Steps:
- Rinse wild rice in a sieve under cold water, then combine with cold water to cover by 2 inches in a 5-quart pot. Simmer, covered, until tender, 45 minutes to 1 hour.
- Make vinaigrette while wild rice is simmering:
- Whisk together juice, shallot, vinegar, mustard, and garlic. Gradually whisk in oil until emulsified and season with salt and pepper.
- Cook white rice:
- After wild rice has been simmering 20 minutes, boil white rice and 1 1/2 cups water in a 1 1/2-quart heavy saucepan, uncovered and undisturbed, until steam holes appear on surface, about 8 minutes. Reduce heat to very low and cook, covered and undisturbed, 15 minutes more. Remove from heat and let stand, covered, 5 minutes.
- Assemble salad:
- Rinse cooked wild rice in a sieve under cold water and drain. Stir together rices, vinaigrette, nuts, parsley, dried fruit, and salt and pepper to taste.
- Serve at room temperature.

- Mix well.
- Chill for atleast 2 hours.
- Just before serving, add pecans.
- Toss.

- Cook the wild rice per package instructions (or boil 2 1/4 cups water in a medium pot. Add wild rice. Lower to a simmer. Cover and cook for 45 minutes or until rice is tender and starting to pop open) Set aside, uncovered, to cool.
- Cook white rice per package instructions, adding 1/2 teaspoon of salt to the cooking water. Spread rice over the bottom of a large bowl to cool.
- Heat butter and oil in a large skillet over medium low heat. Simmer onions, stirring occasionally, for 45 minutes or until they’re soft and caramelized. Pour in a tablespoon or two of water and stir with a wooden spoon to deglaze the pan. Set aside to cool.
- Bring 1 cup orange juice to a boil in a small saucepan. Remove from heat. Stir in dried cranberries in and let them soak for 30 minutes. Drain and aside. You won’t need the remaining orange juice for this recipe.
