beat well with fork. Pour mixture into crusts; filling to within 1/4 inch of top.
  • Bake at 375 degrees for 25 to 30 minutes or until golden brown. Cool slightly. Lift quiches from cups with tip of knife. Serve warm.

1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1 1/2 cups shredded Swiss cheese (6 oz)
2 tablespoons sliced green onions (2 medium)
1 tablespoon chopped pimientos
2 eggs
1/2 cup milk
1/4 teaspoon salt
Dash ground nutmeg

Steps:

  • Heat oven to 375°F. Spray 24 mini muffin cups with cooking spray.
  • Remove pie crusts from pouches; place flat on cutting board or pastry cloth. With 2 1/2-inch round cutter, cut 12 rounds from each crust. Press 1 pie crust round into bottom and up sides of each muffin cup.
  • Place 1 tablespoon cheese in each cup. Top each with a few onion slices and pimiento pieces. In 2-cup measuring cup, beat eggs, milk, salt and nutmeg with fork until well blended. Pour mixture into crusts, filling to within 1/4 inch of top.
  • Bake 25 to 30 minutes or until golden brown. Cool 2 minutes. With tip of knife, lift quiches from cups. Serve warm.

To really make these easy purchase ready made pie pastry in the refrigerator section. You can also make these using regular size muffin tins, the servings will be less and baking time will have to be adjusted. If you make these on mini muffin tins you should get anywhere from 24-26 mini quiches. If you don't have a 2-1/2-inch round cutter then just use the top of a glass. The recipe can be doubled.

2 prepared pie pastry (enough to cut out 25 2-1/2-inch rounds)
2 cups finely shredded swiss cheese
2 green onions, finely chopped
2 eggs
1/2 cup half-and-half cream (or use full-fat milk)
3 tablespoons canned pimientos, finely chopped (can use less)
salt (I use about 1/4 teaspoon)
1 pinch cayenne pepper
2 tablespoons parmesan cheese

Steps:

  • Heat oven to 375 degrees.
  • Spray 24 mini muffin tins with nonstick cooking spray.
  • Roll out the dough, then cut into 24-26 2-1/2-inch rounds (you might get less).
  • Press one round into the bottom and sides of each mini muffin tin.
  • Place about 1 tablespoon of shredded cheese in the bottom of the crust.
  • Top with a few green onions, and then some chopped pimientos.
  • In a small bow, whisk together the eggs, half and half cream, salt, cayenne and Parmesan cheese.
  • Divide the mixture between each muffin tin to within 1/4 inch from the top.
  • Bake 25-30 minutes or until golden brown.
  • Cool 3 minutes then carefully run a knife around the quiches and lift out.
  • Serve warm.

1/4 cup butter or margarine, softened
2 tablespoons boiling water
6 slices bacon, crisply cooked, crumbled
1/2 cup half-and-half
1 egg
2 medium green onions, thinly sliced (2 tablespoons)
1/4 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
1/2 cup shredded Swiss cheese (2 oz)

Steps:

  • Heat oven to 375°F. Generously grease 24 mini (1 3/4x1-inch) muffin cups with shortening or cooking spray.
  • In small bowl, stir Bisquick mix and butter until blended. Add boiling water; stir vigorously until soft dough forms. Press rounded teaspoonful of dough on bottom and up side of each muffin cup. Divide bacon evenly among muffin cups.
  • In small bowl, beat half-and-half and egg until well blended. Stir in onions, salt and red pepper. Spoon 1 1/2 teaspoons egg mixture into each muffin cup. Sprinkle cheese over tops.
  • Bake about 20 minutes or until edges are golden brown and centers are set. Cover; refrigerate any remaining appetizers.

1/4 cup green onion

Steps:

  • Preheat oven to 350°F.
  • Generously spray 12 regular muffin cups with cooking spray. Pour Egg Beaters evenly into muffin cups (about 1/3rd full).
  • Chop ham, shred cheese, and slice green onions and combine in medium bowl.
  • Spoon evenly over Egg Beaters.
