1 cup milk (I used 2% milk, but you can use whatever you prefer)
2 1/2 cups vanilla bean ice cream
1/4 cup dark chocolate chips (semi-sweet is fine too)
1/2 teaspoon peppermint extract
optional: a few drops of green food coloring to desired color

Steps:

  • In a blender, mix all ingredients together until smooth.

1 lb silken tofu
¼ cup maple syrup
2 bananas, sliced
⅓ cup fresh mint, packed
1 oz dark baker's chocolate, roughly chopped
1 teaspoon cocoa powder
1 cup soy milk, or other milk substitute

Steps:

  • Add tofu and maple syrup to a mixing bowl and whisk together until smooth and no large lumps are present.
  • Transfer tofu mixture to ice tray and using a rubber spatula to evenly spread the mixture into each of the cube slots.
  • Freeze completely.
  • Place bananas, mint, chocolate, 4 tofu cubes, cocoa powder, and milk in a blender, making sure that the cubs sit on top of the other ingredients.
  • Blend until smooth.
  • Serve immediately.
  • Enjoy!
