CHRISTMAS SOUP
Steps:
- Place the kielbasa into a 7-quart Dutch oven and set over medium-low heat. Cook until the kielbasa has browned well and rendered its fat, approximately 15 minutes. If you do not have at least 2 teaspoons of fat, add enough vegetable oil to make 2 teaspoons. Remove the kielbasa from the pan and set aside.
- Add the garlic and cook for 1 to 2 minutes, stirring constantly to prevent the garlic from burning. Add the beans and the chicken broth and cook, covered, for 45 minutes. After 45 minutes, add the potatoes, cover and cook for 15 minutes, stirring occasionally.
- Wash, rinse and trim the kale and tear into bite size pieces. Add the kale to the pot, cover and cook for an additional 10 minutes or just until it is tender, but not mushy.
- Add the red wine vinegar and black pepper and stir to combine. Evenly distribute the kielbasa between 8 soup bowls. Laddle the soup into bowls and serve.
BRITISH ONION SOUP

Steps:
- Heat most of the butter or dripping in a pan, then add the onions, sugar and herbs. Season and cook, uncovered, over a low heat, stirring occasionally, for up to 40 mins until sticky and brown. pour in the cider and simmer until reduced by half. Pour in the stock, bring to the boil, then cook for 20 mins.
- To serve, heat the grill to high. Spread the bread on both sides with the remaining butter or dripping, then toast under the grill until golden. Scatter with cheese and place back under the grill until melted. Serve the soup in bowls with a slice of the toast floating in it, scattered generously with parsley.

- Place sliced onions and butter into slow cooker, and mix until onions are thoroughly coated. Stir in bread and chicken broth.
- Cover, and cook on LOW for 10 to 18 hours or on HIGH 4 to 5 hours, stirring occasionally. Stir well during last hour.

- In saucepan, cook onions in butter until onions are tender. Add broth, water and Worcestershire sauce. Bring to boil. Simmer, covered, 25 minutes.
- Spoon into 4 ovenproof bowls. Place piece of French bread in each bowl. Sprinkle with Parmesan cheese. Top with cheese slice. Broil until cheese melts.

HOLIDAY ONIONS
This dish is a hit with kids as well as adults. It has been on our Thanksgiving and Christmas tables ever since I can remember, and that's a long time! Sliced onions are baked with a rich Cheddar cheese sauce and sprinkled with paprika.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 3 quart casserole dish.
- Bring a medium saucepan of salted water to a boil. Stir in onions; cook until tender but still firm. Drain.
- Melt the butter in a large skillet over medium heat. Stir in the flour and continue stirring until golden brown. Pour in the milk and allow the mixture to thicken. Mix in the cheese, allowing it to melt.
- Arrange onions in casserole dish and cover with cheese mixture; sprinkle with paprika.
- Bake in the preheated oven 30 minutes, or until heated through and bubbling around edges.

SPRING ONION SOUP
Spring onions look like scallions but have a larger, rounder bulb. If they are unavailable, use yellow onions.

- Heat oil in a large pot over medium-high heat. Add onions, and cook, stirring occasionally, until translucent but not brown, about 15 minutes.
- Stir in salt, stock, and water. Bring to a simmer, and cook for 15 minutes.
- Remove from heat, and let cool for 20 minutes. Working in batches, puree in a blender, starting on low speed and gradually increasing to high, blending until soup is smooth.
- Divide soup among 4 bowls, drizzle with oil, and serve with flatbread on the side.
ONION SOUP

- Simmer the onions in butter and oil for 2 hours. Stir frequently, adding the sugar and salt after 15 minutes of cooking. Onions will turn a deep golden-brown color. Sprinkle on the flour and cook for 5 minutes longer. Add the boiling stock and the wine and simmer for 45 minutes longer. Skim if necessary. Correct the seasoning.
- Before serving, reheat to boiling. Pour in the cognac. Serve in heated bowls with toasted rounds of French bread and generous servings of coarsely grated Swiss and Parmesan cheeses.
