My family loves the mild mint and lemon flavors in this iced tea. It's a wonderful alternative to soft drinks.-Martha Haseman, Hinckley, Illinois

6 cups boiling water
4 tea bags
1 cup packed fresh mint
3/4 cup frozen lemonade concentrate
Ice cubes
Lemon slices and additional mint, optional

Steps:

  • In a heat-proof bowl or pitcher, pour boiling water over tea bags; cover and steep for 5 minutes. Remove tea bags. Cool for 15 minutes. Add mint; steep for 5 minutes. Strain. Add lemonade concentrate; stir well. Refrigerate. Serve over ice; garnish with lemon and mint if desired.

This is a variation of a recipe I've seen on several different websites. Basically, it's just mint and rose - a rather tasty combination! I prefer it iced, but it's good hot too. Note: I've listed things in teaspoons because this website won't let me list it in parts, but it's technically in a ratio, so you can make whatever quantity you want.

1 teaspoon peppermint
1 teaspoon spearmint
1 teaspoon rose petal

Steps:

  • Assemble all the ingredients and place in a tea ball. Note: If you don't own a tea ball, then you can put the ingredients directly in the water and then strain out later.
  • Place tea ball in hot water and steep for 10 minutes.
  • Note: If you don't have peppermint and spearmint on hand, you can substitute any type of mint, or just use one type if that's all you have.

SWEET MINTED TEA

1/2 cup sugar
1/2 bunch fresh mint, plus leaves for garnish (optional)
3 black-tea bags
Lemon slices, for garnish (optional)

Steps:

  • Combine the sugar, mint (stems and all) and 1 cup water in a small pot. Bring to a boil over medium-high heat, stirring to dissolve the sugar. Reduce the heat to medium low and simmer 5 minutes. Remove from the heat, cover and let steep 30 minutes. Discard the mint; refrigerate the syrup until ready to use.
  • Put 2 quarts water in a pot and add the tea bags. Bring to a boil over medium-high heat, then remove from the heat, cover and let steep 20 minutes. Discard the tea bags. Pour the tea into a pitcher and add the mint syrup to taste. Refrigerate until cool.
  • Serve the tea over ice. Garnish with lemon and mint, if desired.

2 1/4-inch-thick orange slices (do not peel)
6 whole cloves
2 orange pekoe tea bags

Steps:

  • Bring 4 cups of water to a boil in a saucepan.
  • In another saucepan, combine the spearmint leaves, sugar, orange slices, cloves and tea bags. Carefully pour the boiling water over the tea mixture and let it steep for 3 minutes. Stir to dissolve the sugar, and then strain the tea into a small warmed teapot or other serving vessel. Serve hot.

¼ cup wildflower honey
1 large lemon
2 bunches fresh mint leaves

Steps:

  • Pour the water into a large glass container with a lid. Stir in honey until dissolved.
  • Zest the lemon, being careful not to include any white pith, and juice the lemon. Combine the zest and juice with the honey water mixture.
  • Hold a bunch of mint in one hand; use your other hand to twist and squeeze the leaves, slightly bruising them to release their fragrance and oils. Immerse the bunches in the water mixture. Cover the container and place in direct sunlight for two hours. Remove the mint leaves, shake, and serve over ice in tall glasses, garnished with a mint sprig.
