MINT MOJITO COFFEE
Philz Coffee makes the most famous version of this sweet, minty treat. But you can easily make it at home using a few simple ingredients. Muddle the mint leaves and shake the drink in a cocktail shaker for a frothy, minty delight.

Steps:
- Brew your coffee. Make it a little stronger than usual for the best flavor. You can use any brewing method, from drip machines to pour-overs.
- Add the brown sugar into your hot coffee and stir until it dissolves. Then let the coffee cool for a few minutes.
- Add the mint leaves and half-and-half to your cocktail shaker. Muddle the leaves a little with your spoon, releasing the delicious oils but not reducing the leaves to shreds.
- Pour the ice cubes and sweetened coffee into the shaker. We like to use coffee ice cubes (frozen cubes of leftover coffee) for a stronger drink. Shake until the drink is well combined and frothy.
- Pour your mint mojito coffee into a tall glass. Top with another mint leaf and enjoy your sweet treat!

FRESH MINT ICED COFFEE

- Muddle the mint leaves in a large glass. Fill it with ice. Pour in the coffee, heavy cream and Simple Syrup, and give it a little swirl. Enjoy!
- In a small saucepan, whisk together the sugar and water and bring to boil, stirring often. Remove from the heat and let it cool. Transfer to a container and store in the fridge for up to 2 weeks.

Steps:
- Heat milk, ground coffee, 1/4 cup brown sugar, and mint in a saucepan over low heat until warmed through, 7 to 10 minutes.
- Whisk egg yolks and remaining 1/2 cup brown sugar in a bowl; slowly whisk in about 1 cup hot milk mixture. Pour egg yolk mixture into saucepan and continue to heat until custard is thickened, about 5 minutes.
- Line a sieve with cheesecloth and strain custard into a large bowl; discard solids. Whisk heavy cream into custard. Cover and refrigerate until chilled, 4 to 5 hours.
- Stir rum and chocolate into chilled custard and pour into an ice cream maker. Freeze according to manufacturer's directions.

- Mix sparkling water and mint syrup together in a tall glass. Add 2 ice cubes and sugar; stir well. Add more ice to the glass.

- Brew the coffee however you prefer (pour-over, French press, Aeropress, traditional drip, any method will work).
- Then while the coffee is brewing, combine the mint and sweetener in a cocktail shaker (or mason jar). Use a muddler (or the end of a thick wooden spoon) to gently muddle the mint — thoroughly enough so that those yummy minty oils get released, but also not so much that you break it up into a hundred tiny pieces that’ll get stuck in your straw. ;)
- Fill the shaker with ice. Then pour the hot coffee over the ice, and add a splash of cream if desired.

- In a medium pot, bring cream, milk, and 2 Tbsp sugar to a boil. Microwave coffee beans for 30 seconds. Once milk boils, remove from heat. Add warmed coffee beans and torn mint leaves. Stir together. Cover pot and let steep for 45 minutes.
- Strain liquid mixture and discard coffee beans and mint leaves. Place pot of milk over medium heat and bring to a boil.
- In a large bowl, whisk together egg yolks and 1/4 cup sugar. Once milk begins to boil, lower heat. Temper hot milk mixture into sugar-yolk mixture. Slowly add hot milk into yolk mixture about 1/4 cup at a time, whisking to distribute heat. Continue to add milk into the yolks. Once all the milk has been added, transfer everything back into the pot.
- Continually stir over medium-low heat until mixture reaches nappe consistency, or 180 degrees F on a kitchen thermometer. Let mixture sit at 180-185 degrees F for a few minutes to pasteurize eggs. Remove from heat. Add espresso powder and vanilla. Stir until espresso powder has dissolved.

- Make your favorite cold brew or regular coffee. You want a stronger than usual and cold coffee.
- In a martini shaker, add the sugar and the whole mint leaves. Using a muddler or the back of a wooden spoon, muddle/smash the two together. This breaks down the mint a bit and also releases the fragrance and flavor. Do NOT tear up the leaves, you want them as in tack as possible so they do not break up and float up through your straw when drinking.
- Put the top of the shaker on tightly. Shake vigorously for about 15 seconds, until your coffee is now ice cold.
