TOTCHO CASSEROLE
Tater Tots™ potatoes meet nachos in this fun, crowd-pleasing casserole! Layers of refried beans, ground beef, Tater Tots™ potatoes, salsa and cheese are baked in a 13x9 dish and served with all the crucial nacho fixings. Everyone can top their serving to suit their tastes!

Steps:
- Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spread refried beans evenly in bottom of baking dish.
- In 12-inch nonstick skillet, cook beef, onions and jalapeño chile over medium-high heat 7 to 9 minutes, stirring frequently, until beef is brown; drain, and return to skillet. Stir in taco seasoning mix and tomatoes; cook and stir until heated through.
- Spoon beef mixture on top of beans. Sprinkle 1 cup of the cheese over beef. Top with frozen potatoes.
- Bake 35 to 40 minutes or until heated through and potatoes are golden brown. Top with remaining 1 cup cheese. Bake 3 to 4 minutes or until cheese is melted. Let stand 10 minutes. Garnish with pickled jalapeños, olives and green onions. Serve with sour cream.

Steps:
- In a medium saucepan, saute the onions in melted butter over medium heat.
- Add in flour, stirring constantly to mix; gradually stir in milk.
- Bring the mixture to a boil stirring constantly; cook for 2 minutes or until thickened, stirring constantly.
- Remove pan from the heat.
- Add in tuna, cheese, 1/2 cup of potato chips and salt and pepper to taste.
- Pour into 2 greased 8-oz.
- ramekins or baking dishes.
- Sprinkle with remaining potato chips.
- Bake, uncovered, at 350 degrees for 20-25 minutes or until hot and bubbly.

Steps:
- Preheat oven to 350°F.
- Cook shell pasta according to package directions.
- Add butter to sauté pan on low-med heat.
- Add celery and onions.
- Sauté until onions almost clear.
- Add mushrooms - remove from heat.
- Drain veggies (if extra butter in pan).
- Put veggies in pan, add soup, tuna, milk, cheese until heated through and cheese melted.
- Remove from heat add mayo and cook pasta.
- Pour into baking dish, top with remaining shredded cheese bake until cheese is melted and "browning" (approx 1/2 hour).
- Remove and let sit for about 5 minutes.
- Eat.

- In a large skillet, saute the celery, mushrooms, green pepper and onion in butter until tender. Stir in the flour, salt and pepper until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
- Reduce heat; add scallops. Cook, stirring occasionally, for 3-4 minutes or until scallops are firm and opaque.
- Divide mixture among four 10-oz. ramekins or custard cups. In a small bowl, combine crumbs and butter; sprinkle over scallop mixture. Bake, uncovered, at 350° for 15-20 minutes or until bubbly. Sprinkle with cheese; bake 5 minutes longer or until cheese is melted.

- Brown ground beef in a nonstick pan over medium high heat, add taco seasoning and water. Allow the water to cook down for a couple of minutes. Add the black beans, corn kernels and salsa to the meat mixture and stir to combine. Pour the mixture into your prepared pan and spread into an even layer.
- Top the meat layer with nacho cheese and spread out over the top to cover. Top nacho cheese layer with 2 cups of shredded cheese. Finally add the frozen tater tots in a single layer over the top of the cheeses.
- Bake for 30 minutes, remove from the oven and spread 1 cup of shredded cheese over the top of the tater tots. Return to oven and continue to bake for 10 minutes or until the tater tots are crispy.
